The purpose of this recipe newsletter is to post requests and replies from our members and all their great tried and tested (TNT) recipes.  No newsletter is sent out on Thursday.

CLICK HERE to respond to newsletter replies, requests and tips. Please include date of newsletter, name of recipe and number of servings.  Remember to include your name within the message as well.

Nancy, I thought you might like to know that for some reason I have received about 8 or 10 notices that the newsletter for Wednesday would not be sent out due to bad weather. I can't imagine what caused that. :) I'll be looking forward to receiving the newsletter and I hope all is well down there in your area. I lived through a very bad tornado in 2005 so I know how scary they are and destructive.

Dear Nancy,
I was watching the weather tonight and noticed the bad weather in your area (among others). It was reported here, that there were at least 7 tornadoes at one time on the ground out your way. I pray that you weren't in any of the really bad stuff. We can certainly overlook not getting the newsletter when you are facing such weather. Do you have a storm shelter where you can weather the storms? I sure do hope so. I wish I did! When bad weather hits this area, I huddle, with my little four-legged buddy, in the small hall in the center of my house. Stay safe!

The weather went from no problem to severe in a very short period of time last night. Just as send button was pressed there was a loud clap of thunder. Just glad I still have a computer and an email box for it to come to this morning. I sent out only one email message. Didn't want members to check their email all evening. Had no idea 10 of copies of the newsletter was being sent out and had no control over it. Am assuming the bad weather, lightning and golf ball sized hail had something to do with the multiple copy problem. I am sorry if this was a problem to anyone.

Ms Chicken's Rule of thumb is - if I hear thunder the computer is turned off and unplugged from the wall. Yesterday I didn't make it in time to get my satellite dish system unplugged. The TV, DVD recorder and the satellite receiver are all toast. The lightning took them out.

Pork Casserole
1-1/2 lbs ground pork, sautéed, drained, and chilled ( can use leftover pork)
4 eggs, hard cooked and sliced
1 (8oz) can sliced mushrooms, drained
1/4 c. diced pimientos
1 bell pepper, diced
1/2 lb. cheddar cheese, shredded ( reserve 1/4 cup)
1/4 c. butter
1/4 c. all purpose flour
2 c. milk
1/2 t salt

Heat oven to 325. Grease 7x11 baking dish. Layer meat, eggs, mushrooms, pimentos, pepper and cheese. In a saucepan, melt butter stir in flour and cook over med. heat for 3 min. stirring constantly. add milk, continue to stir and cook until thick. add salt. pour over layered ingredients in casserole. Sprinkle with reserved cheese. Bake 30 to 40 min or until hot land bubbly.

Here's an authentic Peanut Butter Chews recipe from a school cafeteria where I taught school for many years. They are yummy!

Peanut Butter Chews

Boil for 1 minute:
1 c. sugar
1 c. white karo syrup

Add and mix:
1 c. peanut butter
2-3 T. butter
Pour over:
1-1/2 quarts of corn flakes

Stir and drop on wax paper.

Pineapple Drop Cookies
1 c.sugar
1/2 c. butter
1 egg, beaten
1 t. vanilla
2 c. all purpose flour
1 t. baking powder
1/4 t. salt
1/4 t. baking soda
1/2c. chopped walnuts

1 (8oz) can crushed pineapple in its own juice, drained Heat oven to 375. Cream sugar, butter, egg, vanilla. Sift together flour, baking powder, salt, and baking soda. Stir into creamed mixture to make a soft dough. Stir in nuts and pineapple. Drop by teaspoonfuls onto a greased cookie sheet and bake 12 to 15 min.

I have been reading the articles concerning Wal-Mart . I live in a town in Missouri. We had a Super Wal-Mart and now have an even bigger one. And NO there is no longer a fabric department. Our town does NOT have any other stores which carry materials. We, the ladies who sew , in the community wrote, Email, and made many phone calls. It was a waste of time. We were told by some of the associates that the electronics departments would be enlarged because that was the most money making area not fabrics. The new store has some thread and nominal sewing notions. Several of their stores in surrounding areas still carry fabrics but will gradually phase out this department. Good Luck Ladies and keep trying! Maybe enough encouragement from their customers will eventually not fall on un listening ears.

I agree with Betty Ann in w. Tn. I am here in eastern Tn., and Walmart put all the fabric stores but one out of business (we have had a store come in since then that carries fabric) but anyway after they put the others out of business, with their inexpensive lace, fabric and buttons, etc. and then they go up on the lace and the only cheap thread anymore is black and white when they have it, and the cheapest spool otherwise is nearly $2, so now we pay what they want, since they put the others out of business. I just had to say my piece about that.

I'm in charge of the Easter morning breakfast at Church on Easter Sunday, need some advice on precooking on sat. evening. Any advice welcome. Bacon, hash browns, biscuits, sausage gravy, chip beef on toast. Any suggestions? The fruit platters and etc. can be done before hand.. Can the above items be done the night before? To all who are upset with Wal~Mart... if you can't find the comment cards at your local Wal~Mart send an Email to them. you might be surprised at how customer comments can have an effect on their policies!! not promising you they will keep the fabric department but if enough of us complain it will get their attention. I once was part of the Wal~Mart work force and know of times the cooperate level listened I am also upset at them about causing so many of our local shops to have to close, then stop carrying things. just not right!! And believe me I let them know about it! Brenda in Alabama

I live in a rural area in W. TN. Wal-Mart is removing the fabric here as well as several other towns that are in this area. The nearest place for us to go to get fabric is Jackson, which is 45 miles away. It really upsets me that Wal-Mart comes in and drives off all the competition and then decides to eliminate a department that carries goods that we no longer have here ... All because of the dollar. It seems that Wal-Mart is driving our economy here. AND, while I am ranting and raving, what happened to 'made in America!'.

Peanut Butter Chewies.... a recipe from our school system here in
Colorado.

1-1/4 cups sugar
1-1/4 cups light corn syrup
2 1/2 cups peanut butter
1 (18oz) box corn flakes
Combine sugar and syrup. Bring to a rolling boil . Remove from heat and blend in peanut butter. Put corn flakes in a large bowl and pour syrup mixture over... Mix well and press onto cookie sheet. Cut in desired size.... Thickness of bar depends on size of pan used.

I'm glad you love my Buttermilk Chicken as much as I do. Here's the recipe again:

Buttermilk Chicken
4 chicken breasts
1 1/2 cup buttermilk, divided
3/4 cup flour
1/2 t. salt
1/4 t. pepper
1/4 cup butter
1 can cream of mushroom soup

Combine flour, salt and pepper in plastic bag. Dip chicken into 1/2 cup buttermilk. Drop in flour, salt and pepper mixture and shake gently to coat chicken. Melt butter in a baking pan, put chicken in pan. Bake at 425° uncovered for 30 minutes. Turn and bake 15 minutes more. Turn breasts again. Mix together 1 cup buttermilk and cream of chicken soup; pour over chicken. Bake 15 minutes more.

Hi Nancy and fur babies, I may be a little late getting this in for ,"TENNESSEE YANKY"S request on how to cook rice without being sticky. But this works real well and no trouble at all. Just cook the rice till done then put in a colander and spray it with sprayer on sink, drain well and fluff with fork.. Hope this helps.. God Bless all of you.. Gloria Farris in Ga.

My husband and I both are from Marietta both graduated from MHS left when he joined the AF and retired after serving 30 yrs. I still have lots of family in Marietta and area including WV. We just went home last summer and there were lots of changes. Nancy, I love your newsletter and want to thank you for spending so much of your time bringing me together with this large wonderful family. Here I am with another request from the Nancylanders...
Many years ago, my mother had a recipe for Oatmeal Cookies that contained both raisins and walnuts. It was a soft cookie though. My sister had the recipe, but over the years she has changed it so much that it no longer has the same moist taste. It does have some spices in it, but to start, you covered a whole box of raisins with boiling water and let stand until cool. You also put some baking soda into the water after you covered the raisins. I also remember that once the raisins and water had cooled, then you added your dry ingredients, and never drained the water.

After the cookies were baked, they did not flatten out, but remained rounded up, and turned a beautiful golden brown. If they were placed in a airtight container, they would remain nice and moist for several days. They were so good with a cup of tea!!

I know this is just piece-mealed together on how to describe it, but hopefully some of the readers might remember this wonderful recipe.

This is a very old, but delicious, recipe. It's perfect for any spring celebration you might be planning.

Strawberry Cake
1 pkg (18.25 oz) white cake mix
1 pkg (3 oz) strawberry Jell-O
Half of a 10 oz pkg frozen strawberries, thawed
1/3 cup salad oil
1/2 cup cold water
4 egg whites

Mix ingredients; beat at low speed. Pour batter into two 8" or 9:" layer pans coated with cooking spray. Bake in a preheated oven, 350 degrees, for 30 minutes or until tested done. Cool completely before frosting.

Strawberry Frosting
1 lb powdered sugar
1/2 cup butter, softened
Remaining frozen strawberries, thawed

Mix ingredients; beat well until thick and creamy. Spread on cooled cakes.

Nancy, in response to all the talk about Wal-mart fabric sections. I, too, called the number and asked about it. The customer service person told me that this is being evaluated and will not involve all stores.

She said that the stores in the more rural areas will retain this department. The clerk at our closest store said that their department is being evaluated and would not have a definitive answer for 1-2 years. The new stores will have little to none however.

Onion Casserole
1 ( 103/4 oz) can cream of chicken soup
1/2 c. milk
8 c sliced white onions, steamed until transparent
1/2 lb swiss cheese, shredded
6 to 8 - 1 inch slices of French bread
1/4 c. butter

Heat oven to 350. Combine soup with milk. In a greased 2 qt casserole, layer 1/2 each of onions, soup mixture, and cheese, repeat. Spread French bread generously with butter, place on top of casserole with buttered side up. Bake 30 min. until bubbly and golden brown.

Pork Chop Dinner
Vegetable oil
4 to 6 pork chops
salt and pepper to taste
2/3 c. chopped green peppers
2/3 c. chopped onion
2 (10-1/2 oz) cans chicken and rice soup
2/3 c. uncooked long grain rice
1/2 c. hot water

Heat oven to 350. Heat vegetable oil in skillet, brown pork chops. Sprinkle lightly with salt and pepper. Remove chops to shallow baking dish one layer deep., In same skillet, lightly saute green pepper and onion. Place over pork chops. mix soup, uncooked rice, and water. Pour over and around pork chops. Cover tightly and bake 1 1/2 hrs.

Salmon Loaf with Dill Sauce
1 (16oz.) can red salmon, drained, deboned, and flaked
1/2c. milk
2c. soft bread crumbs
2 eggs, beaten
1 T. grated onion
2 T. minced fresh parsley
1 T. fresh lemon juice
1/4 t. salt
dash of freshly ground pepper

Heat oven to 375. Mix salmon, milk, bread crumbs, and eggs. Add onion, parsley, lemon juice, salt, and pepper. Mix well. but do not over mix. Place into greased 8-1/2x4-1/2 loaf pan. Bake 40 to 45 min. Prepare sauce.

Dill sauce
1 T. butter
4t. all purpose flour
1 c. milk
1/4 t. salt
1/4 t. dill weed, crushed or to taste
In small pot melt butter over low heat. Stir in flour until smooth, cook 3 minutes. Add milk and stir until thickened. Add salt, dill weed, and serve hot with Salmon loaf.

This is for Dee in TX. We moved here from Mount Joy, PA, which is 10 minutes from Lancaster in July of 2003. My husband's family is here in Jacksonville (near Tyler). We are not too far from each other. One of my sister-in-laws is from Bryan, OH. I have been to OH several times while growing up to visit them when they lived there. How do you like TX? I like it, but nothing ever is quite as good as home!

Good morning everyone. We live in western Washington, and recently had the chance to visit son and his family in Sanford, NC. We loved North Carolina! Of course, we had a great time visiting the grandkids, but we also made it a point to drive around. We went to Wilmington, to the aquarium there.. to Ft Bragg, where son is posted, and points in between. Thanks to all of the great folks we met who were so friendly!

rhubarb is fairly easy to grow if you have rich soil If you have sandy soil, then create a raised or isolated bed, buy rhubarb root from a reputable nursery. You need lots of compost and the soil needs to be able to hold some moisture without being soggy. You will not get a crop the first year, but leave the plant alone, and the second and following years, you should have enough for your family from one plant. We have two, and I have trouble keeping up with them, as they are large and heavy producers. I think in your climate, they would appreciate partial shade. Talk with your local nursery, and see what they suggest, and if there is a variety that does better in your climate conditions

Good Morning Nancy and furry babies,
I just love the stories about your kitties antics! I have a two yr old female tiger stripe tabby that I got at the animal shelter a year ago and she means the world to mean. Even when I have a bad day she can make me laugh. I have a suggestion for all the ladies who will miss Walmart's fabric dept. In my area of Wisconsin we have tons of garage sales all summer. So I buy the biggest sheets-blankets-material and clothing I can find and use these in my quilts. Of course if you need a certain color or fabric you would still have to buy it at a store but I've had great luck buying my stash of material this way. The nice thing about it is you can really mix and match colors.

I want to thank Tona in Bama for that wonderful Cream Cheese Banana Bread recipe.
I made it and my family just loved it and don't want it made any other way. Take care Nancy.
