Dear Cats, I have enclosed 3 Apple Fritter recipes for you. The first 2 I have tried...during my childhood a friend's Mom made the first recipe and my Grandma made the second. The third recipe I had in my files. Hope these are something you might be looking for.

Apple Fritters Recipe
1/2 cup milk
1 teaspoon vanilla
1 egg
2 tablespoons melted butter
1/2 cup sugar
1 tablespoon grated orange rind
1/4 teaspoon salt
1 tablespoon baking powder
1 1/2 cups cake flour
1/2 cup chopped apples (skin on)

Blend all wet ingredients and sugar. Fold in orange rind, salt and baking powder. Fold in flour. Fold in chopped apples. Do not over mix. Drop spoonfuls of batter in 325 degree oil and fry until golden brown, flipping fritters over.

Apple Rings
(We went nuts for these!)
4 golden delicious apples
2 teaspoons lemon juice
2 cups pancake mix ("complete mix" type)
1 1/2 cups water
1/2 teaspoon ground nutmeg
1/2 cup confectioners' sugar (powdered)
2 cups vegetable oil

Peel and core apples with apple corer. Slice apples into 1/4" slices forming apple rings. Sprinkle apple slices with lemon juice to prevent browning. Mix together pancake mix, water and nutmeg. Add enough oil to fry pan to have at
least 1" oil (a deep fryer may also be used). Heat oil to approx 350 degrees F on medium heat. Coat 3-4 apple slices in batter and fry in oil about 1-2 minutes per side or until golden brown. Remove rings and place on a flat brown
paper bag for draining. Repeat for all of the other apple rings. Let rings cool for about 5 minutes. Dust fritters with powdered sugar. 14-18 servings.

Apple Fritters Recipe
2 large eggs
2 teaspoons granulated sugar
2/3 cup milk
1 teaspoon vegetable oil
1 teaspoon lemon juice
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
5-6 apples, peeled, cored and sliced thin

Beat eggs in a large bowl. Beat in sugar, milk, oil and lemon juice. In a small bowl, combine flour, baking powder and salt. Stir dry ingredients into batter. Refrigerate batter for one hour. Add apple slices to batter. Heat oil for deep
frying to 370, preheat oven to 250. Drop large tablespoons of batter into hot oil and fry until golden. Drain on paper towels. Keep fritters warm on a rack on a cookie sheet in oven. Serve with maple syrup drizzled over top. 8 servings.


Janice in IL re: White Clothes
Try Bluing in your laundry .Should be in the laundry isle. My mother now 70 always used it on my dads t-shirts and boxers. That was in the old days when they were white not crazy patterns. Also hanging whites out in the sunshine keeps them white. But many can't or don't want to (ME).

Hi Kris, I too, am celiac. I found the best GF pizza crust was Carol Fenster's , her recipes are great. She has a great recipe site. Just type in her name and it will appear. I have hundreds of GF recipes and you can get lots and lots on line. There are too many to mention. Here is one of my very favourite recipes.

Cornbread
3/4 cup GF flour mix (see below)
1 cup cornmeal
1 tbls baking powder GF
1/4 cup sugar
1 & 1/4 cups milk
2 eggs
1/3 cup oil
1 tsp guar gum

Preheat oven 350. Mix well, grease 9 x 9 pan. Bake for 30 mins. Test with toothpick in centre to make sure it is done.
Double everything for 9 x 13 pan but the eggs, use only 3.

The Gluten Free Flour Mix:
3 cups Brown Rice Flour
1-1/4 cups Potato starch or Corn starch
3/4 cup Tapioca Flour.

Mix all together and store in fridge, use when required. Note: I make this recipe for cornbread into muffins, and also add blueberries, or raisins, etc.

For Janice in IL. I like to put about 3 / 4 cup powdered dish washer detergent (like electrosol) in with my whites and it really does a great job. Another tip for washing windows is to buy a gallon of car windshield washer for about 98 cents a gallon and it does a terrific job on windows rather than using Windex, and of course use a miracle cloth with it and you will have no streaks!!!

If it is, click on it to uncheck.
Click on Apply and Okay

Hope that's the problem.


In response to the Chocolate Frosting Mix, yes the Jiffy does still have the chocolate frosting mix. Our WalMart and Super Target have it. I prefer the cake made with Jiffy Frosting Mix. I have made it both ways, it is more fudgy inside with frosting mix.

From the July 26 newsletter for Janice in Illinois. The best thing I've found to really whiten white clothes is a product called "Yellow Out". I find it at Walmart and the grocery store in the section with the laundry detergents, bleach and etc. It really works well on undies. Make sure you only use it on white clothes, though, because it will take out the color in anything that's not all white.

It really makes my day when I open my mail and there is the latest issue of recipes.
I am looking for a recipe that was from 2002 and was in a booklet that was put out by Southern Living. (I think). It is a fresh apple cake and I believe it had a brown sugar icing. It was baked in a bundt pan and was so moist. I have lost my copy of the recipe and have looked everywhere. Hope that someone can help me. Thanks in advance.

Cindy in Monterey New York on pg.1 of the July 25th Recipe Exchange Newsletter asked me to post the recipe for "The Chocolate 'N' Cheese Tunnel Cake" if it contained cream cheese, which it does, so here it is.

CHOCOLATE 'N' CHEESE TUNNEL CAKE
1 box chocolate cake mix with pudding -- (18.25 oz.)
1/3 C. butter or margarine
16 oz. cream cheese, softened
1/2 C. granulated sugar
2 eggs
2 tsp. butter or margarine, melted
2 oz. semisweet chocolate
2 tsp. corn syrup
Preheat oven to 350ºF.

Prepare cake mix according to package directions, substituting butter for oil. Reserve 1 cup of batter. Pour remaining batter into a 12-cup greased and floured fluted tube pan. Combine cream cheese and sugar, mixing well at medium speed on an electric mixer until well blended. Blend in eggs, one at a time. Pour over batter in the pan. Spoon reserved batter over cream cheese mixture. Bake 1 hour or until a wooden pick inserted in center comes out clean. Cool 30 minutes; remove to a wire rack. Combine butter, chocolate and corn syrup in a small saucepan. Cook over low heat until chocolate is melted. Pour over cooled cake.


This is for Gem in too hot Tennessee. Just put the sandwiches and all his papers in plastic bags-separately of course. I would think that would solve the problem. Or, you could place some paper towels or several thicknesses of newspaper between the "Blue Ice" and the food and other things he carries.

I thought it was time to send in this recipe in time for the upcoming heat-wave (here in Montreal at least).

Summer Potato Salad
4 cups new potatoes (the tiny ones or Grelots as they are known in Québec)
2 Tbsps vinegar
6 Tbsps olive oil (go for extra-virgin if you have it)
4 Tbsps warm water
1/2 tsp salt
1/4 tsp pepper
3 scallions (green onions, chopped)
1 tsp fresh parsley, minced

Cook potatoes whole, 15-20 mins until cooked. When done, cut them in half and place in a wooden or ceramic bowl. Combine all other ingredients and pour over potatoes. Cover and store at room temperature overnight before eating. These will keep 2-4 days unrefridgerated.

I also use this vinegrette for bean salad; just rinse a can of mixed beans, add some chopped radish and let sit awhile before serving.

Simple and delicious.

This is for Mike in Montreal asking about canning corn, in the 7/27 newsletter. I used to can corn, but it’s been my experience that the long processing time makes the corn not very tasty. Corn is absolutely MUCH better frozen. Now I just “blanche” it, then put in ice water, then cut off the cob and freeze in zip-lock baggies. It’s delicious that way. I add no salt at all. If you can, buy the BALL canning book, it gives instructions for both methods.

I must not be reading every newsletter (thought I was devouring every line) because sometimes I see a reference to a recipe that I hadn't seen before....must be missing out somewhere..sob! Anyhow I saw a reference to an Orange Soaked Cake and would appreciate knowing what newsletter it was in. It sounded interesting and Tona in Bama always sends in the best recipes. I definitely would like to try it.

This is a suggestion for Gem in Hot Tennessee in the July 26th newsletter. You were concerned about keeping your husband's inside lunchbox dry. I wonder if you put the Rubbermaid frozen blue ice "thingy" in a zip loc bag if that would keep it from sweating on the other things your husband carries in the box. Maybe he could put the pens, time card and etc. in a zip loc bag and they would stay dry. Just a suggestion. If you find a good solution. let us know.

Hello to everyone!
I was wondering if anyone remembers if a recipe was posted about graham cracker sandwiches that were filled with mixing bananas and peanut butter and placing them in the freezer until you were ready to eat them? I think I have all the ingredients but would love to see the recipe to make sure.

To Gem in Too Hot Tennessee.... I had the same problem with my lunch. Now I take the hard blue ice pack thingy and put it in a ziplock bag!!!!!!! No water mess! Hope this helps!

Put your ice chillers oin zip lock baggies,that might help. Does he like peanut and banana sandwiches? How about a veggie sub the he can add the dressing to when he is ready?

Gem in Tennessee asked about keeping DH's lunchbox dry inside. Gem, I'd try putting the Rubbermaid ice pack inside a Ziploc bag. That would still do the cooling job but would contain the "sweat" to the inside of the bag. Hope that
works for you!

Hi Nancy thank you for all the good recipes. Print out a lot of them and send to my cousin in Florida. She says keep them coming. In answer to Janice in IL. on getting your white clothes white again. I use a cup and a half of DISHWASHER POWDER not dish soap. and a cup and a half of bleach. Agitate machine and add your white clothes. Use the cheapest dishwasher powder you can find. And it must be powder not a liquid. Use this whenever your white clothes start to look dingy. Use hot or cold water. Let the clothes sit in mixture for at least 4 hours or overnight. It works.
