I am looking for a pecan cake recipe. My mother in law made one every year for Christmas from scratch and she would make it like 3 to 5 days before our Christmas eve family get together and I have yet to find a recipe like hers. she kept the recipe secret and I was wondering if anyone has a recipe for a pecan cake that I might can compare to see if it is like hers. Even the icing was homemade

Elderberry Preserves
from Jeanne Maack

2 quarts elderberries with stems removed
2 cups cold water
1 box powdered pectin
5 cups sugar

In stockpot, simmer elderberries in water until berries are soft. Strain thru cheesecloth. Be sure you have 3 1/2 cups juice. If not, pour little water thru crushed berries. Return 3-1/2 cups juice to stockpot. Add pectin to juice & bring to boil. Stir in sugar & bring to full rolling boil. Boil for 1 minute. Ladle into sterilized jars leaving 1/2 inch headroom. Wipe rims. Cap & seal lids. Process in Boiling Water Bath for 10 minutes. Yields: 6 to 8 pints.

The Best Spaghetti Sauce You'll Ever Eat!
1-1/2 lbs. Ground beef
1 T olive oil
1-1/2 C chopped onion
1 clove garlic, minced
1 T flour
1 C bread and butter pickles, chopped fine - measure after chopping
2 14.5 oz cans diced tomatoes with Italian seasoning
1 6 oz. Can tomato paste
1 t salt
2 t oregano
2 t basil
1/4 t pepper
1/4 C red wine (optional)
1 t red pepper flakes ( optional - if you want some zing)
Brown meat and onion in oil. Add remaining ingredients and simmer, covered, about 1 hour, stirring occasionally. Uncover and cook 15 minutes more to thicken.
Serve over hot pasta.

CREAM CHEESE COOKIES
8 oz. Philadelphia cream cheese
1/2 lb. margarine
2 c. regular flour
1 1/2 c. sugar
1 c. chopped walnuts or pecans

Mix cheese and margarine stirring with spoon. Fold in sugar, flour and nuts. Drop by teaspoonful onto a greased cookie sheet. Bake at 350 degrees until slightly brown around edges.

I haven't used an electric skillet to bake biscuits, but I frequently bake them in a skillet on top of the stove and they are wonderful (and saves heating the oven on a hot summer's day).

Simply use whatever biscuit dough you would normally bake in the oven and cut out as usual. Melt about 1/2 cup of butter (1 stick) for each six biscuits in the skillet. When butter is melted, lay biscuits in skillet and cover. Cook on medium for about 8 minutes; uncover and check bottoms to make sure they aren't too brown. Biscuits should be rising nicely. If bottoms are brown and biscuits have risen, gently turn them with a spatula, cover the pan again and cook another 4 minutes or so. They are done when they sound hollow when "thumped" with a fingernail.

I have never tried this with canned biscuits, but don't know why it wouldn't work.

This is in answer to Mary Jean in San Marcos, CA in the Mon., Jul 17th newsletter, page 2 about the cream puff cake. Also This is in response to Jan in IL asking about bierocks in the Mon. June 26th newsletter. Also included is my recipe for Cabbage Rolls, requested by Linda in Kansas City. The recipe was given to me by a very good friend here.

Elegant looking & tasting dessert!!

CRUST:
1 c. water
1 stick butter
1 c. flour
4 eggs
FILLING:
3 sm. boxes instant vanilla pudding
1 (8 oz.) pkg. cream cheese
4 c. milk
1 (9 oz.) Cool Whip
Chocolate syrup

Boil together 1 cup water and 1 stick butter. Add 1 cup flour, stir together and let sit for 2 minutes. Stir in 4 eggs, one at a time, spread into greased 9"x13" pan. Bake at 400 degrees for 30 to 35 minutes. Cool. Beat cream cheese. Add vanilla pudding and milk a little at a time. Pour onto crust. Cover with Cool Whip. Drizzle with chocolate syrup and swirl to create a design. Refrigerate until chilled. Serves 12 to 16.

My friend Lisa makes this with the following differences:

The crust is the same which I bake for 20-25 minutes at 400 I use 2 (3.4 oz.) pkgs. instant vanila pudding, 3 cups milk, 1 8 oz. pkg. cream cheese. Whipped cream and syrup is the same, but I do add the sliced almonds on top.


We have had them with the cabbage, not the sauerkraut, but it would be good with either. You could add a tad bit of shredded cheese to the filling.

Kraut Brioche (Krautburgers or Bierocks or Runzas)
Bread dough:
1 pkg. dry yeast
1/4 cup water
2 cups milk, scalded
2 T. sugar
2 t. salt
1 T. shortening
6 1/2 or 7 cups sifted flour

Filling:
1 large head cabbage, chopped
1 cup onions, chopped
1 1/2 lbs. ground beef
1/2 t. pepper
1 t. salt

Brown ground beef in a large fry pan, add rest of filling ingredients and cook over low heat until cabbage is fairly limp. Remove from heat, set aside to cool.

Soften yeast in small amount of water. In the meantime, combine milk, sugar, salt, and shortening. Add yeast, add flour as needed to make moderately stiff dough. Turn out on lightly floured surface; knead until smooth and
satiny, about 6 minutes.

Let rise in a warm draft free place until double in bulk, about 45 minutes. Divide dough in small pieces and roll out to about the size of a saucer. Put about 3 tablespoons of meat/cabbage mixture in the center and bring sides up
pinching to seal completely. Turn seam side down on greased baking sheet about 3 inches apart. Let rise about 10 minutes and bake 20-25 minutes at 375 degrees.

Bierock Casserole
2 lb. ground beef
1 c. chopped onion
1 - 29 oz. - can tomato sauce
3 1/2 lb. chopped cabbage
1 c. uncooked white rice
1 tsp. salt
2 - 14 oz. - cans beef broth

Preheat oven to 350 º F. Brown beef in oil in large skillet over med. high until well browned. Drain off fat. In a large mixing bowl, combine all ingredients, except broth, and mix well. Pour mixture in a deep 9 x 13 baking dish. Pour broth over meat mixture and bake in oven, covered, for 1 hr. Stir, replace cover and bake another 30 minutes.

Cabbage Rolls - TNT
Mix together and set aside:

2 lb. ground beef OR 1 1/2 lb. ground beef & 1/2 lb. bulk sausage
1 grated onion
1 grated carrot
1/4 c. cooked rice
1/2 tsp. seasoned pepper
1/2 tsp. garlic powder

Meanwhile remove core from cabbage. Bring water to boil, add a little salt and 1 tsp. sugar to water. Place cabbage in water, cover and boil 4 min. Gently peel leaves off head of cabbage to fill with 1 lg. spoon meat mixture. Wrap carefully and lay in bottom of deep baking dish/pan that has been sprayed with Pam. Continue to fill leaves until meat mixture is gone.

Sauce:
1 can stewed tomatoes (I used crushed tomatoes)
2 small cans tomato paste
1 can beef broth
1 can chicken broth
1 tsp. garlic powder
1 tsp. seasoned pepper
2 tsp. sugar
1/4 c. red wine

Mix sauce ingredients together, heat on stove. Pour over cabbage rolls. Cover pan and bake @ 325º F for 1 1/2 hours. Makes about 30 - 40 cabbage rolls.

Orange Soak Cake

Cake:
1 package Duncan Hines Moist Duluxe Orange
Supreme Cake Mix.

Glaze:
2 cups confectioners sugar
1/3 cup orange juice
2 tablespoons melted butter or margarine.
1 tablespoon water

Preheat oven to 350 degrees. Grease and flour 13x9x2 inch pan.

For Cake: Prepare and bake following package directions for basic recipe. Poke holes in top of warm cake with tines of fork or toothpick.

For Glaze: Combine confectioners sugar, orange juice, melted butter and water in medium bowl. Pour slowly over top allowing glaze to soak into warm cake. Cool Completely. Makes 12 to 16 servings.

Tip: Sift confectioners sugar before preparing glaze.

1) I checked on the Sun Maid site and found out that 1/4 of cup of raisins = 40 gr and that a box is 15 ounces .Hope it will help.

2) For eggs substitute , here is a simple chart :
Egg to Egg Substitute Conversion:

1 egg = 1/4 cup egg substitute
2 eggs = 1/2 cup egg substitute
4 eggs = 1 cup egg substitute
8 eggs = 1 pint carton egg substitute
3) Sometimes I substitute butter with applesauce depending what you are baking...I think that you can substitute with oil only if the recipe call for melted butter.. But I'm sure that the great bakers here have better answers...:))

4) Homemade Old Bay Seasoning
1 tbsp ground bay leaves
2-1/2 tsp celery salt
1-1/2 tsp dry mustard
1-1/2 tsp black pepper
3/4 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp paprika
1/2 tsp red pepper
1/4 tsp ground mace (optional)
1/4 tsp ground cardamom (optional)

Combine all ingredients: store in an airtight container. It's great also to season the flour for fried chicken, and on French fries


Looking for some good desserts made with ice cream. I hate to turn the oven on in this hot weather but I need to make a cake for birthday for a co-worker. Anyone have any good recipes?
