I am looking for pork chop recipe I think was on here sometime ago. It had tomato soup, sliced onion rings and basil on pork shops and baked in the oven covered with foil..Does anyone have the correct recipe? It was very easy and very good. I sure enjoy trying the new recipes you share.

BISCUITS LIKE MCDONALD’S Copycat/Clone Recipe
1-1/3 cups flour
3 Tbls. powdered milk
1 Tbls. sugar
2-1/2 tsp. baking powder
3/4 tsp. salt
2 dashes cream of tarter
1/4 cup butter-flavored shortening (Crisco)
2/3 cup buttermilk
1/4 cup melted margarine-divided

Stir together flour, powdered milk, sugar , baking powder, salt and cream of tarter in medium size bowl. Cut shortening into dry mixture until blended thoroughly. Stir in buttermilk and 1 Tbls. melted margarine until well blended. On a floured surface, knead dough for 1 minute or until elastic. Roll out dough to ½”-3/4” thick; using a wide glass or round cookie cutter, cut out circles; place biscuits on an ungreased cookie sheet.

Bake 450º 10-12 minutes, until golden. Brush hot biscuits with remaining melted margarine.

Nancy, Here's the lemon square recipe I promised last week!

Lemon Square
1 package of Graham Wafers
1 Can Eagle Brand Milk
Rind (grate before you juice the lemon)
Juice of 1 lemon (note I place my lemon in microwave for a few minutes this makes for more juice).
If small I use 1 1/2 to 2 lemons.
Butter icing

Place 1/2 graham wafer in bottom of cookie sheet And then mix lemon juice & rind into condensed milk mix and spread on top of graham wafers top with a layer of graham wafer and then spread your favorite butter icing on top. Cover and place in refrigerator for at least 8 hours, overnight is just great.

All these raisin pie recipes are intriguing me. My Mum died in July 2006 and of course, many of my favorite recipes she made while I was growing died with her.

My Mum was born and raised in Scotland and she used to make a raisin pie with pie dough flattened on a cookie sheet. Ingredients were currants and apple sauce and I’m not sure what else. The top of the pie dough would be brushed with egg and then it was baked in the oven at 350 degrees.

It was one of my most favorite recipes and it was simply to die for. I hope one of your readers has this recipe, Nancy – your site is one of the best on the web.

Hello everyone! Finally I'm back online after having moved back to civilization. Originally from Manassas, Va. then to Reedville, Va and now in Fredericksburg, Va. I have missed reading the newsletter and keeping up with things. Anyway, this question is sort of related to cooking. Does anyone have one of those new can openers you place on the can and it opens it up... hands free. Is it reliable and really work?

BACON - SPINACH QUICHE
1/2 lb. cooked & crumbled bacon
1 (10 oz.) frozen spinach, thawed, drained well
4 eggs, slightly beaten
1 c. milk
1 c. cheddar cheese, shredded
Salt & pepper
2 tbsp. chopped onion (opt.)

Combine ingredients; pour into pastry lined quiche dish or uncooked pie crust. Bake at 400 degrees for 35 minutes or until middle is done.
Serves 6 to 8.

This is my recipe for beer bread. My family and I think it is delicious!

Beer Bread
3 cups self-rising flour
2 tbsp sugar
1 can (12 oz) beer, room temperature
1 cup grated cheese (Swiss or cheddar)
1 tsp caraway seeds
7 tbsp melted butter, divided

Preheat oven to 350 degrees. Combine flour, sugar and beer in a large bowl and mix thoroughly. Stir in cheese and caraway seeds. Pour batter into a 9" x 5" loaf pan. Spoon 4 tbsp melted butter over batter. Bake 20 minutes. Brush top with remaining butter and continue baking until top is golden and tester inserted in center of loaf comes out clean, about 25 minutes more.

NOTE: You can use 12 oz club soda in place of beer. Open beer to allow the fizz to dissipate before making the bread.

Just a little something about party sandwiches. I have gone to my bakery store and asked them to order me sandwich loaves in color which I got 1 pink and 1 green, cut off the crusts and cut them in four I also put one color on the bottom and the other color on top wich gave you very fancy sandwiches. Baked Peaches
1 can cling peaches, halves
16 macaroons
1/2 c. sherry

Drain peach halves, reserving 1/2c. syrup. Arrange peaches rounded side down in shallow dish. Crumble macaroons. Toss with 2 T. syrup. Fill peach halves with macaroon mixture. Combine remaining syrup with sherry. Pour over peaches. Bake 20 min 350. Serve warm.

Nancy thank you for such a wonderful newsletter with so much information that you hope that you can find but don't. Thanks to Jane in TN newsletter dated 2/25 for the equivalents that I have always guessed at. Now I will know for sure what size can to buy.

To Cathy from Ohio newsletter 2/23 wanting the recipe for the Banana Bread from Bob Evans. Our daughter has been a manager at Bob Evans until she had the twin and has gone back as an hourly employee. She said that they don't give out any recipes. You might try and buy a loaf at the restaurant near you.

Thanks to Toma in Bama newsletter 2/25 for posting the Cabbage Beef Casserole. This sound like a great substitute for stuffed cabbage rolls which I have never been able to make. I have no idea why I can not make them.

Hopefully someone will have the recipe for the Crab Melt Sandwich that I had in California this month, February. It had crab meat, onion, celery both chopped very fine, mayonnaise or Miracle Whip, and cheese what kind don't know. May have more ingredients but these are the ones that I could taste. Help please but I would like to have the sandwich to eat, of course.

For Noble who wanted the popcorn salad recipe, here is the recipe again...

Popcorn Salad Recipe
8 cups plain popcorn
1/2 cup chopped almonds
1/2 cup chopped celery
1/4 cup chopped green onions
1 cup grated cheddar
1/2 cup chopped, cooked bacon

In a large bowl mix the above ingredients. Just before serving stir in 1/2 cup miracle whip and 1/2 cup sour cream. This salad needs to be eaten while fresh, does not keep terribly well. I buy a big bag of plain popcorn at the local superstore and it is enough for a double recipe, if you are having a large gathering, etc.

I am also passing on a no-bake cookie recipe that I make all the time and it is sooooo delicious! It has only three ingredients. This is a real treat!

Take one bag of chocolate chips and one bag of butterscotch chips and melt on the microwave with 1tblsp. of oil. When smooth and creamy, stir in one bag of plain potato sticks( I use Frenchs' brand) Drop onto waxed paper by the spoonful and let harden.
note-- use only the best quality chocolate and butterscotch chips. You could use chow mein noodles in place of potato sticks, BUT the flavor will not be there as the saltiness of the potato sticks mixed with sweetness of the chipits is just wonderful.

I snuggle up with my furbaby - Dusty, she is a 7 mo. old chocolate very spoiled kitty! lol!!!

I have a couple questions concerning two different recipes.

Tona in Bama, first of all I want to say I just love all your wonderful recipe's you submit!!!

In the Feb. 25th 2007 newsletter you submitted a recipe ... Peach Coffee Cake,
my question concerns the first ingredient, it says 3/3 cup flour, I think this was supposed to be 2/3 cup flour? The rest of the recipe looked ok, could you please specify the correct amount of flour, the recipe sounds so yummy!!!! Also I was wondering if this could be doubled and made in a 9x13 as when I cook or bake it has to be larger amounts usually!

My other question is for grannym IL , in the same newsletter... Feb. 25 2007 you submitted a recipe .... Escalloped Apples au Gratin. I agree the ingredients are intriguing & interesting!

My question is this... What size casserole or pan would you use?
It just said a buttered casserole... any idea by the ingredients?
I want to try this one, its very unusual!!! lol!!!

Hi Etta...I use canned black-eyed peas for the Hot Hoppin' John Salad recipe. I just pour them in my small colander and drain, then rinse them good. I like this salad...it is very good.

MICROWAVE STUFFED ONIONS FLORENTINE
2 large Vidalia (or other sweet) onions
1 (10 oz.) pkg. frozen chopped spinach
1/4 lb. bulk pork sausage
1/3 cup shredded cheddar cheese
1/4 tsp. salt
dash pepper
dash ground nutmeg
1/4 cup hot water

Make onion shells by cutting each onion in half lengthwise. With a small knife, loosen the center of each half to make a 1/2-inch thick shell. Remove the center of each half and chop finely. Set aside 1 Tbsp. of chopped onion; refrigerate or freeze the remainder for other uses.

Remove spinach from package and place in a bowl. Microwave on High for 4-5 minutes, then let stand for about 10 minutes. Press to remove excess moisture
(hint: I use a collapsible veggie steamer to squeeze the moisture out of cooked spinach). Set aside.

In a 1 quart casserole, combine 1 Tbsp. chopped onion with sausage. Microwave on High 1-1/2 to 2 minutes, or until sausage is no longer pink, stirring once or twice. Drain fat. Stir in the spinach, cheese, salt, pepper, and nutmeg into the sausage. Set aside.

Arrange onion shells in a 9-inch round glass baking dish. Pour hot water around the onions and cover the dish with plastic wrap. Microwave on High for 5 minutes.
Spoon an equal amount of the sausage-spinach mixture into each onion shell. Cover again and Microwave on High 7-8 minutes, or until onions are very tender. Let stand
3-5 minutes before serving.

Breakfast Cornbread (good for lunch and dinner, too)
2 cups self-rising cornmeal
1 cup self-rising flour
2 eggs
2 1/2 cups buttermilk
1 small roll of sausage
1 package of shredded cheese
1 small can of green chilies

Preheat oven to 375 to 400. Pour 1/4 cup cooking oil to cover the bottom of your skillet/pan, use a non-stick spray to ensure your bread doesn't stick to the
skillet/pan. Place skillet/pan in the oven to heat. Brown the sausage. Mix the remaining ingredients together. Do not drain the sausage, pour from the skillet into the cornbread mixture. Mix well. Remove skillet/pan from the oven and spoon a small amount of mixture into the skillet. If you hear a sizzling sound the skillet/pan is hot
enough for crisp cornbread. Pour the remaining mixture into the skillet and bake for 25 to 30 minutes. Should be golden brown.

Cabbage Soup
1 Lb. ground beef
1-15 oz. can kidney beans, drained
1 smal head cabbage, chopped
1-15 oz. can beef stock
1/2 medium onion, chopped
1-15 oz. can tomatoes
1 small clove garlic - can omit
salt, pepper and caraway seed to taste

Brown ground beef. Put beef, kidney beans, chopped cabbage, beef stock, chopped onion, tomatoes, and spices in a pan. You cook this for 1 1/2 to 2 hours on top of the stove and all day in the crockpot.

Now I have a request for St. Patrick's Day, since that is our anniversary, dessert. We have been married 37 years and would like to have something special. Thank you so much. Nancy have a great day.

White Queso Dip
1 c. Monterey Jack cheese chopped fine
4 oz. green chiles in can chopped fine
1 Serrano pepper med. if fresh you need to blister skin in broiler for six to eight minutes , pull skin from flesh, chopp fined
1/2 tsp salt
2 tsp ground cumin
1/2 T cilanto chopped very fine
1/4 to 1/2 half & half cream you add for what thickness you like.

Put all in a double boiler on low to med. heat till all cheese melts. Stir occasionally. Good with fresh vegetables, baked potatoes. Serve with fried tortillas, Dorito chips. If you like with a hot taste, add green Tabasco to your taste.

White Mexican Cheese Dip.
1-1/2 to 2 lbs. White American Cheese, grated - can get in deli
1 cup half and half milk
small can of chopped green chilies.

Put milk in saucepan, add the green chilies, add the grated cheese little at a time and stir constantly till melted.

In Junior High cooking class we made "Master Mix", it was like Bisquick. I can't find the recipe from so many years ago but found these at www.kitchenmixes.com. Maybe you could try making your own. Hope this helps.

Like Bisquick Mix
10 C. Flour
3/8 C. Baking Powder
1 tsp. Cream of Tartar
1-1/4 C. Powdered Milk
1-1/2 Tbsp. Salt
1/4 C. Sugar
1 lb. Crisco shortening

Mix all dry ingredients together. Cut in shortening until mix is evenly crumbly. Store in an airtight container. Use where Bisquick or Jiffy Baking Mix is called for.

8 Cups Flour
1 1/4 Cups Nonfat Dry Milk Powder
1/4 Cup Baking Powder
1 Tablespoon Salt
2 Cups Shortening

Combine flour, milk, baking powder, and salt in a very large bowl. Cut in shortening until it resembles coarse cornmeal. Store in tightly closed covered container in a cool place. Makes about 10 cups.

Pineapple Meringue Bars
1/ cup soft butter or margarine
1/2 cup sifted icing sugar
2 egg yolks
1 cup sifed all-purpose flour
Combine the above ingredients and bake 10 minutes.

Pineapple Filling:
1/2 cup sugar
1 1/2 tablespoons cornstarch
1 1/2 cups crushed pineapple (do not drain)
1 tablespoon lemon juice
yellow food coloring (optional)
Combine sugar and cornstarch thoroughly in saucepan. Stir in pineapple and lemon juice and set over moderate heat. Cook, stirring constantly, until thickened and clear. Add a few drops yellow food coloring if desired. Cool to lukewarm. Pour over base. Beat 2 egg whites until foamy. Add 1/2 cup sugar gradually and beat until stiff and glossy. Fold in 1/4 teaspoon almond flavoring, and 1/2 cup finely chopped pecans. Bake 25 minutes in a 350 degree oven until meringue is golden.

Herbed Lemon Chicken and Rice
3-1/2 pounds chicken pieces
3 c l o v e s garlic, thinly sliced
1-1/2 cups fresh lemon juice-about 8 large lemons
1/4 cup all-purpose flour
1/2 tablespoon paprika
1 tablespoon olive oil
1 cup long-grain white rice(do not use par boiled
rice)
1 large sweet onion, thinly sliced
Salt and pepper to taste
1 cup mixed chopped herbs - dill, parsley, oregano,
marjoram or whatever combination you prefer
1 3/4 cups canned/boxed chicken broth

Rinse chicken and pat dry. Put chicken pieces and garlic in a shallow glass dish and pour lemon juice over. Cover with plastic wrap and refrigerate for at least 6 hours or overnight, turning chicken pieces occasionally. When ready to cook, drain the chicken, reserving lemon juice and garlic. In a large resealable plastic bag, shake flour and paprika to combine. Add a chicken piece and shake to coat evenly. Repeat until all chicken pieces are dredged in flour mixture. In a large nonstick skillet, brown chicken pieces in oil over medium-high heat until browned, about 5 minutes per side. Remove chicken and keep warm.

Place rice in a crockpot and top with onion and chicken. In a small saucepan, whisk together reserved lemon juice and garlic, salt, pepper, herbs, and broth. Bring to a full boil and boil for 1 minute. Pour over chicken. Do not stir. Cover and cook on low for 6 to 8 hours, or on high for 2-1/4 to 3 hours.

Maple Gingerbread
2-1/3 cups all-purpose flour
1 tsp. baking soda
1-1/2 tsp. ground ginger
1/2 tsp. salt
1 egg
1 cup maple syrup - natural is good but artificial is fine
1 cup sour cream
4 tbsp. melted butter
Frosting:
2 cups confectioners' sugar
2 tbsp. softened butter
3 tbsp. maple syrup
1 tbsp. whipping cream

Sift together the flour, soda, ginger and salt. Beat the egg until it is foamy, then gradually beat in the maple syrup, sour cream, and butter. Gradually add the dry ingredients, beating until well blended. Pour into a greased and lightly floured 11 X 7 X 1-1/2" baking pan. Bake at 350 degrees for 30-40 minutes, or until cake tests done. Remove from the oven and cool. Combine the frosting ingredients in a bowl, beat with an electric mixer until smooth and spreadable. Sprinkle with crushed walnuts or slivered almonds if desired.

Shepherd's Pie
1 lb ground round
garlic
onions
1 can of mixed vegetables
1 can of corn
1 cup of water
2 T flour
2-3 cups mashed potatoes (leftovers are fine)
Shredded cheese

Brown meat, add onions and garlic; add can of mixed vegs. Sprinkle with the flour, stir well. Add water and stir. Spread corn over the top, cover with mashed potatoes. Top with shredded cheese. Bake about 350-400 degrees until done. (top begins to lightly brown)

I am looking for a recipe I think its called Mallow pie I think it has crushed graham crackers pineapple cherrys I'm not sure what else..

Hoping you good people can help me out. I once had an occasion to have vegetable sticks. I can't remember what veggies were used . I do know they had corn in them. The vegetables were cut up and bound together by what? I don't know. They were formed into sticks, resembling cheese sticks and fried. I have searched the grocery stores and the internet, to no avail. Have any of you ever eaten or heard of these. Thanks in advance. And thank you Nancy for being the person that you are, A Jewel !
