Snapple (Clone Recipe)
8 cups water
3 Lipton Tea Bags
3/4 cup granulated sugar or 12 pkg. Sweet N Low or Equal
1/3 cup plus 2 Tbsp. lemon juice
Boil and let steep for 1 hour.

Orange Snapple
Same as above, but only 1/3 cup lemon juice ; add 1/2 tsp Watkins orange extract # 21387

Mushroom Soufflé
2 cups fresh mushrooms
1 small onion
2 tablespoons margarine
2 tablespoons flour
2/3 cup milk
4 egg yolks
4 egg whites
1/4 cup grated Parmesan cheese

Combine flour and margarine over low heat; add milk, cook until thickened, raising heat slightly if necessary. Sauté' and add the mushrooms and onions. Cool. Beat and fold in egg yolks. Fold mixture into stiffly beaten egg whites. Bake 30 minutes at 375.

I am from originally from ND too and glad to hear they have gotten into gourmet coffees too. Every summer I visit my Mom I am tempted to haul my coffee machine with as I am addicted to a good cup in the AM. I must admit my husband and I have one every day, but make them at home and much prefer ours to the store bought ones now that we have figured out the right coffee and chocolate for us. Next time Christmas or a birthday rolls around, buy them a GOOD machine. We have had several of the cheaper models, but those have not produced the good drinks like you can buy. We bought a Starbucks machine and also a burr ginder (I think that is what it is called) as the grinder makes such a difference too on the end result. Starbucks was wonderful to show us exactly how to operate and the recipes are just coffee and milk or coffee, chocolate, and milk. We now use a powdered chocolate that we can get locally, but sweetened powdered chocolate works well too as does Hershey's. When my 90 year old Mother comes to Oregon to visit, she is right in there too waiting for her mocha. She thinks I make the regular coffee too strong so has adopted the mocha thing too.

Fran, I was diagnosed with early onset diabetes two months ago and a friend told me about the following recipe which I have used ever since...I have one each morning for breakfast with an egg. I have had them plain and also have added either 1 cup frozen blueberries with and without some slivered almonds, 1/2-1 cup cranraisins with and without walnuts or pecans, or 1 mashed banana with walnuts and all have been delicious, so just have fun experimenting with favorite fruits!

Here's the basic recipe:
THE ORIGINAL ALL-BRAN MUFFIN (with my changes in parenthesis)

1-1/4 cups flour
1/2 cup sugar (or 1/4 cup baking splenda)
1 Tbsp. baking powder
1/4 tsp. salt
2 cups ready to eat All-Bran Original cereal
1-/4 cups fat free milk
1egg
1/4 cup vegetable oil
(opt. 1 rounded teaspoon of cinnamon)

1. Stir together flour, sugar, baking powder and salt. Set aside.
2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin pan cups coated with cooking spray.
3. Bake at 400° F about 20 minutes or until golden brown. Remove and cool on a rack.
Serve warm.

Note: I store in ziplock bag in refrigerator. Take out and nuke for 20 seconds to warm up.

VARIATIONS:
1. For muffins with reduced calories, fat and cholesterol, use 2 tablespoons sugar, 2 tablespoons oil and substitute 2 egg whites for 1 egg.
2. For muffins with reduced fat and cholesterol, substitute 2 egg whites for 1 egg and 1/4 cup sweetened applesauce, or 2 oz. jar bananas baby food, for 1/4 cup vegetable oil. Muffin texture may vary slightly from The Original All-Bran Muffins recipe.
3. Can add chopped nuts, cranraisins, blueberries, raisins, etc.


To Doris in Indiana - I use a mixture of white vinegar and water to clean my laminate floors. I put it in a spray bottle and spray the floor with it and mop it up. I like it better than any of the pricey laminate floor cleaners on the market, they always seemed to leave a film. I put a few drops of peppermint extract in with the vinegar and water and you can't smell the vinegar, everything just smells fresh and clean.

Flank Steak - My Favorite EASY recipe:
This is my old standby for a favorite, embarrassingly easy, dinner of ours. I just drop a flank steak down into a ziploc bag, pour in Dale's Steak Seasoning sauce, let marinate for a few hours, cook it on my George Foreman grill about 6 minutes (depending on thickness), slice thinly across grain. I serve it with a sauce made of Heinz 57 and horseradish. Add some brown rice, an asparagus salad, bbq bread and you can serve anybody that happens
by and they will love it, too.

AND - If I am in a REAL big hurry, I slice the steak after it is marinated but BEFORE I put the strips on George Foreman. THEN it is REALLY Quick.

Another Way: Marinate overnight using a bottle of Italian dressing (or dressing of your choice), then broil about 4-5 mins per side (as you like it) and slice diagonally).

You asked for a appetizer for the Super Bowl. This is a dip. My daughter raved about this Green Pepper Spread that she had tried at work. I was a little skeptical but now I make it when ever I have to bring something to pass. And now I always get rave reviews.

Green Pepper Spread
2 green peppers (chopped) make sure you chop them really small
1 med onion (chopped) " "
1 tsp salt
4 tbsp sugar (I used Splenda)
2 tbsp olive oil
1 tsp lemon juice
16 oz. cream cheese (I used fat-free)

Marinate above ingredients for 2 hours. Drain well & add 16 oz. softened cream cheese. Refrigerate and serve with crackers. For Christmas I used red, green and

yellow peppers I used all the three of the peppers and did not change the taste. Of course for the super bowl I plan on using yellow and green Packer colors even though they did not make it to the super bowl. We are still crying here in Green Bay.

For the person who asked for new appetizer recipes, that happens to be my forte!!!

Bacon Cheese Spread
a "SUPER" crowd pleaser!

1 loaf (16 oz.) round Italian bread
1 lb. Bacon, crisply cooked, crumbled
2 cups Colby & Monterey Jack Cheese, shredded
1 cup Grated Parmesan Cheese
1 cup Mayonnaise
1 small onion, finely chopped
1 clove garlic, minced

PREHEAT oven to 400°F. Cut lengthwise slice from top of bread loaf. Remove center, leaving 1-inch-thick shell. Cut removed bread into bite-sized peices; set aside.

MIX remaining ingredients until well blended. Spoon into bread shell; cover with top of bread. Wrap in foil. Place on baking sheet.

BAKE 15 to 20 minutes or until filling is heated through. Serve with the reserved bread pieces and assorted crackers.

*NOTE: My original recipe says to cook for 1 hour. Also, I just put more and more cheese in until the mixture completely fills the bread bowl.

For Ann who wanted flank steak recipes:

Korean BBQ Flank Steak
Memorial Day 2007

2 lb flank steak
2 scallions
2 garlic cloves
2 T grill seasoning
3 T honey
1/4 c soy sauce
1/4 c canola oil
dash of sesame oil
dash of cayenne pepper

Whisk all ingredients except steak in a small bowl. Pour into a shallow glass dish. Rinse steak and lay in marinate-flip meat to other side and let marinate for 15 minutes or until grill is ready. Cook steak on hot grill to desired doneness, adding marinate to steak as it cooks. Remove to a platter and let rest 15 minutes before slicing-against the grain.
**Rachel notes that you can do this with chicken or pork as well.

Salad Tortillas-I came up with this to encourage healthier eating with the kids-it's good.
1 pack 8" flour tortillas
1/2 bag salad greens-(I use spinach)
1 c shredded carrots
1 red pepper-julienne
8 oz sliced mushrooms
2 Roma tomatoes-ripe-seed and chop
4 green onions-chopped
4 oz sliced black olives-drained
4 oz any cheese
Mimi's Citrus Poppy Dressing

Warm tortillas as directed to make them soft and build your tortilla as you like, topping with dressing, and fold bottom and sides of tortilla in to hold and eat.
*Any grilled meat or seafood and/or bacon is great in these as well, or leave as is.

*Mimi's Citrus Poppy Dressing
1/2 c mayo
1/2 c sour cream
1-1/2 T honey
1 t poppy seeds
1/2 t orange zest
3 T fresh orang juice
Whisk all ingredients in a small bowl except juice-while whisking, drizzle in enough juice to make it dressing consistency, but not too thin. This is also great on a bowl of cold, fresh fruit or over a slice of grilled pound cake with grilled peaches!

The best way we've fixed this is to marinate it in Teriyaki Marinade. Then grill til it's as done as you like, slice thin, and pile it high on a hamburger bun with whatever toppings you like (or none at all).

What kind of dressing mix? Hidden Valley? Good Seasons? This sounds good, but I don't see the dressing mix listed.

Olive Pepper Pinwheels
Prep: 15 minutes Chill: 2 hours
Makes 3 dozen

1 package (ounces) reduced fat cream cheese
1 teaspoon fat free milk
1/3 cup finely chopped sweet green pepper
1/3 cup finely chopped sweet red pepper
1/3 cup finely chopped sweet yellow pepper
1 can (2 ¼ ounces) chopped ripe olives, drained well
6 flour tortillas (6-inches each)

In a mixing bowl, beat cream cheese and milk until smooth; stir in the peppers, olives ad dressing mix. Spread over tortillas. Roll up jelly-roll style; wrap tightly in plastic wrap.
Refrigerate for 2 hours or until firm. Just before serving, cut into 1-inch pieces. Can serve salsa on the side if prefer.

Per serving: One serving (2 pieces)
68 calories 4 g. fat 2 g. protein 6 carbohydrates Trace fiber 7 mg cholesterol
226 mg sodium

Anne wanted to know about cooking flank steak
Marinate the meat several hours. You can use a store bought marinade. We like Italian salad dressing. Broil or grill the steak like you would any other steak. The important thing about flank steak is to cut it in very thin at a very sharp angle almost like cutting london broil only thinner and more of an angle.

I need advice from Nancylanders. Hung a winter jacket too close to the woodstove and the pocket got scorched. This is a heavy denim jacket. Any ideas as to how to lessen the scorch marks?

If any of you ladies have been to Carrabba's you would know this

Bread Dipping Blend
1 tbl miniced fresh basil
1 tbl chopped fresh parsley
1 tbl minced fresh garlic
1 tsp dried thyme
1 tsp dried oregano
1 tsp ground black pepper
( fresh ground is the best)
1/2 tsp minced fresh rosemary
1/2 tsp ground sea salt or kosher
1/4 tsp crushed red pepper

1/2 tsp olive oil
1/8 tsp lemon juice

Combine all the ingredients, except the oil and lemon in a food processor or coffee grinder , chop briefly until all ingredients are about the same size.
Stir in oil and lemon juice.

To Serve, combine about 1 tsp of blend to 3 to 4 tablespoons of extra virgin olive oil on a small dish.. Dip sliced bread in mixture.

Here are 2 more coffee recipes for Debbie. The first was submitted by Pat CO last summer and has been a big hit with my husband. The other recipe was given to me by a friend. We also enjoy adding a little homemade hot cocoa mix to our cups of coffee, especially on these very cold days.

Frappucino Starbuck's Clone
6-8 cups of strong black coffee
1 can sweetened condensed milk (14 oz)
1/4 c. Hershey's chocolate syrup
Mix all together and store in refrigerator. You can change the ingredients to suit your taste.

Caramel Chocolate Frappucino
1-1/2 cups cold coffee, brewed double strength or to your liking

1/2 cup whole milk (I usually use skim milk.)
1/2 cup granulated sugar or sugar substitute
2 tablespoons caramel syrup
1/8 teaspoon vanilla extract
2 teaspoons unsweetened cocoa
3 cups ice cubes

Combine the coffee, milk, sugar, caramel syrup, and cocoa in a blender and mix on medium speed for 15 seconds to dissolve sugar.

Add the vanilla extract and ice, and then blend on high until smooth and creamy. Stir with spoon if necessary to help blend.

Pour into glasses and top each with whipped cream and drizzled caramel syrup.

I have made this over and over again. Everyone I serve them to, loves them. They are easy and the recipe makes a lot and you can make them a day ahead and just slice and serve the next day.

Tortilla Roll-Ups
2 packages frozen chopped spinach, drain & squeeze all water out
5 green onions, chopped
1 lb bacon, cooked & crumbled
1 package Hidden valley ranch dressing
1 cup mayo
16 oz sour cream
1 package tortilla’s (large size)

Mix together all ingredients except tortillas. Divide into 10 portions onto each tortilla. Spread over tortillas. Roll up. Chill overnight. Slice in pieces.


This is a great Bran Muffin recipe. Our boys (ages 6 and 11) even love these. Hope you enjoy them.

Apple Bran Muffins
1 1/4-cups bran flakes cereal
1 1/4-cups all-purpose flour
1/3-cup brown sugar
1-tspn ground cinnamon
1-tbspn baking powder
1 1/4-cups apple juice
1/4-cup margarine, melted
2-tspn vanilla extract
1 apple, peeled, cored and finely chopped

Preheat oven to 375°. Put muffin cups into muffin tins. In a mixing bowl, combine bran flakes, brown sugar, cinnamon and baking powder. Stir in apple juice, margarine, vanilla and apple. Spoon the mixture into the muffin cups. Bake for 25-30 minutes.

I've had some good luck with new recipes this week. I made this cabbage today and it is really good. Wanted to share the recipe while the weather is still cold enough for “comfort food.”

Country Cabbage
4 slices bacon
1 cabbage, chopped
salt and pepper to taste
Tony’s (that's my personal tweak)
2-tbspn butter

In a heavy Dutch Oven fry down the bacon remove to drain and add the chopped cabbage. Let simmer for about one minute and then add 1 cup of water. Salt and pepper to taste. * (And I added my little personal touch.) Cover and simmer until tender. Before serving stir n the butter and sprinkle with the crunched up bacon pieces.

Marshmallow Chippers
1 roll Pillsbury Chocolate Chip Cookies
16 regular marshmallows (halved)
8-oz chocolate chips mixed with about 2-tspn water, melted in microwave

Preheat oven to 350° - Shape cookies into 32 (1-in) balls. Place balls two inches apart on ungreased cookie sheets and bake for 11 minutes. While they are baking cut the marshmallows in half. Remove cookies at 11 minutes and immediately place 1 half marshmallow (cut side down) atop each cookie. Return to oven for 2 minutes or until marshmallows start to puff. Remove from oven and allow to cool for two minutes. Remove to cookie cooling rack and cook completely. Drizzle the melted chocolate over top of cookies and when set store in air tight plastic containers with waxed paper between the layers.

Bacon Appetizer Crescents
Prep Time: 30 min
Total Time: 45 min
Makes: 8 doz. or 24 servings, four crescents each
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
8 slices OSCAR MAYER Bacon, crisply cooked, crumbled
1/3 cup KRAFT 100% Grated Parmesan Cheese
1/4 cup finely chopped onion
2 Tbsp. chopped fresh parsley
1 Tbsp. milk
2 cans (8 oz. each) refrigerated crescent dinner rolls

PREHEAT oven to 375°F. Mix cream cheese, bacon, Parmesan cheese, onions, parsley and milk until well blended; set aside.

SEPARATE each can of dough into four rectangles; firmly press perforations together to seal. Spread each rectangle with 2 rounded tablespoonfuls of the cream cheese mixture. Cut each rectangle into 12 wedges. Roll up wedges, starting at short ends. Place, seam-sides down, on greased baking sheet.

BAKE 12 to 15 min. or until golden brown. Serve warm.

Chinese Chews/Haystacks
2 (12 ounce) packages Semi-sweet choc chips
1 (12ounce) package butterscotch chips
1 large can Chow Mein Noodles chow mein Noodles
Spanish peanuts, marshmallows, cashews, etc..

Melt all the chips together in a large pan over low heat, stirring constantly. Add noodles and stir to coat. Add whatever else you may desire, stirring to coat. Place on wax paper by spoonful and cool until set.

Peanut Butter Glazed Popcorn
2, 2.8-3.0 oz. bags microwave popcorn, popped
1 cup JIF® Creamy Peanut Butter
1 cup light corn syrup
3 tablespoons butter
1/4 teaspoon salt
1 teaspoon vanilla extract
Preheat oven to 300°F. Spray a jelly roll or 13 x 9-inch pan with
non-stick cooking spray.

Place popped popcorn in a very large bowl or Dutch oven. Combine peanut butter, corn syrup, butter and salt in a medium saucepan over medium heat. Heat mixture, stirring constantly, until mixture begins to boil. Remove from heat, add vanilla and stir to combine. Pour warm peanut butter mixture over popcorn, stirring gently to combine. When all popcorn appears evenly coated with peanut butter mixture, turn out onto the prepared jelly roll pan, spreading to distribute evenly. Place pan in preheated oven and bake 20-25 minutes, stirring often.
Remove from oven and allow to cool. May be stored in airtight container for up to one week.


Hi there, I just signed up last week and have loved checking out all the recipes. I have printed out a few to try. I do have a request. I have been searching the internet for several years now trying to find the recipe for Karl Marx Bagels, Tuna Salad. It is so tasty but so very expensive. Any help is appreciated.

Hi Nancy, This is for Sue in the Jan 20th newsletter. She asked about using up extra potato chips. If any are the ridged type like Ruffles try dipping them in chocolate like you would pretzels. They are wonderful. I can't vouch for the thinner ones as to how they would hold up when being dipped , but the others are a great treat.

Hi Nancy, Re: Doris S Ind. 1/24/08 newsletter. We had laminated flooring installed through our entire home several years back. The salesman gave me some cleaner especially for laminate floors. It has to be diluted quite a bit. Then I spray it on the mop pad, go over floor, after it is dry I use a clean dry mop pad and go over floor again to polish it if I want a high gloss to it. This is for Lu in Mn....in today's newsletter (1/24) you asked about a gift for a 50th Anniversary party. We just went to one last weekend and had bought a gift certificate for a local restaurant in their city. What else would they ever need or want after being married for 50 years? LOL...

There was a box on the table at the entrance, covered in white with a large slot in it, so I'm thinking they'll probably be eating out alot. Hope this might help.

Cindy in FL, Older recipes say to scald milk because of the lack of pasteurization. All purchased milk is pasteurized now so you don't have to scald milk. Scalding milk is heating the milk until a skin starts to form on top without boiling.

This is in reply to Dorothy in Texas wanting to know how to remove stains from a solid oak table.

Try spreading a little mayonnaise on the stain, leave it on overnight. Next day, just wipe with a cloth and the oil from the mayo penetrates the wood and removes the stain. Hope it works for you. I have always had luck doing this.

Hello fellow Nancylanders, I have a problem which I hope you can help me with. I purchased the Nordic Ware Sweetheart Rose Muffin Pan and when I opened the box it didn't have the instructions or any recipes. With Valentine's Day coming up I would like to make some for an organization I belong to but need your help. I assume you can use a cake mix but am afraid I'll make a mess so please help.

on Jan. 21,2008 a Peach Cobbler recipe was sent in by Sandy C. The recipe said 1 Tbsp Baking Soda and the directions said baking powder, recipe sounds good but which is it, soda or powder? Appreciate your help.

Apple Cobbler
1 can apple pie filling
1 pkg. quick cinnamon pecan or orange rolls
Melted butter or margarine

Pour apple pie filling into a 9" pie plate. Dip rolls in butter or margarine; arrange over pie filling. Bake in 375 degree oven for 20 to 25 minutes. Spread the frosting from package over hot rolls. Serve warm with cream.

Cheesy Chicken Crescents
1 3/4 cups small cubed cooked chicken
1/2 cup shredded cheddar cheese
10 1/2 ounce can cream of chicken soup
1 cup milk
1 package Pillsbury Crescent Rolls.

Preheat oven to 275 degrees. In a small bowl mix the chicken with 2 tablespoons of the cheese. Separate the crescent rolls into 8 triangles. Place about 2-3 tablespoons of the chicken mix on each triangle and roll up, stating at short end. In medium sauce pan, combine soup with milk and 1/4 cup of the cheese. Heat till cheese melts. Pour half of the this into roasting pan ( I use glass Pyrex) Arrange crescent rolls over the soup and bake for 20- 25 minutes till golden brown. Sprinkle with remaining cheese and return to oven for 5 minutes more. Serve with remaining sauce.

Good Morning Nancy and all the great cooks we have in our group. Just wanted to let you all know we had snow here in South Mississippi last Sat. when we got up. It was really coming down and we got over 2 inches. For us snow is something we hardly ever see. It was beautiful! I still had snow on rooftop and in yard on Monday.

Well now to a TNT recipe I thought everyone would like.

Apricot Chicken
6 chicken breast fillets
1 bottle Italian dressing
1 package Lipton onion soup mix
1 jar apricot preserves
Mix all ingredients together and pour over chicken and bake @ 350° for 1 hour. Serve over white rice. This tastes like Chinese sweet and sour chicken.

For Wendy, Perth, Ontario: When my candles dripped wax all over the top of my wood coffee table, I used a plastic ruler to scrape it off. It worked great and didn't scratch the wood at all. It might be worth a try on the glue.

Nancy, thank you for all the time and effort you put into this newsletter. It is the first thing I look for when I check my email in the morning. I have collected so many recipes from this letter that I will never be able to try them all, but I get so much pleasure going back and reading over them and thinking when I "might" try this one or that one.

Fran was looking for a Bran Muffin recipe. I have been making this for years, and it is also great for those looking for low fat muffins.

Bran muffins low fat
Yield: 12 Servings

1 c Flour (I use all whole wheat but the original recipe called for 1/2 white and 1/2 whole wheat)

2 ts Baking powder
1/2 ts Baking soda
1/2 ts Cinnamon
2 c 100% bran (I use All Bran cereal. I have also used oat bran.)
1-1/4 c Non-fat milk
1/2 C Firmly packed brown sugar
1 Egg equivalent (I use Egg Beaters)
1/2 c Applesauce

½ c dried cranberries or raisins (I have also used fresh fruit, such as blackberries, strawberries and peaches.)

Heat oven to 400 degrees. Mix cereal, milk and sugar in bowl; let stand 5 minutes.

Stir in egg equivalent and applesauce. Add dry ingredients. Spray muffin pan with non-stick spray and fill 2/3 full. Bake in oven 18-20 minutes.

I use 3 or 4 packages of frozen corn. To that, I add one 8-oz package of cream cheese, and 1 stick butter/oleo. Then cook over low heat in the slow cooker, stirring occasionally. The only other thing I add is a little salt and pepper, if desired.

This is for Chrissy from Ga. regarding the cat that does his duty in the bathtub. I have a Male cat that was a stray and when he came to my house he did his #2 duty behind my stove in the dining room a couple of times. I cleaned it real good with a strong cleaner which he did not apparently care for. After that he went to the litter box but I catch him sometimes where he does not bury it. I think it is from being outside and just being able to go anywhere. Be patient and show him where the litterbox is and just scold him very lightly, it may work. Good luck.

Hallo everyone! A belated but heartfelt happy & blessed 2008 to you all & especially you & the pussies, Nancy. I hope 2008 has been treating you all well thus far. I've been enjoying reading all about everyone's cats & just read Chrissy's note regarding her kitten & the problem she's encountered. Chrissy, our oldest cat Nionio who's now 4, wouldn't go to the sand box either. You wouldn't believe why... basically, he just followed what we were doing. He had no idea that he was a cat & not human & insisted on going to the bathroom. The whole cat was IN the toilet, balancing himself & doing whatever WE do, tail dead straight in the air. When he could no longer fit in the toilet he would do #2 next to it. He had been observing us for about a month when we first got him. I'll bet you your kitten has been watching you & is simply imitating the people of the house. When we shooed him from the bathroom he would even do #2 just outside the front door (really emabarrasing)... anywhere that was as close as possible to the jon. You'd be amazed at what these animals pick up. Whoever said animals were stupid had a screw or 2 loose. This stopped almost instantly when we got another kitten & he observed her going to the litter box doing whatever she had to do & he caught on quite quickly. Basically, I really think your problem is that your kitten doesn't know it's a cat, but just another 4 legged member of the family & is simply doing whatever everyone else is doing. All 3 of our cats have an identity problem... they don't think they're 4 legged people... they KNOW it. If I were you, I would quickly pick the kitten up when you realise it's time & place it on the sand box. After a few times, it will catch on. They're very clever little buggers.

I have a friend that is a senior citizen, that is on a very limited income. She asked me if I had a homemade recipe for the Splenda sugar blend. Sugar Blend is the mixture of Splenda and sugar.

It is very expensive for her to buy. She has cooked/baked with regular Splenda but gets better results with the sugar blend. I told her I would check with Nancy and the readers to see if anyone had come up with a homemade version of the Splenda sugar blend.
