Nancy and associate editors, I LOVE THIS PLACE!!! You do wonderful work!!

I have had the best night's sleep the last two nights. I went to Walmart and got a heated mattress cover. It was on sale for 38.00. I keep my apt quite cool, but even with the covers my feet would freeze and I didn't sleep well. No more!! I am so excited. I love it. With the extra money I also got the Vidalia onion chopper at Target because it had both blades. Haven't tried it yet but will tomorrow. I so love the camaradarie in this newsletter.

I'm also looking for a soup recipe I copied from here a few years ago and we loved it. I've made it a few times but have now lost the recipe. The soup had the name Peruvian in it I believe but I've not been able to find it in a search. It is a milk soup, has crab and I think shrimp and potatoes. It was an excellent soup and would love it if someone else copied it and could resend it.

Etta in LA, do you let the West Bend slow cooker -cook all day while you are away from home? Does West Bend say that is ok to do?? Wondered because of the hot plate style cooking..
Seems might be the only option for all day slow cooking since both Rival and Hamilton Beach burn when on Low all day..

Lynette in NY on 1/26 and Sue on 1/27 were both asking about pressure cookers. I have a Presto© 6 quart one that I cook in. I have my big 16 quart I use for canning. I can't say how much it cost as it was a gift. I don't use it real often but have always had good luck. This evening I took a Dutch oven recipe and put it in my pressure cooker. I added an extra half cup water. After the rocker started I cooked it for 50 minutes and let it cool down on it's own. Made some corn tortillas to go with. It was quite tasty and the meat was very tender and the gravy/sauce was good with the tortillas.

Lone Star Pot Roast Recipe
1 boneless beef chuck roast (3-3 1/2 lbs) (I used an eye of round roast)
2 tbsp. cooking oil
1 can (14 1/2 ounces) tomatoes w/ liquid, cut up
1 can (4 ounces) chopped green chilies
2 tbsp. taco seasoning mix
2 tbsp. beef bouillon granules
1 teaspoon sugar
1/4 cup water
3 tbsp. all-purpose flour

In a Dutch oven, brown roast in oil. Combine tomatoes, chilies, taco seasoning, bouillon, and sugar; pour over the roast. Cover and simmer 2-2 1/2 hours or until meat is tender. Remove roast to a platter and keep warm.

For gravy, pour 2 cups pan juices into a saucepan. Combine the cold water and flour; stir until smooth. Add to juices; cook and stir over high heat until thickened and bubbly, about 3 minutes. Slice roast and serve w/ gravy.


The Shop.com link in your assistant's section (Siggy and Ditto) has been such a help to me.  I found so many stores in it that I can no longer find in my area.  It is helpful because I can put in a brand of product and it comes up with several stores so I can choose the lowest price one from the list.  My husband loves the electronics links too.  He enjoys finding what he wants and ordering even if there is a short delay in getting it.  He doesn't have to go back to the store several times to get what he wants. He tells me he would never ever read a recipe newsletter but recently he has printed out several recipes he thought he would like.  (They all came from your newsletters. LOL). The other day his secretary told me he took the pages of the easy 2 ingredient fudge recipe to her.

To Jae, 56, central OK, who is on a low-carb diet with her hubby. I have been low-carbing for about 6 months, and am always on the lookout for good recipes.

This low-carb cheesecake is one that I've had for years and a favorite. When I really need something sweet, this hits the spot and saves me from indulging in high-carb treats.

1 sm pkg sugar-free lemon jello
2 pkgs cream cheese (check labels for lowest carb count)
1 tsp. vanilla
2-3 Tblsp. Splenda (to taste)

Bring 1 c. water to boil, add sugar-free lemon jello and stir until dissolved. Remove 2 pkgs cream cheese from pkgs and place in blender, with vanilla and Splenda. Pour dissolved hot lemon jello over cream cheese and blend until smooth. Pour into dish (one with a cover will keep it from drying out) and chill. (p.s. try a spoonful or two - or three - while it's still warm!) Yummy stuff, and quick! I've tried other flavors of jello, but like the lemon the best.

Hi. I cooked for Woolworth's in the 60's and I made their cheescake OFTEN. It is wonderful...I have made it for many family get togethers.

We live in California and never heard of "Milnots". The reecipe I made called for the 14 oz can of Carnation condensed milk. Here is my recipe, It is SOOOO Good.

Chill a 14 oz can of Carnation condensed milk, the beaters and bowl (12 qt) the night before making cheescake.

The next day: have 8 0z Graham crackers crushed. (I like the real Graham crackers, not the ones purchased crushed) 8 oz is about 1 1/2 packs. Mix together Graham crackers with 4oz melted butter and 4 T. sugar. With hands, press the mixture into a 9x12 pan, RESERVE 1/2 of mixture.

Cream together on Med. speed of mixer 8 0z Granulated sugar

2 T. Vanilla
8 oz. Cream cheese, Scrape once, about 3 minutes until well blended.
Set aside
Dissolve :
4 oz lemon Jello
5 oz boiling water

5 oz cold water and let sit in refrigerator, DO NOT let jell. Pour your Carnation milk into your large 12 qt mixing bowl you have chilled, beat until peaks form, bowl should be about 1/3 full. Add Jello mixture, and Cream cheese mixture, mix thoroughly BUT DO NOT OVERMIX. Pour into Graham cracker crust and sprinkle remaining crumbs. Refrigerate overnight, or until firm. YUMMY....Light and Fluffy.

In the January 13th newsletter, Ruby from Texas wanted Mexican style recipes. Here's one for the slow cooker.

Chicken Stew, Mexican Style
2 lbs. boneless, skinless chicken breasts, cut into 3/4" pieces
4 medium russet potatoes, peeled and diced small
16 oz. fresh salsa (mild or medium)
4 oz. can diced green chilies
1 package taco seasoning mix
8 oz. tomato sauce
1 small can sliced black olives, drained
Juice from 1 lime

Mix all ingredients together in a lightly greased crock pot. Cover and cook on low for 8 to 10 hours. May garnish with green onions, cheese and/or sour cream. Serve with flour tortillas or corn chips.

I hope someone in Nancy Land can help me. I am looking for a clone recipe for Chocolate Jell-O Cook N Serve pudding or pie filling. I've always bought the Sugar Free versions of the Cook n Serve, but it now seems that It's hard to find at the grocery stores & Wal-Mart. I don't know if Jell-O is trying to discontinue making the Cook n Serve versions.

I Look forward to seeing someone post a recipe.

In the 1/27/07 newsletter Sue was asking for information on the Electric Pressure Cooker. I have had several before, but this is by far the best cooking vessel I have had. Mine is: 6 Qt. I hope your hand is getting some rest; don't worry about us - just take care of yourself first.

Today I happened to pass an "International Market" that I didn't know existed (for those of you in or around Oklahoma City, it's at NW 23rd & MacArthur). I went in out of curiosity and was amazed at the prices! They had loads of spices in package, bottles and bags. I got a large bottle of whole nutmeg for about $2, they had ground cardamom (after I had just paid $10 for a small bottle) for $1.99 for 3.5 oz! I got a tiny container of saffron for $1.99!! My spices are well-stocked right now, but I will definitely go back there when I need any of them, because they are so much cheaper. They have other things, too - canned goods, frozen stuff, etc - and a lot of things I could neither pronounce or recognize. Great place to browse; if you have one in your town, I highly recommend a visit.


For Jae and the low carb meatloaf recipe. There is something else you can use as a binder that has zero carbs, and as a crispy coating for fish or chicken. Pork skins, or pork rinds as they are sometimes called. Put them in a food processor and grind them up to the consistency of bread crumbs.

This is my first time to write to you Nancy, but I need some help finding a recipe...I know with all the good cooks on this forum that I have come to the right place.

I need a recipe or suggestions on cooking carrots. I would like one that is not sweet and has a crumb topping of some kind. Today I fixed meals for a couple of families and I needed something else to go on the plate that had some color. . I did fix carrots and they were just O.K., nothing special.

My menu was Cranberry Chicken w/ rice, pea salad, carrots, fruit salad to go with a Cream Cheese Pound Cake and rolls. It was good, just could have been better with a different carrot recipe.
Thanks to all the folks for sharing all their good recipes!!!! I have been cooking for 50 years, and still enjoy trying new recipes.

Thank you, Sue, for sending me the Blender cheesecake that I requested. I plan to make it for my hubby for Valentine’s Day. I thought I could try it with Splenda in the place of the sugar and use a can of sugar free cherry pie filling on top.

I have been trying to convert some of my TNT recipes into no sugar ones. I made my apple crisp using the brown Sugar Twin, but the topping made the whole thing taste bitter. Last night I used Splenda instead (not the brown sugar Splenda, just regular granulated Splenda). I also upped the cinnamon in the apples. It was a big hit with my husband and me. I topped it with some sugar free, low fat ice cream. I thought maybe some of your members would be interested in it, Nancy. The aroma in the house is an added bonus.

Apple Crunch
Butter the bottom and sides of a pie or square pan. (I use my shallow square Corning ware dish)

Topping:
3/4 cup Splenda
1/2 cup flour
3/4 cup quick cooking Oatmeal
1/2 cup margarine, cold (or one stick)

Mix together with fingers until crumbly.

Peel, core and slice 7 Granny Smith apples into juice of lemon. Toss to coat. Drain and put sliced apples into pan.

Mix 1 cup of Splenda and 2 teaspoons of cinnamon together. Pour over sliced apples. Dot with butter and crumble the topping over all.

Bake in a 350° preheated oven for 1 hour. Cool until warm and enjoy with no sugar added, low fat ice cream. (We like the Blue Bunny brand)

Here is a good Spaghetti casserole.

Baked Spaghetti Casserole
1 lb. ground beef
2 T. butter
1 can tomato soup ( undiluted)
2 cans mushrooms (slices)
1/2 lf. shredded sharp cheddar cheese
1/4 c. sliced stuffed olives
1 med. onion minced
1 green pepper chopped
3 stalks celery chopped
salt and pepper to taste
1 (8 oz.) pkg. spaghetti
1 can mushroom soup undiluted

Cook ground beef, onions, pepper, and celery in butter until meat turns gray. Add tomato soup, mushrooms, salt and pepper. Alternate layers of cooked spaghetti, meat sauce and shredded cheese in a 2 1/2 qt. casserole. Top with mushroom soup. cover and bake at 325 for 45 min. place olives on top before serving.

I use to make these all the time for my kids

Seven Layer Cookies
1 stick butter
1 c. graham cracker crumbs
1 (6oz) pkg chocolate chips
1 (6oz) pkg. butterscotch chips
1 small can angel flake coconut
1 can eagle brand condensed milk
1 c. chopped nuts

Melt butter in baking dish. Spread graham crumbs on this, Sprinkle coconut on this, then sprinkle choc. chips, then sprinkle butterscotch chips over this. Pour condensed milk over the layers and sprinkle nuts on top. do not mix any of this. Bake 30 min. 350 . Cut when cool.

HI Nancy,
This is boots in Va. I too had so many problems with my AOL I had to get rid of it. The repairmen told me AOL can sometimes take over your hard drive and there's nothing you can do about it. After having Dell uninstall and delete and do a complete restore on my computer, this took a week to get all set up, AOL is still listed in my programs.!! I had just purchased a new anti-virus software and that's when AOL destroyed everything. I still can't put the software in my computer, AOL continues to try to pop up when I try. I am now using the free AVG and am happy with it.

I agree.  AOL did try and take over my computer.  It is finally off my computer.  AOL is using Mcafee as their program.  To remove it I had to call Mcafee.  The conflict is in one area of the program.  The Norton and the Mcafee are in conflict with spyware section of the program.  When that section is removed Norton has to been uninstalled and reinstalled and it will run.

I have put an older version of AOL on my computer.  I only use AOL to check the links in the newsletter before I send it out each day.

Anyone else wanting an older version without all the whistles and bells (and stuff messing up the computer). This version has no antivirus or security sections in the program.

Another free antivirus program for you computer is ClamWin.


Thought I might as well put my 2 cents worth in on the crock pot issue. I bought one from QVC that is a 6 qt., I believe, and has handles to carry it with. So far it has cooked perfectly. The only thing I don't like about it is that it's very heavy, but having worth it. It wasn't very expensive, either.

For DT in your Jan.27th news letter who wanted to start a home baking business. First let me recommend that she check her state laws about baking and selling out of your home. Here in CA. it is not allowed, I know that some still get by doing it but the penalties are quite stiff. Most states have ordinates of some kind. We converted my husbands shop into a baking kitchen back in the early 60's.

Hope your hand is better Nancy, with all your problems and you still put out this wonderful newsletter for all of us. You are one very special person. how dare people complain

Hello Nancy. Hope this gets thru, my last messages before Christmas are out in cyberspace somewhere, but decided to try again. Hope your hand is better, these old broken bones sure hurt more when it is cold. And also I want to say that the new format is beautiful , tidy, and I like it very much.
This recipe is for Suzie in NW Michigan, requested 1/17. Please forgive the name, I guess back in the 50's we thought this was funny, but it's the only name I know.

Nun's Cake
1 lb. margarine
1 lb. powdered sugar
6 eggs
3 c. sifted flour
12 oz. maraschino cherries, drained and halved

Cream margarine and sugar well, beat eggs in very hard, one at a time.
Mix flour in gradually till all smooth and well blended, then stir cherries in. Now would be the time to add the pecan halves or quarters if you are using them; does sound good.
Pour into a well buttered 10" tube pan and bake at 350 about l hr. to l hr. 10 minutes.
Serve plain, or topped with a vanilla glaze, or with French Vanilla or Butter Pecan ice cream on the side.

Many thanks to Becky from Alaska for the Saut’eed Scallops recipe in the January 24th newsletter. I didn’t have canned mushrooms so I used the fresh ones I had. This was so easy and turned out delicious! I am still looking for hot recipes for Tiger Shrimp, and seafood casserole recipes made in the oven.

I put my oven at 250 degrees, put my pan in, covered, and by suppertime I have a perfectly done roast. You can set your oven as high as 275 degrees and it will still cook like a crock pot.

Ditto wants to thank one of our family members in this newsletter group. She sent some boxes of wonderful cookbooks to me. Ditto thinks the boxes were sent just to him and has taken up residence in one of them. Siggy has taken over ownership of another of the boxes. Siggy has already carried his blanket from the bed and placed in the box for maximum comfort. Both cats are as happy with the boxes as I am with the cookbooks.

Hi, In regards to the "Perfect Pork Chop" recipe in the January 16th newsletter, I tried it and it was absolutely delicious. I used "Progresso Italian Style breadcrumbs." The recipe calls for "seasoned breadcrumbs" but I wasn't sure whether it meant just plain crumbs with salt and pepper. Anyway, they turned out really good.

One other thing, I also have the "
Fuller Brush - Since 1906! " and it is the best thing since popcorn. Actually I have 3 of them now, one for upstairs, one for downstairs, and one for our travel trailer. They can be purchased on-line or at Linen's and Things, and Bed, Bath, and Beyond. If you just "Google" the name you will find it. They are "buy one get one free" but they charge about $28.00 shipping.
