Dear Nancy,
I am looking for a recipe for a simple yeast pastry that my husband's Grandmother (from the Ukraine) used to make. She called the yeast rolls "Kuchens" (probably yiddish) They had some cinnamon/sugar in them and melted in your mouth. She would make a large bowl of yeast dough and then take the dough inhandfuls and roll the cinnamon/sugar in them.

Anyone ever heard of anything like this?

Regarding the above question. I have a recipe from my grandmother. It was called Kuchen or just "Mom's Coffee cake". It is a German recipe. Here it is. Let me know if it worked for you.

"Moms Coffee Cake"
2 packages dry yeast. Dissolve in 1/2 cup of warm water. Add 1 tsp sugar. Let raise a little then add 1 cup of warm milk and 1 cup of warm water to mix. Sift about 3 1/4 cups of flour to this mixture. Beat well til smooth. Let this sponge raise.

Mix the following:
1 cup of sugar
2 tsp of salt
1 tsp vanilla
1/2 tsp of nutmeg
1 stick of margarine
2 unbeaten eggs
some grated lemon rind.

Beat this mixture til creamy then add to sponge mixture. Mix well. Add 4 cups of sifted flour to mixture. Work this well. Let raise until top of bowl, approx. 1 hour.

Handle and knead dough on a floured board. This recipe makes 13 pecan rolls, 3 small or 2 medium to large coffee cakes. Put in greased pans and let raise approx. 45-60 min. Bake at 350 degrees for 1/2 hour or until golden brown. If desired you can add raisins to dough. Streusel or cinnamon sugar can be sprinkled on before baking.


Hi all I take it everybody survived Christmas Day. I hope you all had lots of love to share along with all the fabulous goodies. I went to Cracker Barrel and had a soup they do called Cabbage soup. It was great and I was wondering if anybody had a recipe for one similar. Thanks

Turkey And Stuffing Impossible Pie

2 c Turkey, Cooked And Diced
1/2 t Seasoned salt
1 c Turkey Stuffing
1/4 c Green Onions With Tops, Sliced
1/2 c Green Peas, Cooked
1 c Milk
2 Eggs
1/2 c Bisquick

Heat oven to 400°. Grease a 9" pie plate Arrange turkey in plate; sprinkle with seasoned salt. Separate stuffing into small pieces; arrange on turkey. Top with
onions and peas.

Beat eggs, milk & Bisquick until smooth, 15 seconds in blender on high. Pour Bisquick mixture into plate. Bake until knife inserted in center comes out clean, 30-35 minutes. Cool 5 minutes. Serve with hot turkey gravy.

Lucine's Sweet Potato Casserole
Yield: 8 Servings

2 lb Sweet Potatoes, Peeled And Cut Into Chunks
1/2 c Sugar
1/2 c Milk
1/4 c Butter, Melted
3 lg Eggs, Beaten
2 t Fresh Orange Peel, Grated
1 t Vanilla
1/2 c Brown Sugar
1/3 c Flour
1/4 c Butter
1/2 c Pecans, Chopped
1/2 c Coconut, Optional

[Note: This could be a side, vegetable or dessert and is from [Kansas]
Cover sweet potatoes with water and cook until tender (15 min). Heat oven to 350F. Drain and mash potatoes. Stir in sugar, milk, melted butter, eggs, orange peel and vanilla. Spoon mixture into 9" square dish or 8-4 ounce soufflé dishes. Set aside and prepare topping.

Combine brown sugar and flour in small bowl. Using pastry blender, cut in butter until crumbly. Toss with nuts and coconut and sprinkle over sweet potatoes and bake 40 minutes for large dish and 30 minutes for smaller dishes until brown on top.

Microwave Turkey Tetrazzini

1 (7 oz.) pkg. spaghetti
1/4 c. butter
4 oz. mushrooms (fresh or canned and drained)
1 sm. onion, chopped
1 1/2 tsp. lemon juice
1/3 c. flour
1 tbsp. salt
1/2 tsp. paprika
1/8 tsp. nutmeg
2 c. turkey or chicken broth
1/2 c. half & half
2 c. leftover, cubed turkey
1/2 c. Parmesan cheese
Paprika
Cook spaghetti using directions on packet. Drain well and place in greased 8x12x2 inch dish. In 2-quart casserole, place butter, mushrooms, onion and lemon juice. Microwave at high 2 to 3 minutes, stirring after 1 minute. Stir in flour, salt, paprika and nutmeg until smooth; microwave at high 1 minute. Stir well. Gradually stir in broth. Microwave at high 5 to 6 minutes, stirring after 3 minutes until thickened. Mix in half & half and turkey. Pour over spaghetti. Sprinkle with cheese and paprika. Microwave at high 7 to 9 minutes, rotating dish half turn after 4 minutes until hot. Makes 4 to 6 servings; can be halved.

Turkey Hash Brown Casserole
1 32 oz. pkg. frozen hash brown potatoes with onion, thawed
1/2 c. melted butter
1 tsp. salt
1/2 - 1 tsp. black pepper, or to taste
1/2 tsp. garlic powder
2 c. shredded Monterey Jack cheese
1 1/2 c. chopped cooked turkey
1 1/2 c. sour cream
1, 10 3/4oz. can cream of chicken soup
1/2 c. milk
1 c. Italian bread crumbs

Preheat oven to 350. Coat a 2 quart casserole dish with cooking spray. Use a large bowl to combine hash browns, butter, salt, pepper, and garlic powder. Set aside. In another bowl, combine cheese, turkey, sour cream, soup, and milk. Add turkey mixture to potato mixture. Mix well and pour into the casserole dish. Sprinkle with bread crumbs. BAKE for 35 to 40 minutes or until potatoes are cooked. Serves 8.

Ham and Cabbage
2 cups leftover ham or ham hock with some meat still on bone
4 lg. potatoes, diced & cooked
1 head cabbage, quartered & cooked
2 tbsp. butter
2 tbsp. vegetable oil
Salt & pepper to taste

Melt butter and oil together in large skillet. Add ham, sauté about 5 minutes. Add potatoes and sauté another 5 minutes. Cut up cabbage into bite-size pieces and add to skillet. Salt and pepper to taste. Sauté until browned (about 10 minutes).
Serves 4.

Now I've really gone and done it. help We are having our first family reunion 2 days after Christmas. I purchased one of those chocolate fountain flowing thingey. I think they will all love dipping fruit, pretzels, angel food cake, etc etc in to get the chocolate. But it does not come with any recipes for the chocolate. Does anyone have one of these and what recipe do you use?

It's Christmas Eve and I am up searching for a recipe I saw on the Today Show this morning. I just cannot find it.

It was a big bowl of I think they called it Greek Spaghetti, and at the end( what I caught) they had melted a stick of butter and poured over the sauce and noodles.
Just want I need, something to make it even more fattening... But it sounded different and I wanted to try it, I just can't find it. It was from a book and a lady was showing different recipes. Did anyone happen to catch it, get the recipe or have book information? It was on the later segment with Kathy Lee.

I mostly lurk checking out and saving the recipes to be used at a later date. I am hoping that maybe this winter my grandson and I will make some of those delicious cookies.

Ditto sounds like the furry terrorists we've got around here. Last February our cat had 2 kittens. She and the kittens were supposed to move in June but didn't. In anticipation of the move I stole a feral kitten, the runt of its litter (and believe it or not the niece of the other 2). It has had a positive effect on our older cat - he's becoming more active....and a negative effect - he's picking up the bad habits of the youngsters.

There is no corner of the house that has not been explored. As a result they have fallen off the beams (I broke one of the falls personally); they have gotten locked in closets; locked in the garage and been found exploring cars as they have been loaded or unloaded.

They have helped wrap Christmas presents and will be sharing 2 stockings full of cat toys.

So, Ditto, and Nancy from The 3 Catsketeers and me have a great Christmas.

Nancy, just wanted to let you know that your newsletter makes my day. Especially this past week or two. We normally have a large family gathering at Christmas and Christmas Eve, however, Mother Nature has decided to change that this year. We have 20 inches of snow and the roads are a mess. Northern Oregon and Washington look like back east. They are saying it is the worst snow storm in 30 years. Since the roads are a mess, accidents galore, we have decided to forgo the family get together this year. Since we live on a dead end and there is only one other person living on this road, the county does not plow. We are house bound, but have everything we need. It will certainly be a different Holiday season this year, but our extended family are blessed in all ways that count.

This is for Faye from the 12/23 newsletter wanting a lobster stew recipe. This is the one I have made a few years ago and it was delicious! However, we prefer our lobster steamed or broiled and eaten with drawn butter. Yum!

Lobster Bisque
1 to 2 cups cooked lobster meat, about 1 small lobster
1/3 cup dry sherry
1/4 cup butter
3 tablespoons flour
3 cups milk
1 teaspoon steak sauce
salt and pepper to taste
seasoned salt to taste

In a small bowl, combine lobster and sherry; set aside. In a medium saucepan over low heat, melt butter. Blend in flour and cook, stirring constantly, until smooth and bubbly. Gradually add milk, stirring constantly. Continue cooking and stirring until mixture is thickened; stir in steak sauce and salt, pepper, and seasoned salt to taste. Add lobster and sherry; cover and simmer lobster bisque for 5 to 10 minutes, stirring occasionally. Makes 4 cups of lobster bisque. Diana Rattray @ about.com Chris in NM

Hope this helps you! http://www.chocolatefonduefountains.com/chocolate_recipes.htm However, there is a great recipe for chocolate fondue in the 3/7/2008 newsletter that you can use. I used to make one similar about 35 years ago (can’t find mine anymore) that is great!

Chocolate Fondue
12 ounces semisweet chocolate chips
2 can sweetened condensed milk
2 tablespoons liqueur, such as Tia Maria, Amaretto, etc.
Stir over low heat until chocolate melts. Add liqueur.

Use as dip for fruits such as cherries, strawberries, sliced bananas, cubed pineapple etc. or cubes of cake.

NOTE: vanilla or almond extract may be substituted in smaller amount if liqueur is desired. Chris in NM

In the 12/22/08 newsletter Susie Indy wanted recipes for dessert cheese balls. Here are two that are always big hits.

Sweet Cheese Ball
2 packages of cream cheese, softened
1 small package of vanilla instant pudding
1 cup powdered sugar
1 can of crushed pineapple, well drained
1 cup finely crushed pecans
1/2 package of mini chocolate chips
Graham cracker stix

In a medium bowl, mix together the first four ingredients. Refrigerate overnight.

Mold mixture into a ball shape. Mix the pecans and chocolate chips together. Roll ball in mixture. Serve with graham crackers or cookies for dipping.

Chocolate Mint Cheese Ball
6 oz. mint candy (crushed)
1 pkg. mini chocolate chips
3/4 c. pecans, finely chopped
2 (8 oz.) cream cheese, softened
1/4 c. pecans, finely chopped

Mix cream cheese, mint candy, chocolate chips and 3/4 cups pecans all together. Form in a ball and roll in ¼ cup pecans. Refrigerate until ready to serve.

If you don’t have the mini chocolate chips, you can crush regular size chocolate chips.

Here is another use for old Christmas cards-make placemats. Cut out the front of cards or any part with a Christmas design. Cut a piece of oak tag-heavy cardboard- to placemat size. Arrange the card pieces to completely cover the placemat overlapping if you want -to create a nice look. Cover the placemat with clear Contact. Children can do this with some help and it makes a nice craft project. I made them with my children 35 years ago and we still use these same placemats every Christmas. They are easy to wipe off with a damp cloth since the Contact protects them.

Nancy, I fully support Maxine D. Cascade, Va's suggestion. I know how much you enjoy writing this letter for us, and heaven knows it is the highlight of my day. But taking time off from Thursday to Sunday would be so deserved a little rest for you.

To anyone who craves the newsletter and suffers withdrawal every Thursday, here is what I do: I click on any date for a previous letter, preferably a much older one, and it is amazing how you find your 'old friends' and 'old recipes' while providing your newsletter for the day.

For those looking to re-use Christmas cards, I have some place mats my mother-in-law gave me more than 20 years ago that are made from Christmas card fronts. She and her church group made them and sold them. My mother-in-law is no longer with us, but I can describe the place mats and maybe our crafty members can figure out how to make them if they're interested.

They are made from circles cut from the fronts of Christmas cards. The circles are 3" wide. The placemats are 4 circles high and 7 circles across and each circle overlaps the next slightly. The finished placemats are 10 1/2" x 17". They have a red or green backing and are laminated on front and back and then cut around the edges by about 1/4" so the whole placemat looks scalloped. You can use various colors and pictures or make them in shades of red or green if you can find enough cards of those colors. It probably takes quite a few cards to make the placemats. Each one I have has 28 different circles. I suppose you could get at least 2 circles from each card front, but if you just want the best part of the card, you might only get one from each.

I hope this makes sense to anyone who might want to make them.

We had a very quiet but happy Christmas. Ditto got lots of toys for Christmas. I let him unwrap each of them by himself. I did remove the bows and he enjoyed getting the tissue paper of the packages. One of his favorites was a package with 4 mice in it. He played with the package before it was opened. Ditto loved all the toy mice, toy fish, bouncing balls, treats and one of our family members sent him 2 bird feeders. Another of our members sent money to buy bird seed.

Santa brought me a hot water gadget that hooks up under the sink. It always has almost boiling hot water ready right out of it's spout. Karen, Tom and Arval came over Christmas Eve day to install it. Now I can get a cup of hot tea or hot chocolate instantly. I love it. Several of our members sent Christmas gifts not only to Ditto but to me as well. Thank you for the recipe books, Christmas cards and other gifts that were sent.

Debbie in Lubbock is a lot of fun and is always making me laugh. One day when I was taking her home I didn't know the way. Her instructions were to turn left at the night light. The next light was the fire station on 50th Street. I told her I always wanted to drive through a fire station. We laughed and laughed. For Christmas Debbie in Lubbock got me several cat calendars and my very own toy fire truck.

Hi Nancy, Hope Ditto is resting up so he can watch for the "kitty" Santa. This is for the 'Landers" baking in foil pans. I spray the mini loaf pans with whatever spray. Then use sugar instead of flour on the pans. This gives the loaf a slight crunchy crust when baked. I'm sure Splenda could be used instead of sugar. I have changed from Splenda to Wal-Mart brand. (Altern). It seems to be finer, I don't use as much of it as I did the Splenda in recipes. Also, is a LOT cheaper.

For everyone who cannot find canned lemon pie filling in their stores, take heart! This is the lemon meringue pie recipe I use when I don’t have or cannot find the lemon pie filling in the stores. It really isn’t difficult and goes together quickly.

Lemon Meringue Pie
Makes 6 servings

1-1/2 cups sugar
1/4 cup plus 2 tablespoons cornstarch
1/4 teaspoon salt
1/2 cup cold water
1/2 cup fresh squeezed lemon juice
3 egg yolks, well beaten
2 tablespoons butter or margarine
1-1/2 cups boiling water
Grated peel of 1/2 Sunkist lemon
2 to 3 drops yellow food coloring (optional)
1 (9-inch) baked pie crust
Three-Egg Meringue (below)

In a saucepan, thoroughly combine the sugar, cornstarch
and salt. Gradually blend in the cold water and lemon juice.
Stir in the egg yolks. Add the butter and boiling water.

Bring to a boil over medium-high heat, stirring constantly.
Reduce heat to medium and boil for 1 minute. Remove from
heat and stir in the lemon peel and food coloring.

Pour into baked pie crust. Top with Three-Egg Meringue,
sealing well at edges. Bake at 350 F for 12 to 15 minutes.
Cool for 2 hours before serving.

Three-Egg Meringue
3 egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar

In a bowl, with an electric mixer, beat the egg whites with the

Susie Indy is looking for a recipe for Dessert Cheese Balls and wants to know what to serve with them.

Dessert Cheese Ball
2, 8 oz., pkgs. cream cheese
1, 3 oz., pkg. vanilla instant pudding
1 to 2 tablespoon cherry juice
1, 8 oz., can crushed pineapple, drained
1/4 to 1/2 cup coconut

Mix ingredients. Roll into a ball and chill overnight. Serve with graham crackers.
Instead of vanilla pudding you could use Cool Whip and if you did I would start out with just about ½ of a 8 oz. carton of it. If you felt that you needed more than I would just add 1 to 2 tablespoon at a time. 9/25/2006 newsletter posted by Susie Indy hehehe This does look very good Susie!

Recycled Card Program History
Over thirty years ago, wishing to show our donors appreciation for making St. Jude’s Ranch for Children possible, the idea was conceived for turning the previous year’s Christmas cards into "new" cards for the coming season. The recipients were so delighted with their unique "thank you," they requested the children sell them the special cards. And so, the
St. Jude’s Ranch Recycled Card Program was born.

Since then, the Program expanded to include all occasion greeting cards…just about anything that starts with a used greeting card front. People from all over the world have sent us their used card fronts!

The children participate in making the new recycled cards by removing the front and attaching a new back made with recycled paper. The new card is a beautiful, “green” card made by the children and volunteers. The benefits are two-fold: customers receive "green" holiday cards for use and the children receive payment for their work and learn the benefits and importance of "going green".

Accepting used, all-occasion greeting cards from November 15, 2008 thru February 28, 2009. Please send your used card fronts that can be attractively trimmed to fit our 5"X7" card backs, and that do not have writing on the back of the card, to:

Dear Nancy and members:
Thank you so much for the emails regarding the loss of my Mother-in-law last week. She is spending Christmas in heaven and we rejoice in that. We are sad during this time and yet happy for her to be out of pain.

I enjoy this newsletter so much and thank you for your hard work and that of the moderators and members that submit the wonderful recipes. This is one of the first emails that I read every morning!

To those members that have received so much snow and ice - I hope you stay warm and safe during this time. I wish we had received a little down south in North Carolina for a white Christmas. Love to you all.

Here is another Pumpkin Crescent Roll recipe for Linda Kansas, 12/19/08 newsletter, to try. This is a roll that you would serve with dinner; not a dessert roll.

Pumpkin Crescent Rolls
1 pkg. active dry yeast
1 c. warm water (105 to 115 degrees)
1 c. canned pumpkin
1/2 c. shortening
1/3 c. sugar
1 egg
1 1/2 tsp. salt
5 to 6 c. all purpose flour
butter, softened

Dissolve yeast in warm water in large bowl. Stir in pumpkin, shortening, sugar, egg, salt and 3 cups of the flour. Beat until smooth. Stir in enough remaining flour to make dough easy to handle.

Turn dough onto lightly floured surface; knead until smooth and elastic, about 5 minutes. Place in greased bowl; turn greased side up. Cover; let rise in warm place until double, about 1 hour. (Dough is ready if indentation remains when touched).

Punch down dough; divide into 3 equal parts. Roll each part into 12 inch circle on floured surface. Spread with butter; cut into 12 wedges. Roll up tightly, beginning at rounded edges. Place rolls with points underneath on greased cookie sheet; curve slightly. Let rise until double, 30 to 45 minutes. Heat oven to 400 degrees. Bake until golden brown, 15 to 20 minutes. 3 dozen rolls.

Sweet Potato Crescents: substitute 1 cup lukewarm mashed sweet potatoes for the canned pumpkin.
