Mandarin Orange Mold Salad
2 (11 oz) cans Mandarin oranges
2 (3 oz) packages orange jello
1 pint orange sherbet
1 (13 oz) can crushed pineapple, drained
Drain 1 can Mandarin oranges and keep syrup. Add enough water to make 1
1/2 cup liquid. Pour into saucepan; add gelatin and bring to a boil.
Remove from fire and stir until dissolved. Add sherbet and stir until
melted. Chill to consistency of egg white. Fold in orange segments from
one can and pineapple. Pour into 2 quart mold. Chill several hours. Use
second can of oranges to garnish salad plate. Serves 8.

CindyO-Theys are Chili Fritos in LA. DH and I tweaked it using Corn chips.
I will post the recipe if anyone is interested. Sue, the Chili Dog
Casserole reminded me of a dish I used to make using chicken tenders-I can
post it if anyone is interested. Sue/IL who wanted bread bowl
fillers-these are some of the best. I never have leftovers, and can' tell
you how many times I have given the recipes, so I just make copies of them
now-lol! Enjoy and let me know how you like them.
Spinach Bacon Bowl
10 oz frozen spinach-thaw & squeezed well
1 lb bacon-cook crisp & chop coarsely or 1 jar Hormel bacon bits
1 envelope Lipton veggie soup mix (you only need 3 T)
4 oz pimento-chopped & drained
8 oz sharp cheddar-shredded
3 green onions-chopped
1 c mayo
8 oz sour cream
1 T cider vinegar
salt & pepper to taste
1 lb round Italian or Sourdough bread loaf (I have also used
pumpernickel-yum!)
Put squeezed spinach into food processor and 3 T soup mix (make sure to
get some of all the ingredients in the pack). Add remaining ingredients to
spinach and pulse smooth. Cover and chill 2 hours. While filling chills,
prepare bread bowl. Cut about 1" slice across top of bread horizontally
(this is your "lid"). Preheat oven 375*. Cut around edges of bread to
remove center with a serrated knife, leaving 1/4" of shell wall intact,
including the bottom of the bowl. Remove center and cube into 1" pieces.
Put bowl on a baking sheet to one side, and lay cubes in single layer on
the other side of sheet. Spray cubes with olive oil spray (or butter
spray). Brush the bowl inside and out lightly with butter and put in oven
for 10 minutes or just until turning golden-don't cook it, just crust up
the bread. Remove-cool, and just before serving, add dip. Serve with
toasted bread cubes, chips, or crackers.
**If transporting, fill shell after arriving, or fill and wrap tight with
foil.
Buffalo Bowl-my creation for my DH and his family-they love wings,
so Viola!
1 lb Sourdough bread
2 roasted or grilled chicken breasts
16 oz ranch dressing
6 oz hot sauce or to taste
2-8 oz cream cheese-softened
1 c diced celery-fine
2 green onions-chopped
16 oz Monterey Jack-shredded
Tortilla chips
Preheat oven 375*. Cut 1" off top of bread horizontally and scoop out
inside leaving 1/4" shell and bottom on bread. Put shell on baking dish
and add cubed up center. Brush shell inside and out with butter-mist cubes
with butter spray or Pam olive oil. Bake for about 10 minutes or just
beginning to turn golden. Remove. Meanwhile, put 1 block of cream cheese
in saucepot and stir over med/low until melted. Add other block when first
is melted and continue stirring to melt it. Add dressing and hot sauce to
pot and mix well. Remove pot and add chicken, onions, celery, and 3/4 of
cheese. Pour in hot shell and sprinkle cheese on top. Return to oven for
about 4 min or until cheese melts. Remove and serve warm with cubes or
chips.

My Own Hash Brown Casserole
1 bag of frozen shredded hash brown potatoes
1 package of precooked bacon, microwave prepared and crumbled
(8-oz) sour cream
1/3-cup Ranch Salad Dressing
(8-oz) shredded mild cheddar cheese
1 bunch of green onions, chopped
2 sticks margarine, melted
Tony’s Seasoning (to taste)
Melt margarine. Mix all ingredients except cheese for top. Add salt,
pepper and Tony’s seasoning to taste. Top with cheese and bake at 350° for
45 minutes. Uncover and cook 5 more minutes.

Just a note to thank you for this wonderful newsletter. I joined Soldiers
Angels nearly two months ago after reading about it on this site. They
tell you not to expect a letter in return, so I was really excited to get
one from "my guy in Iraq." He said they would love to have unsweetened
kool-aid and ice pops, as it gets really hot during the day. I write or
send a card weekly and send a package about once a month -- packages are a
flat fee for any weight and letters are just $.41 regular mail. It's such
a small thing we can do that means so much to our soldiers so far away.
Thank you Nancy, and others, who wrote about this organization last year
on your site -- it really inspired me!
As others have said, I too will have to live to be 300 to try all the
great recipes I've printed from this site. Everything I've made so far has
been really exceptional; my family has asked for a number of the recipes!

Cheese Biscuits
(Recipe from my on-line cooking buddy - Eileen)
1 tube of jumbo buttermilk biscuits
1/4-cup Italian Dressing (I use Wishbone House)
1/3-cup grated Parmesan Cheese
1/2-cup freshly shredded Mozzarella Cheese
Separate biscuits; dip the top of each in salad dressing, then in Parmesan
cheese. Place cheese side up on an ungreased baking sheet.

Regarding the Crockpot corn. I make this in the microwave. I put
frozen corn in and add cream cheese and butter. Microwave for about 3 min
and stir. Keep microwaving until it is smooth and corn is thawed and hot.

I use a product called "Hope's Counter Top Polish which I get at Bed Bath
& Beyond, or Linens N Things. It's in a white plastic bottle about the
size of a hand lotion bottle. And "shines and Protects, WAS-FREE-No
Build-up". Don't remember what it costs, but it does last quite a while.
Clean the counter top first, then apply the polish.
Also, about using a vinegar-water cleaning solution: It really works well
when you use the micro fiber cloths.

2 c. flour

1/2 tsp. nutmeg
1-1/2 c. sugar

1 c. blackberries
3/4 c. buttermilk

ICING:
1 stick butter
1 box powdered sugar
Berry juice
Dash of salt
Cream shortening and sugar until fluffy. Add eggs one at a time, add
drained berries. Alternate the buttermilk and dry ingredients. Bake in two

1 stick butter, melted

Cinnamon (optional)

together. Spray baking dish with Pam. Put fruit in bottom of baking dish.

Hi Nancy and gang of 2. you were talking of "Frito pies". We used
to live in San Antonio and that always had those at little league ball
games along with dill pickles. In fact this past summer we had a family
reunion and one of our meals was "Frito pies' and was a big hit. We could
not find little bags of Fritos, so we used bowls for the Fritos, used
canned chili, and had toppings of sour cream, shredded cheese chopped
onion, tomatoes and of course can't forget Texas's favorite green veggie,
Jalapeños chopped. So good.

dogs helped a lot. Here are the ones my children called "winners."

Corn Dogs
1 c. self rising flour
1 c. self rising corn meal
2 tsp. sugar
1 egg, slightly beaten
2 tbsp. oil
1 lb. wieners
1 c. milk
Combine first 3 ingredients (cornmeal, flour and sugar). Sift together.
Beat egg slightly; add it and milk in mixture and stir. Add melted fat for
deep fat frying. Dip wieners in mixture, holding with Kitchen fork. Drain
extra batter in bowl. Fry in deep fat until golden brown or for about 3
minutes. Drain on paper towel. Serve piping hot with catsup or mustard.
Barbecue Hot Dogs
16 oz. pkg. wieners
3/4 c. catsup
3/4 c. Dr. Pepper
Mix catsup and Dr. Pepper in a skillet, slice wieners into bite size
pieces and drop in skillet. Warm slowly until mixture thickens.
Pigs in a Blanket
5 wieners (hot dogs)
1 pkg. buttermilk biscuits
American cheese
Bacon
Slit wieners in center and add a piece of cheese. Wrap dough-made into a
square-with your fingers around the wiener. Wrap bacon spirally around
this. Broil until the bacon is crisp and dough is brown.
Hot Dog Casserole
1 lg. pkg. hash brown potatoes
1 pkg. wieners
3 eggs, beaten
1/2 c. cheddar cheese
In large heavy skillet, cook potatoes 8-10 minutes. Turn once. Place
wieners on top. Cover with beaten eggs, cook another 10 minutes. Add
cheese, cook until cheese melts.
Southwestern Hot Dogs
1 pkg. wieners
Longhorn cheese strips
1 pkg. corn tortillas
1 can Sloppy Joe mix
1 sm. can enchilada sauce
Onion, diced
Grated cheese
Roll wiener with cheese strip in corn tortillas. Place folded side down in
baking dish. Sprinkle with onion, mix Sloppy Joe and enchilada sauce and
pour over tortilla rolls and top with grated cheese. Bake at 350 degrees
for 30 minutes.
Hot Dog Casserole
1 lb. wieners
16 oz. can pork-n-beans
1/2 c. ketchup
1/2 c. chopped onions (optional)
3 tbsp. brown sugar
7 1/2 oz. can refrigerated biscuits
4 oz. pkg. shredded Cheddar cheese
Heat oven to 400 degrees. In medium saucepan combine 1 pound sliced
wieners, 1 (16 ounce) can pork-n-beans, 1/2 cup ketchup, 1/2 cup chopped
onion (optional) and 3 tablespoons brown sugar. Bring to a boil and simmer
5 minutes. Spoon hot bean mixture into ungreased 8 or 9 inch square pan.
Separate 1 can biscuit dough into 10 biscuits; arrange over bean mixture.
Sprinkle with 1 cup (4 ounce) shredded Cheddar cheese. Bake at 400 degrees
for 20 to 25 minutes or until biscuits are golden brown and no longer
doughy. Makes 6 servings.
Chinese Hot Dog Casserole
1 lb. wieners, cut up
1 small can evaporated Pet milk
1 can cream of chicken soup
1 can cream of celery soup
1 lg. can Chinese noodles
Mix all ingredients together. Bake in buttered casserole dish 25 minutes
at 350 degrees.
Makes 4 servings.
Hot Dog and Potato Chip Casserole
1 can cream style corn
1 can cream of mushroom soup
1/4 c. onion, chopped
8 wieners
1 c. crushed potato chips
Mix corn, soup and onion. Cut wieners into 1/2 inch pieces and put in corn
mixture. Pour into greased casserole dish and top with crushed chips. Bake
uncovered in 350 degree oven for 30 minutes.
Ranch Beans and Hot Dog Casserole
3 c. crushed Fritos
1 sm. chopped onion
1 c. grated cheese
1 (9 oz.) can Ranch style beans
1 can tomato soup
4 dashes Tabasco sauce
1 tbsp. chili powder
1/2 lb. wieners
Place 1/2 of Fritos in bottom of casserole. Put chopped wieners on top of
Fritos. Then beans, soup, chili powder, Tabasco and onions. Put rest of
Fritos on. Sprinkle cheese on top. Bake at 350 degrees for about 20-30
minutes.
Pudding Shots
8oz creamy Cool Whip
1 cup milk 2% or higher
1/4 cup Vanilla Vodka
Mix above in blender.
Add:
1 small package instant pudding
1/2 cup flavored alcohol
Blend again.
Pour into 1 ounce plastic cups. Cover with caps. Freeze on a cookie sheet
then transfer to a ziplock bag.
Creme de menthe and instant vanilla pudding is very good.
TGI Friday's Orange Creme Blender and instant vanilla pudding is
wonderful.
TGI makes a Raspberry that is good also.
Use your imagination. Don't use plain Schnapps. That wasn't any good in
the recipe.

Sandy Miller was discussing the freezing of milk and wondered about
freezing sour cream and cottage cheese. I don't think you can freeze
those last two but here is a hint I learned somewhere and it really works.
After you open sour cream, cottage cheese or yogurt, replace the lid and
store the carton upside down in the refrigerator until you need it again.
I have done this for a long time and my stuff stays good to the very
bottom of the carton. You might give this a try.

This is for Cookie in Texas who mentioned cleaning counter tops with
GelGloss (1/27) A few months ago several landers told how it cleaned
showers and tubs. I have tried in vain to find it around my small town and
the next nearest larger town, but can't find it in Lowes or Home Depot.
Only place I found was online from Ace Hardware and it's only available
online or by catalog. I'd really love to try it on our fiberglass shower.
Even looked in the local marine supply stores and they don't carry it
either. Any suggestions as to where I might find it? Thanks in advance.

For Kathy in Fl who asked for smoothie recipes in the January 27th
newsletter. I put a couple of heaping tablespoons of lowfat yogurt (plain
or flavored) in a blender and add about a cup of skim milk. I add a
tablespoon of fiber (e.g., metamuci - to help with cholesterol) and a
tablespoon of spirulina. To this I add a couple of handfuls of frozen
mixed fruit. I also add a banana if it is getting very ripe. I mix this
thoroughly in the blender.

Creamy Lowfat Broccoli Soup
2 medium carrots, peeled, cut into 1-inch chunks
1 medium onion, cut into chunks
2 celery stalks, cut into 1-inch pieces
3 Tbsp. canola oil
2 cans (14-1/2 oz. each) low fat chicken broth
2 cups water
2 small bunches fresh broccoli, trimmed, cut into 3-inch lengths (about
4-1/2 cups)
1/2 cup Instant Rice, uncooked
2 cups skim milk, divided
1/4 cup 100% Grated Parmesan Cheese
COOK and stir carrots, onions and celery in hot oil in large saucepan on
medium-high heat 3 min. Add chicken broth and water; stir. Bring to boil.
Stir in broccoli and rice. Reduce heat to medium-low; simmer 10 to 15 min.
or until vegetables are tender, stirring frequently.
USING a slotted spoon, place half of the vegetables and 1 cup of the milk
into blender or food processor; cover. Blend until pureed. Set aside.

You can also use frozen broccoli, or substitute fresh, canned or frozen
spinach for the broccoli. Add cheese; cook until heated through, stirring
occasionally.
Low Fat Cranberry Orange Muffins
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
1 large egg, lightly beaten
1/4 cup canola oil
2/3 cup orange juice
2 tsp grated orange zest
2 cups fresh cranberries, chopped
Preheat oven to 400 degrees. Line muffin pan with paper muffin cups. In a
large bowl, combine flour, baking powder, baking soda, salt and sugar.
Combine with a whisk. In a small bowl, add beaten egg, oil, orange juice
and zest.
Stir well. Make a well in the flour mixture and add wet ingredients. Stir
until just moist, being careful not to over mix. Fold in chopped
cranberries. Spoon batter into prepared muffin pan. Bake for 16-18
minutes, until muffins are golden and spring back when touched.

Low Fat Raspberry Orange Muffins
substitute blueberries for raspberries and lemon for orange if you like.
1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup sugar
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 tbsp canola oil
1/4 cup orange juice
zest of 1 medium orange
1 tsp vanilla extract
1 (8-ounce) carton fat-free vanilla yogurt
1 egg, lightly beaten
1 (6-ounce) pack fresh raspberries
Preheat the oven to 400 degrees. Combine flour, sugar, baking soda, baking
powder and salt in a large bowl. Stir with a whisk. In a separate bowl,
combine oil, orange juice and zest, vanilla, yogurt and egg.
Make a well in the center of the dry ingredients and add liquid
ingredients. Stir until just moist. Add raspberries and fold in gently.
Spoon batter into a 12-cup muffin pan lined with paper cups. Bake for 20
minutes or until a toothpick inserted in the middle comes out clean.
