A while back you published a website that rated products. I believe it came from Lubbock, Texas. Maybe a television station.. I used it quite a bit, and would like to use it again, but it has disappeared. Thanks for your help.

DM in NY is looking for a Sock It To Me Cake recently found at an Albertson's in CA. I have not had this particular cake, but I do have an old Peg Bracken (a columnist in the newspaper and author) recipe for Soci it to Me Cake. I am wondering if this would do? I dug it out of my files, and here it is. A nice moist cake, lots of flavor and keeps well

Soccitumi Cake
(Peg Bracken, sometime in the 70's I think)
a yellow cake mix, your favorite brand, two layer size
1/2 cup sugar
3/4 cup melted butter
4 eggs, added one at a time, beating after each
1 cup sour cream

Mix well, beat for a total of five minutes. Pour into greased and floured Bundt or angel pan. Bake at 350 for one hour. Cool and turn out onto plate. No frosting needed, but you can add a little thin powdered sugar glaze if you wish

Maybe this is what you are looking for

Hi Nancy and Furballs
Hope you are doing fine.
I have a question-I am having a problem copying a recipe. I have never had this problem before.

I highlight the recipe I want-then hit selection on my print screen-like always-it prints out the recipe and then has solid brown color the rest of the sheet of paper. Awful hard on color refills-they are expensive enough. Have any of you girls had this problem??

Hi Anne
When making whipped cream the bowl, beaters and heavy cream should be very cold. I put them all in the refrigerater to cool them. The egg whites should be room temperature as well as the bowl and beaters.
Good luck, Loretta in Va.

Hi Everyone: I have a request my dbf brought pabalno chilies that he thought were bell peppers anyone have any TNT recipes using these chilies. Thank You. Jeanie sunny California

I would like some good recipes for Valentine's Day. I know someone out there has some. Thanks in advance.

Is it possible to freeze like a qt. of milk? Does it matter if it is skim, 1 or 2%, or whole milk?? When thawed, does it still have the good original taste?? In winter, it would nice to have some in the freezer, when you run out.
Thanks, Sue

Cheese Steak Crescent Braid
4 frozen thinly sliced sandwich steaks cut crosswise into 1/2" strips
2 tablespoons butter
1 medium onion chopped (1/2 cup)
1 large green bell pepper cut into strips (1 1/2 cups)
1/4 teaspoon salt
1/8 teaspoon pepper
2 (8 oz) cans Pillsbury refrigerated crescent dinner rolls
4 ounces (1 c) shredded Mozzarella Cheese
1 egg beaten (if desired)
Heat oven to 350 degrees. In large skillet, over medium high heat,
stir fry steaks in butter until no longer pink; remove from skillet and reserve.

Add onions and green pepper; cook until crisp tender about 5 minutes. Return cooked steak to skillet and stir in salt and pepper.

Unroll 1 can dough into 2 long rectangles on ungreased cookie sheet. Overlap long sides to form 13 X 7 inch rectangle; firmly press perforations and edges to seal.

Wow! Just wanted to say thanks to all who responded to my "breakfast plea". I'm going to make a batch of breakfast burritos and sandwiches tonight. Anyone ever just keep them refrigerated for a few days, instead of freezing them? Many thanks to Mimi, Barbara, Billie, Dawn, Athena, McA, Becky, and Leasa for all the recipes and ideas. I'll give them all a try soon. Since I was going to freeze them anyway, I bought bagels and croissants on the day old bread rack today for 99 cents a package. So, they'll be fairly cheap too! Lol...I do love a bargain.
Make it a great day!
Lisa (East Texas)

What I want to know is it ok to freeze milk such as half and half, whipping cream etc? Also, I froze puff pastry, and need to know how to thaw it out. I know it breaks easily, and that you should put paper towels or dampen cloth over the pastry to keep it from drying out, but how do I unroll it after freezing to keep it from breaking apart?

Here is an easy recipe for Abbey in Nova Scotia to make with her kids. Put small pretzel rings on a cookie sheet. Have the kids unwrap enough Hershey kisses to place one on each pretzel. Put them in the oven at 300º for about 2 minutes. Take the pretzels out of the oven and immediately push 1 M&M candy down on the Kiss mashing it into the pretzel. Let set til firm. Yummy.
Barb/De

Abbey, here is a Snow Ice Cream recipe I used for years with my kids ... they loved it. If you are concerned about using raw eggs, you can use the pasteurized ones...

Mom’s Snow Ice Cream
2 eggs
3/4 cup sugar
1 cup evaporated milk
1 tsp. Vanilla

Beat eggs, add milk, sugar and vanilla and beat again. Go and gather a Dutch oven size pot of freshly fallen snow and pour the above mixture over it. Quickly combine until all mixed and the consistency of ice cream.
NOTE: Must be eaten right away … does not freeze well.
Gerry in MD

To Abbey from Nova Scotia - Jan.16- This is a fun easy good snack that the kids can help make.

Peanut Butter Crunchies
1 cup sugar
1 cup light Karo syrup
1 1/2 cups peanut butter
5 cups cereal - Rice Krispies

Bring sugar and syrup to a boil. Remove from heat and add peanut butter then stir that in before adding the cereal. Mix well.
Drop from teaspoon onto wax paper. Let cool and enjoy.
Susan-NC - - We got to enjoy snow today!! :)

Barb, did you freeze the Egg McMoms or just refrigerate them?

Hi Nancy,
I am wondering if you have finished the November 2007 alphabetical list? I was trying to find a "Pound Cake" I submitted and I found it in the 11/28/07 newsletter, but not the alphabetical list. If you are not through, I apologize for bothering you.

Thanks for making so many people happy!

In the Jan. 16 n/l DM was asking where to buy a Sock it to me ring cake. DM if you have a Wal-Mart you might try there or even ask them to bake you one. I don't know if New York has Wal-Mart. I kind of don't think so. Another way is to make it yourself. Just put the cake in a ring(bundt) pan, add walnuts to the mix and bake. If you choose to make it, a recipe is below. Barb in OKC

Sock It To Me Cake
1 butter recipe cake mix, 18-1/4 oz box (I use Duncan Hines)
1 cup dairy sour cream (8-oz tub)
1/2 cup Crisco Oil
1/4 cup granulated sugar
1/4 cup water
4 eggs
Filling:
1 cup chopped pecans (DM this is where you would use walnuts)
2 Tablespoons brown sugar
2 teaspoons ground cinnamon

Preheat oven to 375°. Grease and flour 10-inch tube pan (or bundt pan), set aside. In a large bowl blend cake mix, sour cream, oil, granulated sugar, water and eggs. Beat at high speed with mixer for 2 minutes. Pour 2/3 of the batter in pan. Combine filling ingredients and sprinkle over batter in pan. Spread remaining batter evenly over batter in pan. Bake for 45-55 minutes, or until cake springs back when touched lightly. Cool right side up for about 25 minutes, then remove from pan. Glaze: blend 1 cup confectioners' sugar and 2 TB. milk. Drizzle over cake.
Barb in OKC

For Anne in the Jan 16 issue regarding whipped cream and meringue. Yes!! Your bowl and beaters should be chilled for at least 30 minutes before using. You should also make sure that the bowl and beaters are very clean, just one speck of oil and you're meringue will not beat up correctly.

Hi Nancy,
Love your newsletter. You are really outdoing yourself with the past few newsletters. I will have to live to be 300 years old to try all of the recipes that I have copied from your site.

I am having a problem accessing your Ground Beef recipes. The site will let me access the first page but not any of the other 7 pages. What am I doing wrong? I click on the page number but I can only access the first page.

Thanks for your help in this matter. Stay happy and healthy and pat the kitties for me.

HI All :)
My daughter wants to make Valentine treats for her class.
I thought it would be neat to make cupcake treats, made with Ice Cream Cones.

My mom made these for my classes when I was little...
Does anyone have the recipe??
You make regular cupcakes, but instead of a cupcake liner, use ice cream cones.
Thank you so much :)

Nancy, this message is for Suzie in NW Michigan in the Jan 15 newsletter regarding low sodium, low carb, etc. recipes. I'm a low carb eater and I have many, many recipes that are low carb, don't know about the sodium, will have to look at that. How can I contact her with this information? I don't want to post them in the newsletter, first of all would be too many, and also I don't know how many other people would be interested!
Thanks! Patricia Griffith in KY

Hello Nancy & Gang,
Onalee-sorry, I missed your info in the 1/14 letter, but I think you are right, this is what I am looking for! Tootie and I have had bronchitis and strep throat for the past week, so I am not the brightest bulb in the pack these days, but slowly feeling better.

An update to the Tater Hash recipe I sent in on 1/15-I reheated the leftovers in a skillet, added a little sharp cheddar and some sour cream and it was heavenly-it was like a roasted baked potato! I will make extras from now on to have some leftovers!

Lisa E Texas-I also thought of the treats I send to the DH job for all of his drivers-might be something you're interested in. I usually package up easy treats that they can get out of treat bags and eat while driving their routes. These are some of their favorites. And while on that subject, to the lady who posted the Holstein cookie recipe a while back-MAJOR hit with his drivers and I have requests to make them again-thanks.
Pigs in a Blanket-I have recipes for these if you like.
Sausage & Cheese Balls, Ham & Egg Pie, Sausage Cheddar Pie

1 bag jumbo marshmallows
6 oz white chocolate-melted (use chips or whatever you have)
1 bag of sweet coconut-toasted
Toast coconut on a baking sheet-don't burn. Melt chocolate in microwave or in double boiler. Insert toothpicks in marshmallows and dip in chocolate. Roll in coconut and set on wax paper until all are done.

1 t strawberry extract (you can use other flavorings as well)
12 oz plain M&Ms
2-3" butterfly cookie cutter (or any shape this size will work)
Soften cheese in the microwave 80% for 1 minute. Add cookie mix, 1/4 c flour, egg, and extract, mixing well with wooden spoon until ball forms. Turn out on board that has been floured with 1 t flour and divide dough in half. Roll out one half, turning dough as needed to prevent sticking. Roll out 1/4" thick Dip butterfly cookie cutter in flour and working from center of dough out, cut shapes as close together as possible and lay on an un greased cookie sheet 2" apart. Repeat with remaining half. Decorate as desired with candy and chill cookies for 15 minutes to prevent spreading. Bake at temperature listed on cookie package for 10-12 minutes. Cool 1 min on pan, remove to racks to cool.

In the January 15th newsletter, someone asked for hot breakfast ideas for her husband. I used to make this low carb recipe for my hubby. He would take a slice and reheat it in the microwave just before going out the door. (He ate it like a piece of pie)

Mexican Quiche
8 oz. shredded cheddar cheese
4 oz. can chopped green chilies
1/2 milk
3 eggs
1/8 tsp. cumin
1/8 tsp. chili powder
dash of salt and pepper

Grease a large glass pie plate. Beat the eggs with the milk and seasonings. Put the cheese in the bottom of the pie plate, sprinkle chilies evenly over the cheese. (Add meat here if adding any leftovers, I've added a little chopped green pepper here, also) Slowly pour the egg mixture evenly over the cheese. Bake at 350* for 30-35 minutes until knife inserted in the center comes out clean.
I've added a cup of chopped leftover meat, which was good, too (chicken, ground beef, ham).

I made a hash brown casserole for a group pot luck and brought about half of it home. (It was good, but there was too much food.) I added a can of evaporated milk to it and made the best potato soup. I sprinkled real bacon bits on the top and my hubby thought I'd slaved all day making the soup!

In that same newsletter, there was a reply from Victor in Chandler. I was wondering where Chandler is! I grew up in Chandler, OK! Just curious,
Jae in Central Oklahoma (still close to home!)

For Diane in Reno requesting the Vegetable Soup recipe in December's newsletter. It is in the 12/04/07 newsletter and is Really Easy Vegetable Soup submitted by sunnywatkinsgirl. I've made it several times and we think it's wonderful.

For Mary D

Chicken Crescent Wreath
2 tubes (8 oz each) crescent rolls
1 cup shredded co-jack cheese
? cup cream of chicken soup
½ cup chopped broccoli
½ cup sweet red pepper
1 can (5 oz) white chicken or ¾ cup cooked chicken
2 T chopped onion

Arrange crescent rolls on a 12 inch lightly greased pizza pan, forming a ring with the pointed ends facing the outer edge of the pan and wide ends overlapping. Combine the remaining ingredients; spoon over wide ends of rolls. Fold points over the filling and tuck under the wide ends. (Filling will be visible.) Bake at 375° for 20-25 minutes or until golden brown.

Hi Carol in So Car: Jan 15 newsletter
This is Mert from WI. Regarding eggs. We were in the business for 25 years. We went from pullets to laying out hens in a big chicken house to poultry processing. You want to use cold eggs for fried eggs because the yolks stand up nicely when cold. When boiling them use room temp eggs and also for beating egg whites, use room temp. eggs. As for baking and anytime that the eggs are beaten, it does not matter.

I have my brown eggs on my counter in an old fashion wire "chicken" basket. Because the shells of the brown egg are harder than the white eggs and I usually use them up in three days, I do not have spoilage. I check for cracks when I put them in the basket and use them right away (usually scrambled for cat food). Yes, I have cats that are spoiled. I get my eggs from an Amish farmer and so are natural and the flavor is fantastic. Once they were changing flocks and no eggs so I had to get some at the store. Wow, I really knew the difference. My husband has a sensitive taster and knew every time I changed. When the new flock starts to lay, I love the little eggs, very firm. Sorry, about rambling on, but hope this info helps many.
Love you all. Mert

please do not spray Vinegar, that would not only burn his eyes, but would scare him and make him afraid of you, I also say talk to your vet. Please don't abuse him, that makes matter worse.

I use regular water (in a bottle that squirts) with Ditto and he understands very well.

Hi Nancy and all You Marvelous Cooks,
I'm hoping someone in Nancyland will have a clone recipe for Taco Bueno's Chicken Tortilla soup and one for their cheesecake chimachonga's. Or, if you have a T&T chicken tortilla soup recipe you'd like to share, I'd appreciate it. The ones I've made in the past few weeks have had a "watery" consistency instead of the thicker soup base of Taco Bueno's.
Thanks in advance, Jae, cold and windy central OK

Looking for a good TNT white bread recipe that can be made in the bread- machine. Would like one that will make good toast.
Thanks in advance.

To Linda from Pa.-Yes you can safely add mayo to mashed potatoes. I've done it although not too much. It does seem to make them creamier. However, my youngest daughter always wants my "lumpy" mashed potatoes!!
Nancy this wonderful group is growing by leaps and bounds, it seems. What a joy and what a Joy You are for all your hard work!

Chicken and Magic Noodles
1 quart chicken and beef broth + 1 cup
2 eggs
1 teaspoon baking powder
2 tablespoons cream
1/2 teaspoon salt

Flour to mix into ball. Roll-cut thin. Cook 10 minutes in boiling broth. (Here's how it works...)

The broth: Boil some chicken and beef in water. (Use both meats. If you don't use both, you won't get magic noodles). Remove meat from broth. Keep broth in fridge, or freeze until needed. When ready to make Magic Noodles, put broth on to boil.

Flour to mix into ball: This process takes about a minute. Fill a mixing bowl half full of flour. With a spoon, make a well in the center of the bowl (an indentation in the flour, about the size of a fist) Dump your four ingredients (everything except the broth) in this well. (I substitute evaporated milk for cream.) With a fork, stir gently (don't beat), picking up flour as you go from the outside walls of the well. Keep stirring until you've picked up enough flour to be able to remove the dough, from the well of flour, even though it may be in pieces and still sticky. Drop dough on floured board. (I dump flour on my countertop, and make them there.) Gently knead a few times to add more flour (using the left-over flour from the mixing bowl, if you wish) until you can roll the dough into a ball that doesn't stick to your fingers.

Roll-cut thin: Roll the dough out with a floured rolling pin. Sprinkle flour all over the rolled out dough. Starting at one side, roll up the dough, like a tube. Cut the dough (like cutting bread) into very thin slices with a knife dipped in flour. Shake noodles lightly to remove excess flour. (I put the noodles in a strainer and shake). Dump noodles into boiling broth. (Turn the temperature down a bit, or the broth will boil over.)

This process takes me about two minutes to make enough noodles for 4 people. It took Grandma Jones about 20 seconds to cut enough noodles for 40-50 people, which is why everyone gathered to watch. She would pick up a big knife--there was a blur--and the noodles were cut. Amazing!

Cook ten minutes - and eat. Unless you've made Magic Noodles, you've never tasted anything like this. You can add chicken or beef or vegetables, but Magic Noodles, as directed, really do make a meal.

When whipping heavy cream or making a meringue, should the bowl and beaters be cold, or is room temperature the best?
Anne

Hi Anne - when I whip heavy cream I put bowl and beaters in freezer for a while and also have the cream VERY cold.

When I make meringues, I take out the egg whites an hour or more before making them and leave on countertop, add a dash of salt and about a teaspoon water.

For your sooty ceiling Barb, I would try one of the magic sponges out there. Mr. Clean has one but there are now some other brands too. They work wonders on most scuffs, marks, etc. without removing paint...let us know what works for you...

For Barb/De. trying to get the dark soot off of her ceiling from burning candles. Try the Mr. Clean magic eraser and try burning only soy candles from now on!

For Dianne in WI with the biting cat. Is Toby an only child? If so, he is probably biting you because you are his only playmate and he is treating you as he would another cat. The biting will probably decrease if you get him a playmate. No matter what, he probably will not bite your grandkids unless they bother him.
