Marlene in Fl is looking for something different for a cake sale. I am
submitting the following for her. Connie in TX'
Pumpkin Cake Roll
Cake:
3/4 c. flour
1 t. baking powder
3/4 t. ginger
2 t. cinnamon
1/2 t. salt
1/2 t. nutmeg
2 eggs
1 c. sugar
3/4 c. canned pumpkin
1 t. lemon juice
1 c. finely chopped nuts
powdered sugar
Sift first 6 ingredients; set aside. Beat eggs for 5 minutes at high
speed; gradually beat in sugar. Stir in pumpkin and lemon juice. Fold dry
ingredients into pumpkin mixture. Grease a 15 x 10 x 1 in. jelly roll pan;
line with waxed paper and grease this (use cooking spray). Spread cake
batter in pan; sprinkle with nuts. Bake in a preheated 375 degree oven for
15 minutes. Remove from oven and turn out on a tea towel-don't use terry
cloth-that has been sprinkled with powdered sugar. Remove waxed paper,
then roll cake and towel together-starting at short edge. Cool on a rack.
Filling:
1 c. powdered sugar
6 oz. cream cheese, softened
1 T. butter or margarine
1/2 t. vanilla
Beat filling ingredients together until smooth. Unroll cooled cake and
spread evenly with cream cheese mixture. Reroll cake without the towel,
rolling it on to foil. Twist ends of foil to keep it together. Chill
thoroughly before serving. Freezes well. Serves 12-16
For Gloria in Indiana. Ranch Style Beans are evidently something
native to Texas as I could not get them when I lived in Florida. Ranch is
the brand name and they are really nothing more than chili beans. Do you
have Chili Beans in your stores there? If not, just use canned Pinto Beans
and add about 1/2 tsp. chili powder.
I hope it turns out well for you and that you and your family enjoy the
dish as much as we do. Haven't made it lately so think that will
definitely be on the menu for tomorrow night.

blue punch for the wedding. A punch we used to make for church
functions was mostly "clear". We used equal parts white grape juice and
gingerale. I am thinking you might experiment with white grape juice and
7-up or Champagne and add blue food coloring.
Just a thought - I haven't tried it.

To Connie from Beech Grove, who asks for suggestions for removing the
outer hull off black walnuts. My parents used to have a lot of
black walnut trees on their property. They would spread cardboard down on
the garage floor which keeps the floor from getting stained, lay the black
walnuts on the cardboard and drive over the walnuts with the car, as they
left for work and arrived home. This removes the outer hull. One year, Dad
found a hole in his garage after all his walnuts disappeared one night. It
seems a squirrel found Dad's walnuts and helped himself to them.

Lisa in East Texas was asking about a blue punch recipe. When we used
to cater wedding receptions and I needed different color punch I used
sprite or 7 up and some white pineapple sherbert (the sherbert color was
white) to make the base.
Then would add either the right mixture color of unsweetened kool aid
to it, or food color to come up with whatever color needed.
I would use 3 two liter bottles of the sprite to 2 half gallons of
sherbert, and stir til the sherbert mostly melts. This would serve approx.
50 little punch cups. I think they even make a kool aid that is blue, and
would give it some flavor as well. Even the men photographers would come
back for seconds it was so good. lol I watched for the sales on the sprite
and 7 up, and often got it cheaper that way. Good luck and have fun doing
it.

Nancy, here is a pie crust recipe for Korena in Canton to try. I've
been using this recipe for many, many years and it has always turned
out nice and flaky.
PIE CRUST
3 cups flour
1 teaspoon salt
1 1/4 cups Crisco
1 egg, slightly beaten
5 tablespoons cold water
1 teaspoon vinegar
Combine flour and salt. Cut in Crisco with pastry blender. Add egg, water
and vinegar. Mix well, form into ball and chill. This recipe
makes two crusts for a 9-inch pie.

Recently in our daily paper Heloise had a recipe for Apricot Jam
-- it was made with dried apricots. I just thought I could pull it up on
her web site anytime I wanted it. DRAT -- not working for me. Does anyone
have this recipe to share? Thank you all.

Good morning Nancy and all,
I just want to say to Connie from Beech Grove, when we had black walnuts,
we laid the nuts on a solid surface, like the driveway with newspapers
under them and we put newspapers on top of that, and drove the car over it
and it loosened the outer hulls. It didn't break the nuts, u should be so
lucky? :)
I assume that is the hull that Connie is talking about , and the inner
hull is hard to break too, and we ordered a walnut cracker from Lehmans,
Amish suppliers. It is a little pricy but works well.

Blue Punch Recipes For a Baby Shower
Blule Punch
1 (0.13 ounce) package berry blue flavored unsweetened Kool-Aid drink mix
1 (2 liter) bottle lemon-lime flavored carbonated beverage
1 (64 fluid ounce) bottle white cranberry juice
8 scoops vanilla ice cream
1 cup white sugar, or to taste
In a large punch bowl, stir together the Kool-Aid, lemon-lime soda and
white cranberry juice. Taste, and stir in sugar to your liking. Float
scoops of ice cream on the top. The ice cream melts somewhat and turns the
punch a beautiful baby blue color with frothy white clouds floating on the
top.
Baby Blue Punch
2 (0.13) packages unsweetened berry blue Kool-Aid
2 cans frozen Bacardi pina colada mix
1 liter bottle club soda
2 c. sugar (if using unsweetened Kool Aid)
2 qts. cold water
Combine Kool Aid, sugar and pina colada mix in punch bowl. Stir until
sugar dissolves. Add 2 quarts cold water and stir. Immediately before
serving add 1 liter of club soda.

Cherry Pineapple Dump Cake
1 (20 ounce) can crushed pineapple, with juice
1 (21 ounce) can cherry pie filling
1 box yellow (or white) cake mix
3/4 cup butter or margarine, melted
1/2 cup chopped pecans
Ice Cream or Whipped Cream
Spread pineapple in greased 9"x13" pan. Top with cherry pie filling.
Sprinkle with cake mix. Drizzle with melted butter and pecans. Bake at 350
for 50-60 minutes. Serve with ice cream or whipped cream. Serves 8-10.

Question for Carolyn, NY: Which restaurant did you go to near Rehoboth
Beach, DE? I spend many days during the summer at that beach and have crab
recipes from many of the different restaurants.

In the 10/2 newsletter there was an inquiry as to how I package
Puppy Chow, Bag of Trash and Fiddle Faddle clone. I use
decorative tins, colorful plastic bags, and clear plastic containers
decorated with holiday stickers. The tins can often be found at the Dollar
Store, similar discount stores and even yard sales. If you can’t find any
of these items, Use the regular gallon size plastic bags and either place
in a gift bag, add colorful stickers or a pretty bow. Friends and family
members have started returning the tins that I use, joking that they hope
it will return to them with a refill. I have never tried freezing any of
the items and am not sure if they would freeze well. I hope this helps.

Nad in Mo asked for brining directions in the
October 2nd newsletter. I brine a
turkey or chicken -- I take a large stock pot and fill it with water,
adding about 1/2 to 2/3 cup salt. I then add the turkey . I use fresh
turkey not a frozen one but if you do buy a frozen one make sure it is
thawed. Clean it and remove the bag with the livers and neck first. Don't
brine with a self basting turkey. I refrigerate this overnight . Making
room in the refrigerator for the stock pot is the hardest part. If the
turkey is not quite covered by the brine because it is so big , I turn it
over once before going to bed so that all parts of the bird get the
treatment. Rinse the bird well before drying it and rubbing vegetable oil
then bake. I bake at a high temperature for the first hour with the breast
side down.

I think of my recipes as a collection of ideas! I don’t anticipate ever
running short of ideas for cooking.
I cook from a wide variety of Southern style recipes; and, also
the Mexican.
I would like to make a suggestion to the more experienced cooks: when
submitting a recipe having an alcoholic ingredient, please give a
substitute as a footnote to recipe.
This would be a wonderful courtesy to many of us. Generally, when I read a
recipe using alcoholic ingredient, I never copy it. I feel sure there are
many others who feel the same way. Some of us are not familiar with
substitutes.
This a.m., I ran across a delicious sounding recipe except for the rum
content. I checked to see if I could find an acceptable substitute. Found
substitute: “pineapple juice or syrup flavored with almond extract. “ I
added this info to my recipe.

For Tracy in OK and Carol in SoCal: Thanks for the ideas for the graph
paper. I finally bought the cheapest pack of the white paper with blue
squares and just drew in the lines where i needed them to be. I started
using a sheet this morning when I weighed. I think I'll be able to see how
I'm doing day to day.
Since some have told about their kitchen disasters, I will tell you about
mine that happened this evening. I made my son a buttermilk pie that I had
promised I would make him some time ago. I don't do much cooking since I
can't eat good stuff and because I just don't have a lot of energy. Got it
all baked. I was going to put it in the frig to cool off so he could have
some before bedtime. Had the frig door open and was headed that way with
the pie. In slow motion I felt it going down. It went all over the floor
in front of the open fridge. Lucky for me, there's a rug in front there so
most of it went on the rug. My Chihuahua had a good time licking up what
wasn't on the rug. That just about broke my heart! A little didn't fall
out of the pan so I kept that and when my son came in from work I told him
his pie and chili was on the stove. He was disappointed but I told him I'd
try again soon. I got to eat the little that was left and shot my blood
sugar sky high. I figured I ought to get something out of the deal besides
a burned toe! (The pie was just out of the oven and HOT).
I had baked the pie on a cookie sheet to make it easier to handle but took
it off to put in the frig. That little voice told me not to do that. I
should of listened because it's usually right!

This is for Marlene in Fl about her church bake sale. I have found that
the small quick breads sell well such as Banana Nut, Cranberry etc. Also
if there are kids they love the Puppy Chow. If you don't have this recipe
I will be glad to send it in. Fudge is also a winner, just package it in
2-4 pieces, depending on size. Some people just like to buy a snack, not
the whole thing.

CINNAMON APPLES
4 apples
2 tbs sugar
1 - 2 tsp ground cinnamon
2 tbs butter or margarine
good 1/3 cup raisins, lightly chopped
Heat the oven to 400. Scrub and split the apples. Remove the seeds and put
the apple halves, cupped side down, in a greased oven-proof dish. Mix
sugar, cinnamon, butter and raisins and divide this filling in the apple
halves. Also put a thin
layer on the cut side. Put in the oven and bake for about 20 minutes or
until soft and lightly colored. Serve warm or lukewarm with vanilla sauce
or whipped cream.

Going Nuts Upside-Down Cake
2 sticks butter or margarine
2 C. brown sugar
1/2 -1 C. chopped pecans (or walnuts)
1 can whole sweet cherries
1 (1 lb.) box Pillsbury Plus yellow cake mix
1/2 C. flour
1 (9 inch) circular pound cake (with hole in middle of pan)
Preheat oven to 250-300. Apply butter and flour to tube cake pan, around
sides and middle, so cake won't stick. Melt butter or margarine in
saucepan. Pour melted butter into cake pan. Apply brown sugar over melted
butter; sprinkle chopped nuts of top of brown sugar. Place cherries on top
of melted butter mixture-arrange evenly around pan bottom. Prepare cake
batter according to pkg. directions and pour batter over top of remaining
ingredients. Place pan in 250-300 oven; bake cake until toothpick inserted
into cake comes out clean. Place a dinner plate on top of cake pan and
flip cake over immediately so that cake won't stick to pan. Let cake cool
for 10-15 minutes, then serve. Serves 6-8.
Tona in Bama
Breakfast pudding
3 C vinegar cheese
3 eggs
3/4 C sugar
2 T cornstarch
1 t. vanilla
Put all in blender and blend until smooth.
Pour into greased casserole and bake in a pan of water like you do
custard. 325 for about 45 minutes. Check like you do for custard to see if
done. Don't overbake.
Serve with jam or fruit(sharp flavor is best)
Spinach and Cheese Enchiladas
15 oz ricotta or ricotta type cheese
1 pkg frozen chopped spinach thawed and drained
1 can or pkg corn
2 C shredded sharp cheddar cheese
2 eggs
10 flour tortillas 8 inch
1 can black beans well drained ( or your favorite kind)
4 green onions chopped tops and all
1 bunch of cilantro stems removed leaves chopped or parsley if using
tomato sauce
2 - 4 t. granulated garlic or the equiv. of fresh optional 1 can sliced
black olives or a half cup of sliced green olives
Mix all but tortillas and 1/2 C shredded cheese together. Divide between
the tortillas. Roll up each tortilla and put into sprayed at least 9x13
pan seam side down.
Sauce - 2 choices
Mushroom Alfredo
1 can mushroom soup
1/2 to a whole jar of Alfredo sauce
Mix and pour over tortillas in casserole
Tomato
1 can diced tomatoes with green chilis or plain diced tomatoes (14 oz)
undrained
1 can tomato sauce
1 t. dried basil
1/4 C parm. cheese
Mix well and pour over tortillas. If you want the Italian style then leave
out the cilantro in the filling and substitute It seasoning.
Bake covered for 30 minutes at 375. Uncover and sprinkle with the
remaining 1/2 C cheese and bake 10 more minutes.
I can’t find my recipe for cottage cheese patties which were very good.
All I remember were grated onion seasoning and enough flour and 1 egg to
hold the mixture together enough to fry the patties.

Hi Nancy : Wanted to also say that I tried the Hot Dog Bun Custard
Pudding recipe and it was so easy to make and soooo good! I used the
bread type buns as that was all I had, and I also sprinkled nutmeg over
the top of the buns. When serving, I turned the buns over, and then
drizzled just a little bit of good old New York State Maple Syrup over the
top of the custard. It was delicious and like I said, so simple and quick
to make.
Now that it is Fall, this would be a good time to try this good recipe
that we use on Hamburgers, hot dogs and sandwiches. The onions are readily
available at farmer's markets . We buy ours from the Amish and get the
large sweet variety, but you can use any that you particularly like.
Onion Slaw
6 large onions chopped- ( I pulse them in my food processor)
Marinate for 24 hours in 1/2 cup each of cider vinegar, sugar, and water.
The next day , drain and add 1/2 cup mayonnaise and celery seed to taste.
Place in container and keep in fridge. It keeps for about a month or more.
.and speaking of Maple Syrup this reminds me of a great salad.
Frozen Maple Date Salad
Beat until smooth:
8 oz. pkg. Cream Cheese
1 cup maple syrup
fold in:
2 cups whipped topping
1 cup chopped nuts
Place in a serving bowl and freeze overnight. You may garnish with
pineapple rings and Maraschino Cherries if desired.
This salad was served at a local restaurant on their buffets, and they
very kindly shared the recipe with us. It is very good.

BAKED APPLE 'N SPAM PANCAKE WEDGES
1 12-ounce can SPAM, cut into small cubes
2/3 cup buttermilk pancake and waffle mix
2 tablespoons packed brown sugar
1/4 teaspoon ground cinnamon
a dash of ground nutmeg
2 eggs, beaten
3 tablespoons milk
2 tablespoons butter or margarine, melted
1 cup apple, grated
pancake syrup
Preheat oven to 425 degrees. Generously butter a 9-inch round cake pan.
Combine pancake mix, brown sugar, cinnamon and nutmeg in medium mixing
bowl. Add eggs, milk and butter; mix well. Stir in apple and SPAM. Pour
into cake pan. Bake 10-12 minutes, or until golden brown. Cut into wedges
and serve with syrup.
Makes 5 servings.

SWEET POTATO PIE WITH STREUSEL TOPPING
1-1/4 cups yams or sweet potatoes, cooked and peeled
1/4 cup butter or margarine
1 (14-ounce) can sweetened condensed milk
1 teaspoon each ground cinnamon and vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 egg
1 unbaked pie crust
STREUSEL TOPPING:
1/4 cup firmly backed brown sugar
2 tablespoons flour
1 tablespoons cold butter or margarine
3/4 cup pecans
Preheat oven to 425 degrees. Mix hot yams and butter until smooth. Add
remaining ingredients except crust and streusel topping; mix well. Pour
into crust. Bake 20 minutes. Prepare streusel topping. Remove pie from
oven, reduce oven to 350 degrees. Spoon streusel topping onto pie. Bake 25
minutes longer or until set.

the bride is insisting on blue punch, but does NOT want the one with jello
in it.
I sent this recipe before, but it would be great with blue coloring in it
I'm sure as the color is a very pale yellow. It is wonderful. When I make
it, people hang-out at the Punch bowl because it is that good.
It is called "The Recipe", Like on the Waltons,.
but this is non-alcoholic. Enjoy.

“The Recipe”
½ gallon pineapple juice
2 cups sugar
2 full tsps. vanilla flavor
2 full tsps. almond flavor (this is what makes it special)
Mix together in a gallon pitcher or Jug. (I use a jug for easy
transporting and to shake it well) Add enough water to make a full gallon
and shake or stir well. Pour over crushed ice in a pitcher or Punch Bowl
and pour in an equal amount of ginger ale.
What newsletter was the Spinach, Sausage Soup in. I looked in
Sept Recipes and did not find it.

Hi Nancy - I just wanted to thank - Sue (Cooky) in Indiana for sending
in the "Cottage Pudding" recipe! Others were sent in some time ago
and they have been close. I am looking forward to this one because I know
my mother used the Better Crocker book and it was in the early 50's. I
think it was a "depression recipe" as we were a family of 10 and there
wasn't a lot of money for goodies. She served it with a lemon sauce, now
does anyone have a TNT recipe for lemon sauce? I remember it was served
warm and poured over the top of the cake. I know there's recipes on the
web but I'm hoping for an old fashioned TNT one.
