Dear Nancy, I believe I saw a recipe for the
perfect roast in your August 25th or 26th newsletter either one of
those days. Have searched in the index but can not find it now. Forgot who
sent it but it said to heat oven to 550 degrees, yes 550 degrees & then
went on to give a few brief directions for perfect rare center. Please re

Choice Fruit Cobbler Mix
Cook's Choice Fruit Cobbler Mix comes in a 22.5oz container with
instructions to make either a small batch for 6 or 7 servings or a large
batch for up to 16 servings.

If you still have zucchini in your garden this is
a great bread.
Lemony Zucchini Bread
4 cups flour
1-1/2 cups sugar
1 package instant lemon pudding mix(3.4 ounces)
1-1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
4 eggs
1-1/4 cups milk
1 cup vegetable oil
3 tablespoons lemon juice
1 teaspoon lemon extract
2 cups shredded zucchini
1/4 cup poppy seeds
2 teaspoons grated lemon peel
In a large bowl, combine the flour, sugar, pudding mix, baking soda,
baking powder and salt. In another bowl, whisk the eggs, milk, oil, lemon
juice and extract. Stir into dry ingredients just until moistened. Fold in
the zucchini, poppy seeds and lemon peel.
Pour into two greased 9x5 in. loaf pans. Bake at 350° for 50-55 minutes or
until a toothpick inserted near the center comes out clean. Cool for 10
minutes before removing from pans to wire racks to cool completely
Makes 2 loaves.

Re: Newsletter 8-26-07 and cat hair on furniture. I have found 1
part fabric softener and 4 parts water in a spray bottle and using a damp
sponge does wonders in picking up loose hair on furniture. Also, when
brushing or combing the pet if their fur is dampened a bit the loose hair
will not fly around everywhere. I usually dampen my hands, and then gently
rub the cat he thinks he's getting special attention, not a rubdown with
water.

Brunch Casserole
2 pounds sausage, cook and drain
2 cups milk
4 eggs, slightly beaten
1 small can mushrooms, drained
3 cups grated cheddar cheese
1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon Worcestershire sauce
1 1/2 tablespoons dry onion flakes
8 slices bread, cut off crust and cut into slices
1 can cream of mushroom soup
1/3 cup milk
paprika
Combine first nine ingredients and set aside. Butter a 9 x 13-inch glass
casserole and line with bread strips. Pour mixture over bread strips.
Cover and let set 6 hours or overnight in the refrigerator. May be frozen
at this point. Before baking, mix the mushroom soup and milk together,
pour over the casserole and sprinkle with paprika. Bake uncovered in
preheated 325 oven for 1-1/2 hours or until firm enough to spoon easily.
Cream, eggs, and your choice of fillings makes quiche an easy and
delicious brunch or breakfast dish. Quiche can be made ahead of time and
reheated in the oven or microwave.

I made
Tona's Kaluha cake for
my week-end guests and they loved it -- wanted me to share the recipe and
I couldn't find my print out and now I can't find the date of the letter
it was in. It must have been in July? I did have a problem that I hope the
great cooks can help me with -- my bundt pan is in a loaf shape -- it was
quite expensive several years ago when I HAD to have it but I have never
had success getting it to release the cake without leaving some stuck in
the bottom. It is non-stick supposedly and it is not scratched and I spray
heavily with Pam -- I let it rest 10 minutes before trying to release it.
What am I doing wrong? or what can I do to cure it better. Thank you!!

Strawberry Cupcakes
1 package strawberry cake mix
2 cups sour cream
2 eggs
1/3 cup strawberry preserves
Line 24 muffins cups with paper baking cups. In large bowl, combine cake
mix, sour cream and eggs; stir with spoon until well blended. Reserve 1
1/2 cup batter. Fill cups 1/2 full with remaining batter. Using spoon,
make slight indentation in center of each cup; fill with heaping 1/2 tea
spooning of preserves. Spoon reserved 1 1/2 cup batter evenly over each
filled cup, covering preserves. Muffins should be 3/4 full. Bake at 350
for 20-30 minutes or until tops spring back when lightly touched. Store in
refrigerator.

Would you please share again the recipe for Chocolate Syrup/Gravy
that goes on yellow cake. I had this when I was a kid but never got recipe
from my mother. I always like getting off the school bus and having a
piece of fresh baked yellow cake with the chocolate gravy on top. Boy -

Stan in PA accurately described panko, and mentioned tonkatsu. I
love tonkatsu, a breaded pork cutlet usually served with a plum sauce.
(From a restaurant in Seattle called the Mikado). Would Stan happen to
have a recipe for the tonkatsu and sauce? Would really appreciate it

Hatteras Red Sweet Muscadine taste just like homemade . Oh so good. You
can get it at Sams or Food Lion grocery. I also like a sweet wine and this
is the best.

To Pa from SC, thanks so much for the meat loaf
recipe with cinnamon as an ingredient. I'm very anxious to try it.
We're leaving for vacation for the month of Sept. so I'll either make it
while we're there (we stay in a fully equipped condo, so I do a little
cooking while we're there)or I may wait and make it when we get back. It
does sound delicious, and a bit different. I like that!
Also to Jeri K. Glen Cove, you're very welcome, and the twist on meatballs

Southwestern Corn Bake
2 (16 to 17 oz.) cans cream-style corn
2 eggs, beaten
3/4 cup yellow corn meal
1 tsp. garlic salt
6 Tbs. salad oil
1 (4 oz.) can roasted and peeled diced green chilies
2 cups grated Cheddar cheese
I also have added onion, black olives, and tomatoes
Mix together all ingredients except chilies and cheese. Divide mixture in
half. Place one half in a greased 8x8x2" baking dish. Mix together the
chilies and cheese; lay on top of corn mixture in dish. Cover with the
remaining corn mixture. Bake at 350 for 35 minutes. Serves 8. (Good with a
dollop of sour cream)

For the request of recipes using ramen noodles:
Ramen Noodle Chicken Salad
2 chicken breasts (cooked and cubed)
2 tbsp. sesame seeds
1/2 c. slivered almonds
1/2 head cabbage
4 chopped green onions
1 pkg. Ramen noodles (chicken flavored)
Dressing
2 tbsp. sugar
2 tbsp. vinegar
1/2 c. salad oil
1 tsp. salt
1/2 tsp. pepper
Flavor pkg. from Ramen
Mix together almonds and sesame seeds in pan. Brown in oven at 350 degrees
for a few minutes. Chop cabbage and add to other ingredients. Break in
noodles (dry). Refrigerate. May double dressing if too dry.

RE: Creamy macaroni salad
While the Eagle Brand works great, a man who ran a deli once told me to
use mayo, sugar and vinegar and it will taste the same, and he was right.
He also said if theirs was too thick and dry that they added a little
evaporated milk to the dressing (not condensed). It's much cheaper, but
you do have to add a little more sugar this way. Just an idea. Susan in

Thanks to Susan, AL, who in the 8/20 newsletter
submitted the recipe for Savory French Bread. I used my bread machine to
mix the dough and baked the bread on a silicone baking sheet. I
substituted Splenda for the sugar without any problems. This is a recipe
that I will use many times, and I will experiment with adding additional
spices. I will also try using it for the recipe for Swiss Cheese Bread
that Mary OH submitted in the 7/24 newsletter.
For Jean VA/FL who in the 8/21 newsletter was missing recipes from Dennis

This is a great one and the steak just melts after you bake this.

Oven Swiss Steak
1 1/2 lb. boneless beef round steak
1/4 cup flour
1 tsp. salt
3 Tblsp. oil or Crisco
2 (16-oz) cans stewed tomatoes
1/2 cup chopped celery
1/2 cup chopped carrot
1 tsp. Worcestershire
1/4 cup shredded cheese
Cut meat into portions. Combine flour and salt; pound into meat. Reserve
remaining flour for sauce. Brown meat in hot oil or Crisco. Transfer meat
to shallow baking dish. Blend reserved flour mixture into pan drippings in
skillet. Add tomatoes, celery, carrots, onion and Worcestershire Sauce
into drippings and cook; stir constantly until mixture boils and pour over
meat. Cover and bake at 350 for two hours or until meat and vegetables are
tender. Sprinkle cheese over meat. Return to oven for a few minutes to
melt cheese.

Baked Pineapple Casserole
1 tsp. vanilla
1/4 cup sugar
2 Tbsp. all-purpose flour
2 eggs beaten (beat with the drained pineapple juice)
1- 20-oz can crushed pineapple, drained (save juice for beating with
eggs)
1/8 cup butter
1 cup white bread cubed
Mix vanilla, sugar, flour, eggs and pineapple together. Sauté bread in
melted butter until golden brown. Add bread to mixture. Place in greased
casserole dish and bake at 350 degrees for 35 minutes.

Aug 26--Easy Cheese Souffle question for Tona-
Bama-- (Kahlua Cake question too)
Your souffle recipe sounds delicious but do wonder if there should be eggs
in the recipe. Also I have not seen an answer as whether frosting for
Kahlua cake goes on the cake while it's in the pan or after it has been
removed from pan. My husband went out and bought the Old Chart bourbon for
the cake and he keeps asking me when I am going to make it. Your recipes
are top notch--am still very anxious to make the cake but do want to frost
it properly. And a BIG thank you to you Nancy for all you do.

RE: Pot marks on white sink
Try Mr. Clean's Magic Eraser. I have a stainless sink, so I havent
tried it on a white sink. Why I say to try this is because one of our kids
left the 4-wheeler parked to the side of Jerry's white truck and when he
backed up, the handle bars and tires made marks on his truck...we tried
everything to get it off and I remembered the Magic Erasers that I picked
up and with very little effort all of the black scuff marks came off.

for one of her wonderful recipes. My DH just loves the Quick and Easy
Vanilla Fruit Cocktail Salad that was posted in the 6/7/07 newsletter. It
was a hit at a recent party as well. Everything that Tona submits seem to

Thank you Nancy for this newsletter. Reading it is a highlight of my day.
What is so special about this newsletter is the quick reader response to
requests. It is like having a large number of wise friends to ask for
recipe requests and other questions I may have about household issues,
e.g., cleaning hints. Kudos to Nancy and the whole group.
In the 8/20 newsletter Sharon in Texas submitted a recipe for Orange
Sherbet that consisted of milk, sugar, and a package of dry Kool-Aid--ingredients
I always have in my home. I love sherbet but do not own an ice cream
maker. I do not have the room to store one in my home. Can anyone provide
TNT recipes and instructions for ice creams and sherbets that can be made
without an ice cream maker? Sharon, do you know if this one can be made
without an ice cream maker? I try to cook from scratch as much as possible
to avoid ingredients that my system will not tolerate. Thanks in advance
for any recipes this group can provide.

Hi Nancy; hope you are well. In the August 25th
newsletter Eva in Texas was looking for the saying used in housewarming.
It is called "A Traditional Housewarming" and the saying goes as follows:
Bread: so you never go hungry
Wine: so your life is always sweet
Salt: so there is always spice in your life
And a candle: so you always have light.
I operate a large gift basket business up here in Canada and have used
this for welcoming new home owners many times. If there is doubt whether a
couple drinks liquor - I have substituted sparkling apple juice or berry
juices that come in wine - sized bottles. Glad I could pass some
information along to our wonderful "family" and hope this will help her
put something nice together. Take care everyone. And as always - Nancy -
thanks for all you do for us "recipe addicts."

Loaf". The ingredients included lime jello, coconut, vanilla wafers,

Hi Nancy Furbabies and all,
I had a real good laugh at the kitty in the kettle grill. I just love
hearing what your kitties are up to. I would like to respond to Suzanne in
NH in regards to the Yankee Kitchen Recipes. I have to find the little
notebooks that I wrote some of the recipes from the show in. I don't
recall an all in one pot spaghetti recipe but I have many from that show
and will see if that is one of the ones I copied. If you have any specific
recipes or types of recipes from the show please request them and if I
have them I will gladly post them for you. I know that Nancy doesn't put
email addresses on the newsletter because of privacy issues or I would
suggest that you email me and I could send some of the recipes to your
email address.
I would also like to request a couple of recipes if I may. I am looking
for a recipe that they showed on TV a while ago, (they were selling
pressure cookers.) It was for pasta and meat sauce. They used frozen
Hamburg and dried pasta and I am not sure what else. I have an electric
crockpot from QVC and would like to try out that recipe.
My other request is for a homemade or copy cat recipe for those cookies
that you can buy in the store that are just like Fig Newtons but instead
of figs I have seen some that are blueberry, apricot, Dutch apple and I
think even strawberry and raspberry. I don't think that the other flavored
ones are necessarily put out by the same company that makes the fig ones.
I can't always find the other flavors and I really like these cookies a
lot. I have found the copycat recipe for the fig filling and I would like
to attempt to make the other flavors myself if I could get some recipes
for them. Thank you in advance for your help.

Here is an appetizer that is always a favorite. It
can be made either hot or cold.
If you want to make it hot, just spread on a buttermilk biscuit and bake
at 350 degrees till biscuit is browned and topping is bubbly. One of my
dear friends decided that it tasted so good before baking that now it has
become a summer favorite (without baking it).
Easy Crabmeat Appetizer
1 8 oz pkg. imitation crab meat cut into tiny pieces
1 8 oz pkg Swiss cheese grated
1 small onion diced
Enough mayonnaise to hold it together
Place into small mold dish (I have a little one shaped like a fish) or you
can just form into a ball placed on a dish and served with Ritz cracker
around the dish.

Italian Meatball Soup (Quick and Easy)
18 oz. pkg frozen fully cooked Italian-seasoned beef meatballs (about 35)
2 C. frozen mixed vegetables
14 oz. can ready-to-serve beef broth (approximate size)
14 1/2 oz. can Italian-style diced tomatoes
1 C. water
1/3 C. uncooked small shell pasta
shredded Parmesan cheese
Combine meatballs, vegetables, broth, tomatoes, water and pasta in large
saucepan; bring to a boil. Reduce heat; simmer 8 to 10 minutes or until
pasta is tender. Serve with cheese, as desired. Makes 4 to 6 servings.

Love your newsletter and wouldn't do anything to knowingly break any
rules. I have a lot of recipes where I have figured out the points and
thought W.W users might enjoy them. Hope this is allowable.

Peach Pie Smoothie
1/2 cup frozen peaches
1 tsp Splenda
1 cup cold water
2 egg whites ( available in cartons)
1 tsp cinnamon
I made this in my magic bullet or you could use a blender. It really does
taste like peach pie.

My Teriyaki Sauce
1/3 cup of brown sugar
1/2 cup of regular soy sauce
1 clove of garlic
1, 1/2 inch slice of ginger, crushed or chopped finely
Combine all and marinate your meat in it for 30 minutes. This is great for
grilled or broiled meats. You can add 3 or 4 extra tablespoons of sugar to
it if you like a sweeter sauce. I heat up the sauce after I marinate the
meat (3 pounds of beef or chicken) and pour a little over the meat before
serving. You can also pour a little over some plain white rice.

I am so far behind on my Nancy's columns, just
read a July 27th one, to show how far behind i am but refuse to delete as
they are all great.
A big hi to Joie in MT. Juliet, TN I am in Smyrna so we are neighbors
almost.
I am sure that to hers have responded ,by now, but
the questions about what to serve with bbq, a restaurant in Murfreesboro,
TN serves their bbq sandwiches with cole slaw and is delicious, so now i
have to have mine that way, even if at home.
Have a good week and Nancy, don't know what was
the matter that caused you to lose your brother, but sure am sorry. My
thoughts and prayers are with you and know you are sad a lot of the time,
just as I am after losing my wonderful husband of 35 years about 6 months
ago.

I have a request I am looking for a recipe that
uses crushed pineapple, melted marshmallows, on a graham cracker base and
toped with some of the graham cracker crumbs. I use to call it Pineapple
Dessert. lost the recipe over the years and would like to make it again.

I'm sorry I don't have the date of this request. This is a dessert that my
mother made when I was a child, we lost the recipe for a while but
recently found it, I hope it is the one you are looking for.

Marshmallow Delight
30 marshmallows
1 large crushed pineapple
1 cup milk
1/2 cup whipping cream
14 graham crackers
Dissolve marshmallows in milk on stove in top of double boiler until
thoroughly melted, then sit aside to cool. Whip cream. Roll graham
crackers fine and put 1/2 of them in bottom of 9 x 13 pan. When the
pineapple is well drained add to marshmallows you've dissolved in milk.
Fold in whipped cream. Spoon mixture on graham crackers and sprinkle
balance of crumbs on top. Place in refrigerator 2 to 4 hours to serve
cold.
Potato Beef Casserole
4 C. potatoes, diced
1 lb. lean, tender beef, ground
3/4 C. minced onion
2 cloves garlic, minced
2 T. beef bullion granules
1 C. cheddar cheese, shredded
1 T. Tabasco green jalapeno sauce
olive oil, butter
salt, Fresh ground black pepper
Dice the potatoes into 3/8-inch cubes. Cook in lightly salted water until
just tender. (Dont overcook) Drain and rinse.
Sauté onion, garlic, beef bullion granules and meat in heavy skillet until
meat is done. Season to taste with salt and black pepper. Add the Tabasco
sauce and mix well.
Place the potatoes in a suitably sized baking dish, and dot them with
butter. Top with meat mixture. Cover with the shredded cheese. Bake at 375
until bubbly and the cheese has melted. Dish can be topped with bread
crumbs to get a brown top. Serve hot. If the meat mixture seems too dry,
add a little water while cooking it.
