Thanks to all that sent in recipes for chicken fingers. They are
a favorite meal of mine as my husband doesn't care for chicken but will
eat it this style. I also like the honey-mustard dipping sauce but prefer
a sweet - sour dipping sauce. I usually purchase the bottled kind but
would love an easy recipe to make at home. Hopefully it can also be used
for sweet and sour chicken or pork as that's a favorite of mine. Thanks in

I wanted to Respond to: help, I need to know how to get transmission
oil out of sweatshirts, I've tried spray and wash, oxyclean, and
liquid automatic dishwashing soap to no avail. They are still there.

get it on HSN, but I'm sure you can get it other places. I'm thinking I've
seen it at Bed, Bath and Beyond. When all else fails this one does it
every time. Even gets paint out of my husbands clothing. Best of all the

My hubby and I use a low-fat or fat-free mayonnaise for different food
items & recipes. However, all of the low-fat mayonnaises we have found are
really thin and watery. So, since there has been all the talk about
Miracle Whip, is there anything that we could do to make our mayonnaise
thicker and/or less watery?

within 10 days they are already sprouted!! Saved me going and trying to

I made some macaroni and cheese from the box, but changed the
directions a little and turned out not too bad. I sprayed a casserole
dish, then melted a couple of tablespoon margarine and mixed it with the
dry macaroni from the pkg. and then added the cheese pkg, and added 2 and
1 /2 cups milk and baked it at 350 for 1 hr and 15 min or till done. Much
better than the directions on the box and simple and quick.

Sittin Beer Can Chicken Steamer (with..
demonstration.. video)
For Dee who was needing suggestions about 50th anniversary. My
son and daughter-in-law did mine. They bought chicken wings (drummets),
served crackers with a cheese ball, a good punch, nuts, mints and
assortments of vegetables with a dip in center. We had it at our Church.
They took three tables, placed two at the top horizontal, and on table
coming down the middle of the two vertical covered in white table clothes
covered with gold lama. They put a beautiful tall bouquet of flowers on
the vertical table which centered the tables. It looked kinda like a cross
from the front. Their were several punch recipes in yesterday the 11th
newsletter, I think! Make it simple, but beautiful!
In the front of the hall, they displayed pictures of me and my husband and
it was also a place to receive presents.

For Dee in SIL who is planning a 50th wedding anniversary here are a
few ideas. I suppose you have already thought of getting help from family
members? How about children, they are always ready to help with
decorating, even teens, including drawing pictures and making banners. You
may already have things around your house that could be used for
decorations including candles and vases with home grown or homemade
flowers, maybe from a few blossoming shrubs in your area, or "force" a few
blooms from the shrubs ahead of time.
If you don't know how the library will have a book to tell you. I have
seen homemade flags and if you or another person can use a sewing machine
you could make a 50th anniversary flag and hang it out front or inside.
Don't buy fabric, recycle. You could ask your parent's friends for
pictures of your parents, or stories of their good old days together or
how they met, they could write it on a card and could tack them up on a
posterboard. When you call to ask for these things they may ask if there
is anything they can do.
Be prepared to say, would you like to bring ...... sandwiches, cookies or
whatever you are having. I find most people are more than happy to cook as
long as they don't have to do the whole party. If not, I'd make some small
sandwiches, egg salad is always popular and inexpensive, I just saw Paula
Deen making shredded cucumbers, onion and cream cheese sandwiches and that
would make lots of filling. Nuts are kind of expensive and I bet you could
get more bang for your buck with other things. A single bed sheet makes a
fine tablecloth and if you have an extra one, or buy a cheap new one, give
your guests a Sharpie, gold would be nice, and let them autograph it for
your parents. It beats an autograph book which will end up in the closet.

Dee in SIL a suggestion would be in the invitations to have everyone
bring a long stem flower of their choice and place in vases all around the
room. We attended a 80th birthday party for a friend and that is what her
children had everyone bring and then on Sunday, they used them on the
altar of their church.

Hi Nancy and Furbabies,
This is in response to Bunnie, CO. I called the Wal-mart customer
service number that was given to me by the lady in the fabric dept at
our Wal-mart.
After waiting thru several "push this, push that", I did get thru to a
human. She told me that no decision had been made yet to close ALL fabric
depts, but that most are being planned that way.
The lady in the local store told me that they plan to continue to sell
remnants but not cut to order fabrics.
I have a feeling that they are planning to cater to quilters more that
anything else. I told her exactly what I thought of that-too long to put
here-and she said that she would forward my thoughts to higher ups(for
what that is worth). I sew a lot for my 15-month old granddaughter and
don't think that remnants are what I am going to be looking for. I then
have to drive approx. 45 minutes to the nearest fabric shop.
Hope somebody can change their minds.

I have several punch recipes in the May 9 newsletter, which serve large
numbers.

To Dee who is planning a 50th wedding anniversary for her parents. This
is a delicious punch which is very inexpensive. I use it because it makes
a huge amount and is cheap, but it can be scaled down.
Punch
10 packages orange Kool-aid
sugar
water
2 large cans pineapple juice
3 2-liter bottles of Sprite or ginger ale (I buy what is on sale)
1 bucket orange-vanilla swirl ice cream
Make Kool-aid according to package directions, using appropriate amount of
sugar and water. Mix in pineapple juice. When ready to serve, put about
1/3 ice cream in punch bowl, add kool-aid pineapple juice. Pour over 1
bottle of Sprite.
Note: This makes approximately 8 gallons. Serves about 125=150 people. I
change the kool-aid to strawberry sometimes. Orange makes a gold punch.
To Dee in SIL. for your Mom and Dad's anniversary, why not have
a wedding picture of their enlarged. Put a mat around it, and place it on
a table where the people come in. Put a pen down for all to sign either a
small message or just their names. And then have it framed for them as
their gift afterwards. Many years from now, they will still be looking at
it, and sayin, hmmm I didn't see so and so, but I know that they were
their. I know that they would really like this. Hope you do too.
Louisiana Lady
For JMR (5/11):
Canadian Cheddar Soup
1/2 lb. bacon, cut into 1/2 in. pieces
1 med. red onion, cut into 1/4 in. pieces
3 celery ribs, cut into 1/4 in. pieces
4 T unsalted butter
1 c. all-purpose flour
2 c. chicken broth
4 c. milk
3/4 lb. white cheddar cheese, grated
1 T hot pepper sauce
1 T Worcestershire sauce
1/4 t. salt
1/8 t. pepper
1/2 c. warm beer
Chopped scallions or chives, for garnish
In large deep pot, cook bacon over med. heat for 5 min., stirring
until lightly browned. Add onion, celery & butter; sauté until onion
has softened about 5 min.
Add flour & cook, stirring constantly for about 4 min. over med heat.
Whisk in chicken broth & bring to boil 1 min. Reduce heat to
simmer, cook 15 min., stirring occasionally.
Add milk; continue to simmer 15 min. Do not bring to a boil.
Remove from heat, stir in cheese, hot pepper sauce, Worcestershire sauce,
salt & pepper until cheese is melted & soup is smooth. Stir in warm beer.
If soup is too thick, add some warm milk. Serve hot, garnished w/scallions
or chives.
445 cal.

Healthy Chicken Parmesan
5 oz. boneless skinless chicken breast (raw)
1/3 c. Fiber One cereal
1`/4 c. Egg Beaters, Original
3/4 t. reduced fat grated Parmesan cheese
1 oz. shredded fat-free mozzarella cheese
1/3 c. canned tomato sauce
Optional: garlic powder, basil, oregano, salt & pepper
Preheat to 375. Using blender, grind Fiber One to bread-crumb like
consistency. Add Parmesan to crumbs ( if desired, season w/ opetional
spices)
Place crumbs in small dish & Egg Beaters in another. Pound chicken flat.
Coat
chicken both sides w/Egg Beaters, than coat w/ crumb mixture. Place
chicken on pan sprayed with nonstick spray. Spray light mist of nonstick
spray on top of chicken (I use olive oil spray) & place in oven. Cook 10
min., then turn. Add another mist of spray & cook another 10-12 min until
fully cooked & crispy. If desired, mix tomato sauce w/seasonings of
choice. Remove chicken from oven, top w/ sauce & then cheese, return
chicken to oven until cheese is melted. Serves 1 295 cal. 3/5g sugars

Nancy the newsletter 5/11 had many chicken recipes that I copied and I
want to thank all the people that sent them in. We have to get back to
eating more chicken and fish so that we our weight goes down. Hopefully
all mother, aunts and grandmothers have a Happy Mothers Day.
To JMR in the 5/11 newsletter was looking for a Beer Cheese Soup and I
have a couple. The first soup recipe I have used when we are having
friends over and having just soup, crackers and assorted fruits. That way
everyone can serve themselves.
The Easiest Crock Pot Beer Cheese Soup
3 can cheddar cheese soup
2 can cream of celery soup
1 cup milk
7 oz. beer
Combine all ingredients. Cook in Crock Pot for 4 hours on low. Make sure
to stir at least once.
A friend gave me this recipe and it is good but cheesy.
Cheesiest Beer Cheese Soup
2 cans cheddar cheese soup
1 can nacho cheese soup
1, 1 lb., brick Velveeta cheese
2 medium potato, diced
1 medium onion, chopped
3/4 can flat beer
add water as needed
Boil potatoes and onion. Drain off most of water, leaving about 1/4 of
potatoes covered. Add cheese soups, chunks of Velveeta and beer. Mix
together until cheese has melted, add water as desired for thickness.
A friend was out West and got this recipe for
Beer Cheese Soup
2 can cream of celery soup
1 can beer
1 lb. grated Cheddar Cheese
1 teaspoon Worcestershire sauce
1/4 teaspoon paprika
croutons
Put all ingredients in crock pot except croutons. Cook on high 2 hours
stirring occasionally. Top with crouton before serving.
For variety add 1 cup steam fresh broccoli for a Broccoli Cheese Soup
I have made this Beer Cheese Soup because I like the flavor of the green
onions in this one.
Susie's Beer Cheese Soup
1/2 stick butter
1/4 cup chopped green onions, use green part also
3 to 4 tablespoon flour
1-3/4 cup chicken broth
1-2/3 cups undiluted evaporated milk
1, 12 oz., can beer
1, 8 oz., jar processed cheese spread or more cheese or 1 can cheddar
cheese soup or both
1-1/2 teaspoon Worcestershire
Melt the butter in a large pan. Add the chopped onions cooking until
onions just begin to wilt. Remove pan from heat and stir in the four.
Return to stove and cook the mixture about a minutes or 2 so the flour
taste is gone. Gradually stir in the chicken broth, 1 2/3 cups undiluted
evaporated milk, the beer, cheese spread, cheese soup and 1½ teaspoon
Worcestershire sauce. Cook over medium heat until mixture just comes to a
boil. Serve with popcorn sprinkle over top. I serve it with add green
onion and no popcorn.

Sicilian Skillet Chicken
4 boneless chicken breast, skinned
6 tbsp. grated Parmesan
3 tbsp. flour
2 tbsp. olive oil
1 c. sliced mushrooms
1/2 onion, finely chopped
1/2 tsp. rosemary, crushed
1 (14 1/2 oz.) can Italian style stewed tomatoes
Flatten chicken slightly. Coat with 4 teaspoons cheese and then in flour.
Salt and pepper to taste. In skillet cook chicken in oil over medium high
heat until done. Remove to serving dish; keep warm. In same skillet, cook
mushrooms, onions and rosemary until soft. Add tomatoes; cook uncovered
over medium high heat until thickened. Spoon over chicken; top with
remaining cheese. Serve over pasta.

Jerusalem Chicken
1 pkg. Hollandaise sauce (Knorrs)
3 tsp. tarragon leaves
Seasoning salt
Lemon pepper
1 lb. mushrooms, sliced
1 (14 oz.) jar artichoke hearts
4-6 chicken breasts, boned & skinned
Mix all ingredients together. Pour over chicken breasts. Cover with foil.
Bake at 350 degrees for 35 minutes. Remove foil and bake for 20 minutes
more.

The Foreman grill makes juicy delicious tenders and it only takes 5 or 6
minutes depending on the wattage of your grill.

I'm looking for a garlic butter sauce recipe that is on the tilapia fish I
have been purchasing at Sams. Unfortunately, I threw the box it came in
away because the individual packages take up less space than storing them
in the box in the freezer. I believe the sauce is a garlic butter base
with diced yellow and red peppers. I'm not sure what else it has in it. It
is not a thin sauce. My husband likes the fish a lot and I would like to
be able to duplicate it since it is a seasonal item at Sams.

Dale's Chicken Marinade
2/3 cup Country Time Lemonade Powder (I use the cheap stuff too)
8 oz. bottle Italian dressing
2 tsp. black pepper
Mix together and marinate chicken tenders in refrigerator all day. Cook on
grill and devour! I prefer to use chicken tenders as opposed to chicken
breast, because they seem to have a better flavor. Guess because they are
smaller and absorb more!
This recipe is from my friends husband who does a lot of cooking. I envy
woman who have husbands who can cook!

Snickerdoodles
1/2 cup butter, softened
1/2 cup shortening
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon
Preheat oven to 400 degrees F. Cream together butter, shortening, 1 1/2
cups sugar, the eggs and the vanilla. Blend in the flour, cream of tartar,
soda and salt. Shape dough by rounded spoonfuls into balls.
Mix the 2 tablespoons sugar and the cinnamon. Roll balls of dough in
mixture. Place 2 inches apart on ungreased baking sheets. Bake 8 to 10
minutes, or until set but not too hard. Remove immediately from baking
sheets.

Cajun Chicken and Veggies
Cooking spray
1 pound chicken breast tenders
2 cups frozen pepper stir-fry (such as Bird's Eye brand), thawed
1 cup frozen cut okra, thawed
3/4 cup thinly sliced celery
3/4 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon ground red pepper
1 (14.5-ounce) can diced tomatoes, undrained
1/4 cup chopped fresh parsley
1 tablespoon butter
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking
spray. Add chicken; cook 3 minutes on each side or until browned. (I cook
it for 18-20 total). Add pepper stir-fry and next 6 ingredients (through
red pepper), stirring to combine. Pour tomatoes over chicken mixture;
bring to a boil. Cover, reduce heat, and simmer 5 minutes. Uncover; cook 3
minutes. Add parsley and butter, stirring until butter melts. Yield: 4
servings

To Fran in Florida......I copied Tona's recipe a while ago, but here it
is if you want to try it. We thought it was very good. Jan in Texas
TAMALE PIE CASSEROLE
1-1/2 lb. hamburger
1 med. size onion
2 c. stewed tomatoes
1 sm. can tomato sauce
2 c. whole kernel corn
1 c. sliced ripe olives
1 tsp. salt
1/4 tsp. pepper
1 tbsp. chili powder
1 clove garlic, minced
1/4 c. green pepper, chopped
TOPPING:
1-1/2 c. milk
1/2 c. cornmeal
2 tbsp. butter
1 tsp. salt
2 eggs, lightly beaten
1 c. shredded cheese
Brown hamburger and onion. Add tomatoes, sauce, corn, olives, green pepper
and seasonings and cook for about 20 minutes. Pour into well greased 8 x
12 inch baking dish or large casserole.
For Topping: Mix the milk, cornmeal, butter and salt; cook until
thick. Add the eggs and cheese; mix well and pour over meat mixture. Bake
until top is browned at 350 degrees, about 45 minutes to 1 hour.

Hi Nancy & kitties: For Kim-5/9 request for chicken breast tenders
or boneless chicken:
Here is a quick and easy and very good recipe my daughter on Staten Island
gave me:
Boneless chicken cutlets, cut into pieces that can be fried within about 4
minutes on each side.
I would say about 4 to 5 " long and or wide and about 1 to 1-1/2 inches
thick. They are very easy
to cut into desired sizes.
I set up 3 small soup bowls on my counter.
# 1- flour
# 2- milk mixed with egg (don't worry to much about amount of milk)
# 3-pretty good amount of Italian Bread Crumbs
Cut & wet chicken cutlets with water.
Using a fork, dip each in the flour, milk/egg mixture and then the bread
crumbs in that order. Fry in Canola oil, warm enough to bubble when
chicken is placed in oil.
Brown about 4 minutes on each side, depending on size of cutlet. Do not
overcook. You can cut into the chicken to see if all the pink has gone. I
always check the thicker pieces in this manner. Remove to a plate with
paper towel on it, to drain off a little of the fat. Then you can transfer
to a nice serving plate.
I have also added at times, a little garlic or parmesan cheese to the
crumbs, just for a little variation. These are delicious, and very easy.
Usually not many left over, but they are good cold too.
Also would like to thank Bunnie and all the other folks who wrote in
regarding letting the cat out. I'm so glad that I mentioned it, as I was
about to let him loose . Just didn't want to cope with the spraying again.
But, have decided to stick with the leash, as he just will not settle down
to not being let out. He runs from door to door, and soon will start
spraying or just dropping a spot of urine at the door, if we don't come
when he beckons us!
I'm so sorry that many of you have learned the hard way. He has been a big
expense, as I have had to buy numerous cleaners, spray type odor removers,
and even had to hire a carpenter to replace two sections of our wood
floors. I did the latter when we thought he was all over the problem, but
now he is back at it again. I do think the Buspar is helping though and
plan to leave him on it only a few weeks. We also had to paint the walls,
doors , woodwork, etc. Do we love him? I guess we surely do! I thought I
had two females when I got them from a barn at about 6 weeks old in 2000.
He had so much long hair, that even the vet had a hard time finding out.
Anyway, I agree with the lady who says her next cat will be female. My
other female, Siamese (also from the barn) gives us no problem whatsoever,
about going out, peeing, etc. These two cats will no doubt, outlive my
husband and I, and we have to think about that. We need to plan for a good
home for the both of them, but I really don't know who would want a long
haired black and white male cat who sometimes sprays and pees but is so
darn lovable! It is going to be a problem,but we will care for them as
long as we can.
I was wondering about the baby powder keeping the fleas away that someone
suggested. Does it harm the cat in anyway, if he licks it off, which he
would
be apt to do.
I tried the Orange Soak Cake, and it was very good and very easy.
I'm going to try the Lemon Supreme Cake Mix, and use Lemon Juice in place
of the Orange juice for the glaze mixture. I think it will be great. Sorry
I have rambled on for so long, and thank you Nancy for letting us talk
about all our other big and little problems. Reponses from our large
family of recipe lovers, surely help us cope with so many things.

Jack, my wonderful husband, I am overwhelmed by the love and showing of
support. I knew how wonderful and caring all Nancy's group is but was not

I do have a great local net of support friends, and some special special

friend in NH.
I know it will take time and with Gods grace, will get through it. The
prayers of friends and family do help me and I can often feel that they
are being offered on my behalf so keep it up.
Yes, the puppy will be a great help as he keeps me busy but still to not
have anyone to talk with and a reason to cook a meal.
I do keep busy and volunteer with a group of special needs individuals .
We provide year round activities for these individuals and that does
occupy me when I am not at work to a point.
