Denise's Chocolate Peanut Butter Dream
1 chocolate cake mix or homemade equivalent
4 to 6 ounces cream cheese
3 to 5 tablespoons peanut butter
1/4 to 1/2 tsp cocoa powder
Sugar or Splenda to taste
Dash of vanilla or other flavoring
1/8 to 1/4 cup milk

Shaved chocolate, sprinkles, whipped cream, chocolate syrup or any other topping.

Mix cake according to package directions or mix up your own cake batter. Generously spray and flour your Cook's Choice Gourmet Bowl Maker and pour cake batter in each well to slightly under or right at the fill line. Bake at 350 for 12 to 15 minutes or until a toothpick inserted in the cake comes out clean.

While the cake bowls are baking, soften 4 ounces of cream cheese in the microwave. Starting with the smallest amounts, add the peanut butter, cocoa, splenda, vanilla or other flavoring and mix well. If this mixture isn't of an easily spoonable/spreadable texture, add small amounts of milk and mix well after each addition until the mixture is creamy. The consistencies of peanut butter and cream cheese vary so just add and mix until the filling is to your liking.

When the cake bowls are done, remove them from the oven. If they've risen above the pan, use a strand of dental floss or a sharp knife to gently slice the excess off each bowl until the cake is even with the pan. Turn the pan upside down over a clean surface, lightly tap it a few times with a knife, and gently shake until the cake bowls come out. Turn them right side up and fill each well with the cream cheese and peanut butter mixture. You can swirl it, mound it, play with it until you like how it looks. Top with shaved chocolate, sprinkles, whipped cream, chocolate syrup or any other topping you like.

Sandra in Oregon was wanting some rhubarb recipes. I have a TNT recipe that I have used for years that I love to take to church suppers and reunions. Everyone and I mean EVERYONE loves it. What is so laughable is to see their faces when they find out it is made from rhubarb!!

Rhubarb Surprise Dessert

CRUST:
1 cups oleo, softened
2/3 cups powdered sugar
2 cups flour

Mix as for pie crust, cutting oleo into dry ingredients and lightly press in bottom of 9 x 13-inch cake pan. Bake 10 to 15 minutes at 350 degrees.

FILLING:
5 cups diced rhubarb
1/4 cup water

Simmer till tender. Add 1 cup sugar and 1 (3-ounce) package red Jell-O (I use Strawberry). Stir till Jell-O is dissolved and set aside. Combine 1 regular package vanilla pudding (not instant), and 1 regular package tapioca pudding (not instant) and 3 cups milk. Cook till thickened and mix with the rhubarb mixture, add 1 teaspoon almond flavoring and pour over crust. Cool and refrigerate till serving time. Serve with whipped topping. (I just spread a container of whipped topping on the dessert.)

Hint - I mix the puddings in 1 cup of cold milk, while I am heating the other 2 cups of milk over low medium heat. Just as it is coming to a boil (tiny bubbles around the edge), I stir up the pudding mixture and add it to the hot milk stirring constantly and the process goes faster. Don't forget the almond flavoring!!!

Cajun Cafe's Bourbon Chicken Copycat/Clone
1/2 C. soy sauce
1/2 C. brown sugar
1/2 t. garlic powder
1 t. powdered ginger
2 T. dried minced onion
1/2 C. bourbon whiskey
1 lb. boneless chicken leg or thigh meat cut into bite size chunks
2 T. white wine
Cooked white rice, optional

In a large bowl, combine soy sauce, brown sugar, garlic powder, ginger, onion and bourbon; stir until sugar has dissolved. Add chicken and stir to coat. Cover and refrigerate for several hours or overnight.

Place chicken and the marinade in an 8 x 8 inch glass baking dish and bake in a preheated 350°F. oven for 45 minutes, basting every 10 minutes with pan juices. Remove chicken. Scrape pan juices with all the brown bits into a frying pan. Heat over medium heat and add white wine. Stir and add chicken. Serve immediately
with pan juices over cooked rice.
Serves 4.


Dear Nancy and Friends - All the talk about potato salad got me craving it so I had to make a batch, Yummmm it was good! Here's the recipe I use - you will be surprised at the taste of something so simple!

Ranch Potato Salad
5lbs potatoes - boiled and cubed (I use the red ones)
1/2 cup diced cucumber - peel, quarter lengthwise, and remove seeds, then dice
1/2 cup diced celery
1/4 cup diced onion
4 or 5 boiled eggs, diced
1 Tbl spicy mustard
2 packs of dry ranch dressing mix
2 tea. dill weed
1 tea. white pepper (careful, it's hotter then black)
1 cup sour cream
1 cup real mayo (I use Hellman's)
Paprika to dress

Mix dry ranch dressing mix with sour cream and mayo. Add to rest of ingredients and mix well. Chill overnight for the best taste. Add additional mayo if needed.

Hello I have been wondering about a recipe for a long time now. It was one I had in home economics in high school. Well actually I'm trying to find a recipe like it or find the recipe itself. Nancy, this is one of my favorite Greek desserts.

Karidopita (Nut Cake)
2 cups chopped almonds
1 cup chopped walnuts
12 eggs (separated)
4 teaspoons baking powder
1 cup flour

Grind almonds and walnuts (medium) Mix together. Beat egg whites until foamy. Beat yolks until yellow color. Fold egg yolks into the egg whites. Add the flour and baking powder. Then add the almond and walnut mixture. Mix all together and pour into greased and lightly floured 9X13 pan. Bake in a 350 degree oven
for 30 to 35 minutes. While cake is still hot poke holes with a fork and cover the surface with the syrup (recipe following).

Syrup:
2 cups sugar
2 cups water
1/4 cup fresh lemon juice plus 2 teaspoons grated lemon rind.

Mix above ingredients together and boil for 5-6 minutes. Cool and pour over cake. You may cut normal pieces or diamond shaped.
Yield - 40 pieces

Pizza Meat Loaf
1 can Campbell's tomato soup (save 1/4 cup to pour over loaf)
1/4 cup water
1/2 teaspoon oregano (crushed )
1 small clove garlic, minced
1 cup small bread cubes
1/4 cup finely chopped onion
2 tablespoons chopped parsley ( I use 1 tsp dried)
1 egg slightly beaten
1 teaspoon salt
1/8 teaspoon pepper
2 pounds ground chuck
2 slices Mozzarella cheese

In a bowl blend the first 4 ingredients, then add all the other ingredients except the ground chuck and the cheese. Mix thoroughly with the beef. Shape into a loaf, and place in a shallow baking pan. Bake at 350 degrees for 1 hour and 15 minutes. Pour remaining soup over the cooked meat loaf and top with the Mozzarella cheese and bake until cheese is melted.

For Linda on Saturday --- No Cook Raspberry Chipolte (Pepper) Jelly. It is fantastic!!! They made wonderful gifts for my library volunteers.

Raspberry Chipolte (Pepper) Jelly
1/2 g (Must be one 1.59 ounce pouch Ball Fruit Jell Freezer Jam)
1 1/2 cups sugar
2-3 chipotle chiles in adobo
4 cups crushed raspberries

Combine freezer jam pectin and sugar in a medium bowl, stirring to evenly blend. Set aside.

In food processor or blender, purée 2-3 chipotle peppers and 3 tablespoons adobo sauce; remove seeds from peppers if less heat is desired. Add chipotle pepper purée and crushed raspberries to pectin mixture. Stir for 3 minutes. Serve immediately, if desired.

For longer storage, ladle jam into clean freezer jars, leaving 1/2-inch headspace; apply lids. Let stand until thickened, about 30 minutes. Refrigerate up to 3 weeks or freeze up to 1 year.
Yield: about five 8-ounce jars.

To Boots in VA ....... My tater salad did the same thing. I put the celery in a strainer first thing then blot dry using a paper towel. Use dried chopped onions to reconstitute this seems to help take care of the watery problem.

Fran in Anderson, CA was looking for the silver balls for cookies in Sunday's newsletter. They are called silver dragees (dra-gays) and any shop with candy-making supplies should carry them. I have found them in craft stores around the Holidays in their candy-making section. Be very careful, though, as they are extremely hard and you could break a tooth. Also, I wouldn't give them to young children. The ones you could buy in the '60s were softer than the ones that are sold today.

To Fran from Anderson, CA. you can get the little silver balls from Wal-Mart. They have a Wilton Cake Decorating section, and I have gotten them from there. Use to see these on a lot of wedding cakes, but now, they use other things. Hope you find them.

Hi Nancy! This is for Fran In Anderson, CA. Hi Fran! The silver balls are called "dragees." You can find then at a Michael's Craft store in the cake decorating department. Some of the gourmet markets carry them, too. There are many cake decorating companies on the web. Sugarcraft.com has them. Even Amazon.com sells them. I found a large variety of sizes here at DRAGEES at www.thebakerskitchen.com. Good luck!

Fran from Anderson, Ca. inquired about the candy silver balls for decorations on cookies, etc. I have not purchased them lately, but in the past, I have found them at the supermarket close to the spice section or baking section. Got myself a little Education after I sent the original answer to the question about Dragees. According to www.recipezaar.com it's pronounced dra- ZHAY. Turns out a lawyer in CA filed a lawsuit or threatened to because people were eating the dragees that were covered in real silver. Like you're gonna eat that many.!! This goes back some years as far as I could read 1993 or so. Sur La Table stopped selling in them in 2003. Anyway, CA cannot sell them and Amazon can't ship them there. Go figure. So I don't know what to say. Sorry to be the bearer of bad news. Maybe someone could get them and send them to you as a private citizen?

To Gail in LA (5/5/07) regarding total calories in 11 oz. can of mandarin oranges, I have always thought it was including the liquid (unless it stated "drained"). Have you tried measuring the entire contents of the can to see if the oranges AND liquid measure one cup? (two 1/2 cup servings).

Hi to all! I am a fairly new diabetic and have been sticking to my diet pretty good. I've lost 24 pounds since I was diagnosed Feb. 22, 2007. Seem to be at a stand still on the wieght loss for now. I've mostly kept my BS in a good range. I have been buying homegrown strawberries since they came in and I discovered fat- free and sugar-free Cool Whip. Evil Cool Whip!!! How can anybody just eat 2 tablespoons? Twice, I have ended up eating the whole bowl almost in one setting! Not good. Well, it was, but you know what I mean. I am wondering if I thawed out a bowl and measured about 2 tablespoons of the Cool Whip and refreeze it and then just take out one serving at a time, if this would work. I know, I would still have to have the will power to just say no to more than i am supposed to have. What do you all think?

Hey, I'm walking a little over 2 miles nearly every day. For me, an overweight and confirmed couch potato, that's great. I just dread the really hot weather that's coming. It was 86° today.

I will keep watching for diabetic info on here. Yes, I know to talk to my doctor about things.

For Iris in VA wanting to use a convection oven. I haven't used the oven on my stove for many years. (I store my pots and pans in it.) I have a microwave/convection oven (I had one of the original ones and am on my third one now.) I cook/roast/bake everything in it. In my experience this is how I use it: I don't bother to preheat because it heats very quickly. I can use glass/metal/silicone pans. If the recipe calls for you to cook/bake something for 20-25 min I check it just before the 20 minutes are up. I haven't found anything I can't cook in my machine. I can also cook with the combination micro/convection. Cooks fast and still browns/crisps.

Just think of it as a small oven that will do anything your big one will only a little bit faster. Saves a lot of electricity.

Be sure to read your manual and read some of the recipes to get an idea of how to cook something in it. I think you'll find that you will use it a lot.

I love Carrabba's and found this recipe for Spicy Sausage lentil soup

Spicy Sausage Lentil Soup
1 tbl olive oil
1 onion, chopped
4 celery stalks, sliced
6 ounces Smoked sausage ( such as kielbasa) coarsely chopped
4 cups chicken or vegetable stock
4 cups water
2 cups green lentils
1 strip ( 3 inches long) orange rind
1 tsp crumbled dried marjoram
1 tsp crumble dried savory
3 carrots, peeled and sliced
2 potatoes, peel and diced
salt and pepper to taste

In large saucepan, heat oil over med. heat. add onion and cook for 5 min's. stirring occasionally. Add celery and sausage, cook for 5 min's. stirring occasionally, Add stock, water, lentils, orange rind, marjoram and savory, bring to a boil reduces heat, cover partially and simmer for 30 min's.
Add carrots, and potatoes, cover partially, and simmer, stirring occasionally for 35 min's. or until lentils are tender. Discard rind, season with salt and pepper to taste.

I made with hot sausage and used hot dry peppers in place of pepper

Glazed Lemon Cake
1 package (18-1/4 ounce) white cake mix
1 package (3.4 ounces) instant lemon pudding mix
3/4 cup vegetable oil
3 eggs
1 cup lemon-lime soda
1 cup confectioners' sugar
2 tablespoons lemon juice

In a mixing bowl, combine the cake mix, pudding mix, oil and eggs; beat on medium speed for one minute. Gradually beat in soda. Pour into a greased 9x13-inch baking pan. Bake at 350 degrees for 40 to 45 minutes or until cake springs back when lightly touched in the center. Combine confectioners sugar and lemon juice with wire whisk until smooth; carefully spread over warm cake. Let cool before serving.

I just recently added my name to my church's food ministry list. I will need to prepare a meal for families with new babies, family members that are in the hospital and people who have lost loved ones. I was wondering if anyone would have some ideas for me. Some of these meals can also be frozen ahead of time, which might work best for me since I work full-time and will also need to deliver these meals.

Any ideas would be greatly appreciated!

On the day before pay day, finding my cupboards bare, I came up with this quick skillet dinner.

Bare Cupboard Skillet Supper
4 pork chops
salt and pepper to taste
1 can (14-3/4 oz) beef broth
1 can (14 oz) Italian-style diced tomatoes, undrained
1 pkg. (7 oz) elbow macaroni, uncooked

Salt and pepper pork chops and brown on both sides (about 1 minute per side). Add beef broth and tomatoes to skillet. When liquid comes to a boil, add macaroni. When mixture returns to a boil, turn heat down to allow mixture to gently boil. Cover skillet and cook for 10 minutes. I stirred once during cooking.

My husband would eat it again. that's the real test at our house.

Here it is Sunday evening, and I'm anxiously awaiting to read your newsletter, but have not received one since May 2. So I have to resort to going back to one of the old newsletters to find the newsletter index. I then click on the ones I've missed to I can keep updated on them. Any idea why I don't always get them?

I got the recipe for the "Diet Pop Cake" from a friend whose child could not eat eggs. It sure works for me since I am ALWAYS on some dang diet and my husband is diabetic. We both get the benefit of the egg-less and oil-less cake; since we both are suckers for the sweeter things in life. Hope you give it a try and let me know how you like it.

Kentucky Derby Pie
1 cup sugar
1/2 cup flour
2 eggs, beaten
1 cup English walnuts, chopped (or pecans)
1 cup chocolate chip
2 teaspoons vanilla
1/2 cup butter, melted
2 tablespoons bourbon
1 each pie crust (9 inch)

Mix flour and sugar. Add eggs, then butter. Add nuts, chocolate chips and vanilla.
Add bourbon. Mix thoroughly . Pour into unbaked pie shell. Preheat oven to 350ºF and bake for 35-45 minutes.

Test with tooth pick. Pie should be chewy but not runny

I've enjoyed this recipe site for a long time - thanks to Nancy's untiring efforts for us subscribers- and want to suggest to Sally in Pa. about an easy way to get rid of ants as I've too had this problem. I keep a small spray bottle filled with vinegar and at the first site of ants I spray them with the vinegar and it seems to do the trick. It helps to get them at the site of entry.

I have wrestled with my conscience about keeping my cats indoors when I know they would love to be outside exploring this great big world of ours (and theirs). What made up my mind was the fact that I had this beautiful male cat named Patches whom I kept indoors but he wanted out soooo badly that one afternoon I decided to let him enjoy the outdoors. We lived at the back of a 40-acre orange grove so I thought he would be fairly safe. That very first time I let him out, he went down to the road and was killed by a car. He paid dearly for his few moments of freedom, and it broke my heart. It's a hard call to make -- do you keep them safe or give them their freedom and take your chances?? Would love to hear some other thoughts about this.
