Zucchini Cornbread Casserole

To Print out only the recipe highlight it with your mouse, right click on the highlighted recipe. Choose the option PRINT. Change the Print Range from ALL to SELECTION. Press the PRINT button on the screen.

In the past week, someone had asked for squash and zucchini recipes. Today I was going through my recipes-I have a mountain of them to deal with! I came across this recipe. Don't know where I got it-off internet I'm sure. I have not tried it, but it does sound good.

Zucchini Cornbread Casserole
4 c. shredded zucchini
1 onion, chopped
2 eggs, beaten
1 (8 1/2 ounce) package dry corn muffin mix
1/2 t. salt
1/4 t. ground black pepper
8 oz. cheddar cheese, shredded

Preheat oven to 350 degrees. Grease a 2 qt. casserole dish. In a large bowl mix together the zucchini, onion, eggs, muffin mix, salt and pepper. Stir in 4 oz. of the cheese. Spread this mixture into prepared casserole dish; top with remaining 4 oz. of cheese. Bake for 60 min.
