Nancy,
After asking about pie iron recipes, and receiving some yummy-sounding
ones from all of the great cooks here at the newsletter, I just realized
that I could search the Internet for some!! I am so used of getting "the
good stuff" right in my mailbox that I completely forgot to d a simple
Internet search. Here of some of the different recipes I found (source
rv.net -forums).

Pie Iron Brownies
Spray the pie iron on both sides with Pam. Fill almost halfway with the
batter. Lay gently on the embers as flat as possible (not where it is the
hottest). Pull it away from the fire after about 5 minutes, and see if it
is starting to set up. If so,
flip it to the other side and do the same with that side. If it starts to
steam too much, it is burning, so be careful. You can also add nuts,
chocolate chips, mint chips, m & m's, etc. It is hard to do this when it
is too dark because you can't tell if you are burning the brownies, so be
careful!
