After asking about pie iron recipes, and receiving some yummy-sounding ones from all of the great cooks here at the newsletter, I just realized that I could search the Internet for some!! I am so used of getting "the good stuff" right in my mailbox that I completely forgot to d a simple Internet search. Here of some of the different recipes I found (source rv.net -forums).

Pie Iron Brownies
Spray the pie iron on both sides with Pam. Fill almost halfway with the batter. Lay gently on the embers as flat as possible (not where it is the hottest). Pull it away from the fire after about 5 minutes, and see if it is starting to set up. If so,
flip it to the other side and do the same with that side. If it starts to steam too much, it is burning, so be careful. You can also add nuts, chocolate chips, mint chips, m & m's, etc. It is hard to do this when it is too dark because you can't tell if you are burning the brownies, so be careful!

Pie Iron Chicken Sandwich
Sliced Chicken Breast
Sliced Canadian Bacon
Shredded Monterey Jack Cheese
Your Favorite BBQ Sauce
Butter

Sliced Italian Bread, Butter 2 slices of bread, and place in iron. Then place the Chicken, BBQ Sauce, Canadian Bacon, and Shredded Cheese, on one side of the bread, and close the iron. Place iron on coals, turning every couple of minutes, check occasionally so you do not burn.

Bacon
Egg
Cheese
Bread
nonstick cooking spray

Spray your pie iron with nonstick sprat, then cut your bacon strips in half and lay them in the pie iron. Set 1 slice of bread on top of the bacon. Gently pat down the bread. Crack egg onto the bread. Lay cheese over top and cover with the other slice of bread. Close and cook slowly. When the bacon is cooked, the egg inside will be cooked.

Crescent Rolls
1 tube of crescent rolls
3 caramels per pie
chocolate chips
small marshmallows
Optional items, nuts, raisins

Spray iron with non stick spray. Lay crescent down top with 3 caramels, 8-10 chocolate chips and 4 small marshmallows. Top with another triangle of crescent roll. Cook over low coals until crescent is done.

Breakfast Hoagies
Take English muffins dip them in eggs, add cooked ground up sausage, sliced ham, shredded cheese (your choice of ingredients). Put your ingredients on the muffins close them up and cook in the pie makers to taste.

Chicken Quesadillas
Heat the irons, spray with nonstick cooking spray after heating, cut the tortilla's so that they are somewhat small enough to fold and fit into the pie iron place chicken, cheese, etc., in between the tortilla shell and cook until the tortilla is golden brown.

Pie Iron Sticky Buns
Use canned biscuits. Mash two together. Roll in mixture of brown sugar, nuts and cinnamon. Spray pie iron with butter flavored Pam. Cook 5-10 minute per side over hot coals.

I can't wait to try some of these recipes and have dropped some serious hints to my family about buying some different pie irons for my birthday!!
