To Gail in LA from June 30, 2005 newsletter,
I have started using Nellie and Joe's Famous Key Lime Juice. I shake the bottle before using, but I do strain it. I use the recipe that is given in the bottle...

Nellie and Joe's Key Lime Pie (TNT)
1 - 9" Graham Cracker pie shell
1 -14 oz can sweetened condensed milk
3 egg yolks (whites not used)
1/2 cup Nellie and Joe's key lime juice

Combine milk, egg yolks, and key lime juice. Blend until smooth. Pour into pie shell and bake @ 350 for 10 minutes. Allow to stand 10 minutes before refrigerating. Just before serving. top with whipped cream and garnish with lime slices.

Nellie Lo-Fat Key Lime Pie
(I have not tried this recipe, but sounds good.)
1 - 9" Graham Cracker pie shell
1- 14 oz can of Fat Free sweetened condensed milk
2/3 cup Nonfat Plain Yogurt
1/2 cup Nellie & Joe's Key Lime Juice
2 tsp. lime zest
1/4 cup water
2 - 1/4 oz packages of unflavored gelatin

Wisk together milk, yogurt, lime juice, and zest. Sprinkle gelatin over water and let soften for 2 minutes, then wisk into lime mixture. Refrigerate 15-20 minutes, stirring occasionally until mixture begins to set. Pour into pie shell and refrigerate (preferable overnight).
